  1. I had similar issues when I went gluten-free. It's worth noting that we are about the same age, so we can both assume that our poor guts sustained years of damage before we stopped asking them to deal with a substance that they basically find poisonous. By the time I discovered I was reacting to gluten, an endoscopy showed that my stomach was oozing blood...
  2. Judgmental is hard. Besides that, they sound strange. Regarding my reaction, I guess the grass is always greener.
  3. This is interesting, because I've needed treatment beyond a gluten-free diet too. It seems everyone doesn't. So what does that mean? My physical health suddenly collapsed at age 38. By the time, I stopped eating gluten, I had gastritis which meant my stomach was oozing blood, neuropathy so bad it was painful to walk, and periods with cramps that kept...
  4. One thought that came to mind reading your saga was: wow, that sucks! It really does. But at the same time, I'm jealous that you are associated with such a sprawling family that likes getting together so much. I don't have any family of my own and my husband's family never gets together like that, and it sounds rather wonderful. Just to spend a weekend...
  5. Ravenwoodglass, my heart broke a little when I read your first post (I hadn't seen it before). As hard as it was to read, I'm still glad you posted - for my own selfish reasons. We're usually so focused here on the future which is great since the optimism here is affirming and contagious. But, like you, sickness has taken a lot from me - fibromyalgia in my...
  6. I went to the Celiac Center which is supposed to be the best in the world with this, and my doctor couldn't help me with this. She gave me all kinds of tests to decipher what was going on with me after months off of gluten. She couldn't find any answers. As I said, I was having digestive cramps in reaction to *everything*, as well as seemingly-inexplicable...
  7. After going off of gluten, I felt immediate relief. However, then I began reacting to many foods including dairy, soy, corn, and then, it seemed everything. I would drink a glass of water and feel digestive cramps. I still don't understand what was going on, but my gut was a mess. I went on an SCD diet (look it up online, but no grains for 6 months) and...
  8. lovetotravel, I'm so sorry to hear you're in so much pain. I'll PM you since your question veers away from the topic. Anyone else should always feel free to PM me about this. I know how difficult fibro is.
  9. It's scary to me that your doctor is saying that. That's what I was told for years about my fibromyalgia. (It's "psychosomatic".) Then, one day I ran into a young intern who was actually up on the latest research. He told me that I had fibromyalgia and that it was a real condition. I researched what to do about it, and got better. Maybe you should see...
  10. Easy answer - yes! No question that you could have issues with gluten yet not be diagnosed with celiac. First, a diagnosis of celiac depends on an endoscopy of the small intestine while a patient is eating gluten that includes a biopsy of at least four areas. Note that blood work, which may be preliminary, is not conclusive. In an endoscopy - done by...
  11. It's not true for all sushi rice. Sometimes sushi rice is fine, and other times it's not. I unfortunately found out the hard way. My experience is that usually sushi is fine, but of course we can't rely on 'sometimes'. Besides that, you have to watch out for crab (the imitation meat includes gluten) and sauces.
  12. Kiwi strawberry spring rolls with a vanilla honey dipping sauce: Open Original Shared Link So easy & summery!
  13. Just a comment on the U.K.: I wouldn't compare my experience there with Italy. And, I was primarily in London where I suspect people would be most aware. All of the servers I encountered in Italy seemed aware of gluten and its implications for celiacs. That didn't mean all of the restaurants were able to accommodate me, but when they were not, they turned...
  14. Wow - thanks for all the ideas! I'm definitely going to try baking my spring rolls. I've been missing dumplings sooooo much, and this discovery is going to fill that void in my life. I experimented tonight with dessert: spring roll wrappers filled with ripe apricot & basil with lime juice, drizzled with agave syrup (honey is another option). It worked...
  15. I just discovered Vietnamese spring roll wrappers for sale at the Asian Market. What a nice addition to my cooking repertoire. They're gluten-free, made of just tapioca starch, rice flour, salt and water. And they are so easy to use - and satisfy my longings for dumplings! So far, I've filled them with peanut-butter marinated tofu, hijiki & grated carrot...
  16. I'd suggest acupuncture. You may have heard this from your fertility clinic too. Acupuncture has consistently been shown to increase women's chances of getting pregnant. It's not magic - but nothing is, unfortunately. : ( Besides that, people get pregnant after years of undiagnosed fertility issues following going gluten-free. It just takes time. A...

    ARCHIVED Doctor Experiences In Nyc?

You're in luck with the doctor who diagnosed you. By "new doctor," do you mean that s/he is young? Maybe that is best, since s/he will be up-to-date with all of the newest research. The medical community has made great strides in understanding celiac/gluten intolerance in just the past few years, never mind the last decade. I live in NYC too. I ended...
  18. I've been to a number of catered events since going gluten-free, and my impression is that catering staffs are far more knowledgeable about gluten than most restaurant servers. It's really easy for the chef to put together a gluten-free meal - just leaving off a sauce or grilling something instead of baking it - as long as s/he has advance warning. I have...
  19. I wouldn't cross Brazil off your list just yet! I don't know where you're planning to travel in Brazil, but I spent some time in the South a few years ago (before I was gluten-free, unfortunately for this conversation) and think there would be many options there. Most of my time was spent in Sao Paulo, and the city is very cosmopolitan with many ethnic cuisines...
  20. I had the same experience after going gluten-free. It was excruciating. I found relief through the Specific Carbohydrate diet (info available at: Open Original Shared Link). I diligently went through the staged process associated with the SCD, and began recovery. (For many months, I ate only fruits, vegetables, and meats; no grains, and even a small bit of...
  21. Hi everyone, I'm in the advanced stages of my recovery from gluten intolerance/celiac, thanks to a combination of strict dietary regulation (including the Specific Carbohydrate diet) and Traditional Chinese Medicine (both acupuncture and herbs). I'm so grateful for my recovery. I was able to take a vacation last week to Rome and Florence to see the sights...
  22. Positive profile of the blogger by that name who writes up delicious, gluten-free recipes. Inspiring ... "When people hear 'gluten-free,' the reaction can be 'poor thing,' and I just want to say, 'Look at what's on my plate — does this look like deprivation to you?'" Open Original Shared Link
  23. I received a Vitamix as a - very generous - gift a couple of months ago. I had no idea what they did, but someone special thought that it would help me manage my restricted diet. I'm currently sticking to a Specific Carbohydrate Diet, so no sugars and no grains - except that lately I started eating rice again. It takes a lot of work in the kitchen to feed...
  24. Good question. I've been on the SCD now for 2 and 1/2 months. When I first started, I was cautious with spices but I used olive oil and freshly ground salt and freshly ground pepper on everything. I emphasize freshly ground because that made a big difference in the flavor. I didn't always use freshly ground salt and pepper before, so I went out and bought...
  25. That's really rough, I'm sorry. You said that you've already been sick for a week. Do you know from past glutenings how long your reactions last? Mine are 5 days, on the dot, so I can count on feeling better after the 4th day. It helps. I get horrible reactions to gluten too, so I know how hard it is. I feel like I'm in a deep, dark hole when it happens...
