  4. This is my favorite, easy pot luck recipe. It can be made in advance, doesn't need to be warmed up, and it's healthy and substantial (you'll enjoy eating it too). I've thought people might be turned off by the quinoa, but the mango and cranberry cut any bitterness. The flavor is actually quite sweet. Rave reviews! The key is to find ripe mangos or buy them...
  5. I had prickypear1971's gluten-free, dairy-free, sugar-free hot chocolate! Not for everyday (too rich) but a great treat. I drank it with two slices of gluten-free toast with almond butter. I'll have fruit later in the morning.
  6. I had some this morning for breakfast - it was easy & soooooo good. I didn't miss the dairy or the sugar. Of course, I don't usually get to have hot chocolate for breakfast (yes, for health reasons), so I was pleased. It'd be nice to serve on Christmas morning, or on a cold, snowy morning (not that we've had one of those since October ....)
  7. A gluten-free "sweet" pizza might serve as a nice alternative to a desert crepe. I could imagine the same toppings being used. In that vein, then, how about nutella and ripe banana. Maybe with some ice-cream on a super fancy night.

  9. Black bean tortilla soup with avocado halves. And a big pile of wilted spinach. The soup was meat, egg and dairy free.
  10. I had a curried sweet potato soup for lunch, so I decided against that. But pumpkin soup is wonderful! mushroom - your recipe sounds easy and delicious! Next time, I have the ingredients around and need an entree ... What I really want to make now is ravioli with a pumpkin filling. I found out gluten-free ravioli are pretty easy. So, soon!
  11. After reading Simona's post, I want homemade gnocchi! But here's mine tonight: (vegetarian meal) -brussel sprouts & sliced apple with thyme -quinoa pilaf I also have some pumpkin, and am trying to decide what to do with it. I think I might just bake cubes of it.

  17. In addition to what has been said above (very good advice), I'd also add that I patronize indian restaurants and thai restaurants freely but with stipulations. It's very helpful that both thai and indian dishes are naturally almost always gluten-free, but you have to be careful with Americanized versions. I've researched which dishes I can have that are...
  18. Vegetarian: -pureed carrot soup, garnished with sesame/seaweed mix -wasabi & scallion mashed potatoes -braised collard greens with sweet & sour sauce (I suppose it's pan-Asian.)
  19. In addition to strictly gluten-free cookbooks, I'd also recommend looking into cookbooks that feature the cuisine of non-Western cultures. I'd especially recommend an Indian cookbook. Madhur Jaffrey's are great, especially the one that features meals in less than thirty minutes.
