  1. I also felt like a heroin addict during withdrawal from gluten - it was INTENSE. Btw ... I've noticed that my tongue turns black a few days after I accidentally ingest gluten. It seems to indicate that the toxins are passing out of my body. Perhaps you'll notice that as well.
  2. Oh to be such a good cook that this is a simple dinner! (I even had to look up "pepitas".)
  3. Yes. Absolutely. I could eat at potlucks again!?! Wonderful. But, as "Looking for Answers" suggests, I find it highly unlikely that the drug wouldn't potentially have weird and unsavory side effects. So I'd rather see the U.S. government pass a law requiring labeling of foods with allergy-producing ingredients, than see pharma develop a drug so I can...
  4. My husband's away on a business trip, so I get to post to this thread tonight! Makes his absence easier to bear that I can eat meat while he's away. ; ) -braised chicken with leeks -roasted white potatoes with rosemary -a mesclun & radish side salad Yum!
  5. Macaroons! They're just egg white and sugar and nuts or coconut. Best part - you can easily buy them pre-made.
  6. organicmama, I'm curious - did you enjoy it more after rinsing it thoroughly?
  7. Went apple-picking this weekend, hence: -sauteed apples with brussel sprouts and sage topped by grated parmesan -roasted carrots with pine nuts -quinoa (Also, thought I'd revive this thread : )
  8. I get black rice in Chinatown. I think it's Thai. I've seen it at Trader Joe's too. It's very hearty, almost nutty. I was inspired to include it in the meal after seeing Skylark's tribute to all the different kinds of rice available to us.
  9. Hi Alex, I came across the Tinkyada brown rice lasagna noodles last week and made a vegetable lasagna with them last night. It was delicious! I didn't follow your advice to use the noodles without cooking ahead of time, although I didn't boil them as much as the box called for. It was still really good, but the noodles were a bit soft. Next time I...
  10. GlutenFreeManna, I have a recipe for kimchi, but it includes fish sauce. I've read that you can just leave the fish sauce out. I've had prepackaged kimchi that excludes the fish sauce (probably for vegetarians). I guess people may prefer the flavor with fish sauce, but I liked the veg version just fine (and my husband could eat it too). I haven't made...
  11. Well, yes, it was the wine, but because it was alcoholic. I had some cider last night (again - Saturday night), and woke up with bloating and stomach cramps. I feel kind of stupid, like why did I test it? But at the same time, I was bound to try a cider or a gluten-free beer sometime. I found it really hard to be in a bar with everyone else having a drink...
  12. -dhal -sweet & spicy roasted kabocha squash -wok-fried choy tips with lots of ginger and garlic -black rice My father-in-law is coming over for dinner, so I'm making something for Indian tastes. Oh, and -baked apples & pears with a citrus glaze - desert is always an afterthought for me, maybe I should work on that ; )
  13. This thread really makes me feel like a NYCer. A pantry! - what a luxury! And all these lovely gardens! I'm really impressed with y'all. I think I'm (at least) going to make a batch of kimchi. I've been trying to eat it more since anything fermented is good for our tummies. But it's hard to find kimchi without anchovies, and we're mostly vegetarian in...
  14. After I went gluten-free, I experienced insomnia similar to what you describe. It went on for months. It was bizarre, and frankly it was hell. (I'm so sorry for you.) I'd never experienced insomnia like it before. It was clearly related to stopping gluten. This is going to sound very wacky, but it worked for me. My acupuncturist gave me an herbal formula...
  15. I'm the same as you. I've never been medically diagnosed with a gluten issue, but I respond to a gluten-free diet. (And I get really, really sick if I eat even a small amount of gluten.) As you describe, if I wanted to be tested I would have to eat gluten, and I have balked at that. Luckily, my primary doctor accepts my own word that I respond to the gluten...
  16. Thanks for typing all this out. I am definitely going to look out for this brand of noodles. And if I don't see them, I'll search them out come the cold weather. I can definitely see myself enjoying a spinach lasagna once it gets cold. The recipe I posted is really great! It's lighter and less labor intensive than a standard lasagna. I've heard you can...
  17. Turns out it was wine. On Saturday night, I went out to dinner and had a slice of manchego cheese for a starter but passed on the Pinot Noir. I realized I'd much rather be forced to give up wine than dairy!
  18. Gluten-free lasagna? Did you use gluten-free noodles? If so, what brand do you like? Seems like the gluten-free pasta gets so gummy, it'd be hard to make a decent lasagna. But I'd love to! This is a delicious gluten-free, veg lasagna that I've enjoyed: Open Original Shared Link
  19. I don't know if the original poster is still around, but this is interesting because I got really sick with what turned out to be gluten intolerance/celiac? after a trip to India. I came down suddenly with stomach cramps and nausea, painful neuropathy and excruciating PMS. Interestingly, I had likewise come down with stomach cramps after a trip to India...
  20. Does low blood pressure impact this too?
  21. Soft polenta with summer corn, basil and asiago cheese topped by sauteed garlic beet greens. Went to the farmers' market today and came back with an armful of beets & their greens - yum!
  22. Tonight will be: -butternut squash soup -roasted red potatoes -zucchini tomato frittata with rosemary You can tell the temperature just dropped 10 degrees! And squash (happily, just in time) appears to have come into season.
  23. love2travel, You are amazing with all of your ideas! But what do I put the stuff I make into? I thought I needed special containers (like Mason jars?), so that my product will keep?
  24. I had this issue. And, like someone said above, my periods got worse as my symptoms from gluten-intolerance worsened. For me, along with heavy periods, went distressingly painful cramps. Scary. Acupuncture changed this. Yes, I've been gluten-free for awhile, but I still think it was acupuncture that helped. My periods were back to normal until recently...
  25. Open Original Shared Link Includes two paragraphs devoted to contrasting what it's like to eat gluten-free in Italy compared to in the U.S. Mentions applicable laws in the U.S. around gluten and also the pending labeling law to be passed next year.
