  3. I was surprised to see this. Why do you say that Takala? It seems like many here regain their energy on the gluten-free diet. Is this generally the consensus?
  4. I had to withdraw from gluten too, like many others. I felt like a heroin addict. I had sweats so bad that my face was drenched, then chills that made me take to wrapping myself up in a mountain-weight sleeping bag and still feeling cold. I didn't go out of the house at all for a few days. It was awful. There is an end.

  6. Update: It happened again. I bloated suddenly again last night after eating dinner. Today I woke up with cramps and a sore throat. I'd speculate that the sore throat indicates not just difficulty with digestion but an actual immune reaction.   8. What a wonderful list, Skylark! I miss gooey, piping-hot bread straight from the oven! A rare event even before I went gluten-free, but one of the best. I did have gluten-free bread at a restaurant once (in Poughkeepsie, NY, the Artist's Palate) that was served warm and had a similar texture. This was a one time event though, but one I cherish. ; )

Tonight we had: -pureed carrot soup (shallots, carrots, veggie stock, buttermilk, nutmeg, chives as garnish) -kale (blanched first), corn kernel & cherry tomato salad with a dressing made of thyme, apple cider vinegar & olive oil -roasted potatoes with a vegan pesto (yes, it can be done! substitute Brewer's Yeast for the cheese) Good times...

  11. Ok, not quite a baking/cooking question, but I know that a lot of you use xanthan gum too. I spilled it everywhere - all over the counter, my Vitamix, my clothes. : ( If you use it, you know it's really gummy. It's gummed up now, and I can't seem to get it off of everything.   12. We eat Indian-spiced popcorn regularly. I sprinkle stovetop cooked popcorn with salt, cumin, coriander, and chili pepper (all to taste). My father-in-law (born in Mumbai!) loves it. Great thread. I'm going to try adding some wasabi powder and ginger powder to popcorn soon!
  13. No, I'm not. It could be so many things, seems like. But I'm cycling through the stages of being glutened: first, bloating & cramping, then chills, muscle aches, and now sore throat.
  14. Turns out that it could be a gluten reaction to the vinegar in the ricotta too. It's possible that the vinegar was 1) made from wheat and 2) not distilled (which would make it safe even if it had been made from wheat). So many possibilities. Eating is like a digestive minefield. Well, I am definitely suffering.

  23. Your story sounds like so many of the stories of people on this board. The medical profession - at least in the U.S. - is inept at dealing with celiac and gluten intolerance.   25. In retrospect, do you think these were all related to gluten? Even fibromyalgia? (I still have issues after 1 and 1/2 years gluten-free.)
