  1. I was going to suggest the same thing as freeatlast. Here's a really simple vinegar based recipe: Open Original Shared Link
  2. Unfortunately, if she refuses there's not much you can do. Maybe if she is really sick and going to the dr a lot you could offer to take her to be a support? Then when in the examine room with her and the dr you can causually bring up that you have celiac and sort of "wonder out loud" if she should be tested for that too. You may get lucky and the dr will...
  3. BTW, for non-candy ideas for the future look up the website for a company call the Oriental Trading Company. They make all kinds of trinkets, toys, craft supplies and party favors cheap. Any theme party you want to have you can find items for on that site.
  4. Mike and Ike Hot Tamales Swedish Fish Jelly beans Peeps
  5. Others have already said it but I think it bears repeating: flour will stay in the air and contaminate everything in your kitchen. Even people on this board that live in mixed households and are not super sensitive typically have a "no-flour" rule for their kitchens. Absolutely, 100% certain your new roommate is poisioning you by baking in your kitchen...
  6. Tinkyada works well but don't precook it. Put it in a colander and just rinse it with water. As long as the sauce covers the noodles they will cook as it bakes. Don't over bake and don't add too much liquid or it will be mushy. Tinkyada is the best I have found for standing up to the mush factor and also tastes good the next day reheated--unlike corn...
  7. I use Spectrum brand: Open Original Shared Link I use it for greasing pans mostly but it also works well for making frosting or in baked goods.
  8. There is also hemp milk. I use unsweetened coconut milk (drink not canned) for my mashed potatoes and for baking, however before I discovered coocnut milk I would just substitute chicken broth for the milk in mashed potatoes and water worked fine for most pancake recipes. For butter I use light olive oil, palm shortening or Earth Balance (I just recently...
  9. That's quite a complicated process! I really feel for you for all the work you've had to do. I was wondering if the diasability offices could give you better information. I used to work for a big public university and they don't really cover much on how disabilities are handled so it doesn't surprise me at all that some people are clueless. Most admissions...
  10. Way to go on the weight loss! It's understandable that you would want to make all those favorites, of course. gluten-free bread is higher in carbs and sugar usually and not very high on fiber. So for someone who is used to eating wheat products and may not need the gluten-free diet (like your wife) all that sugar and very little fiber can cause constipation...
  11. Who do you talk to when you you ask about food arrangements at each college?
  12. In the US most distilled vinegars are made from corn so it's not problem unless you also happen to be corn sensitive. The one you need to stay away from is Malt vinegar (from Barley).
  13. I would start a fast food chain that is 100% gluten-free. As much as I would also love having a bakery or an upscale restaurant or a specialty store I think that a 100% gluten-free fast food chain is lacking (at least I've never seen one) and would fill a need (convienent and safe gluten-free food fast) as well as potentially cater to the tastes of non-gluten...
  14. Hypothetical question: If you had gobs of money or investors to start a new business that caters to the gluten free community what type of business would you start?
  15. Interesting to know! So perhaps my sensitive system did detect the gluten and throwing up prevented me from getting the rest of my symptoms. I have reacted by throwing up one other time--when I was a given regualar pasta at Olive Garden and told it was gluten-free. Throwing up that time did not prevent me from getting gluten symptoms however--probably...
  16. Oh I am going to have to look for those! I thought of more ideas: Rice cakes with nut butter Rice chips (some people have trouble with Rice Works some people don't) Rice crackers (check the Asian section or your local Asian grocery store) "Food Should Taste Good" makes some yummy sweet potato chips (**I don't know if they have other grains...
  17. Well hopefully, unlike my inlaws you are actually bringing him stuff he needs/wants/will use! I'm sure he will find places for everything and if not, well that's normal dorm life! Are you taking him any peanut butter cookies so he can show the girls what they are supposed to taste like?
  18. I always have baby carrots and other cut raw veggies in my fridge like cucumbers, bell peppers, celery sticks, etc. I buy or make hummus pretty often and for a snack I will dip the raw veggies in hummus. I also keep in my pantry a variety of dried fruits (craisins, rasins, banana chips, plantain chips, dried apicot, etc) seeds (sunflower seeds, pumpkin...
  19. Curious, why do you want to know? We are not on "low gluten" diets...
  20. Cream of wheat or whole wheat unsalted crackers would be better tests if you want to challenge. Or buy a small bag of whole wheat flour and make some crackers or pasta with just flour and water. With bread you won't know for sure if it's the wheat or the yeast or the sugar (or all three).
  21. That sounds yummy! I can't wait until we have more cool days here so I can make more soups. I still make soups and stews in the summer because I love them but if I do too many my husband gets upset. He'll say to me "It's 105 degrees outside and you made soup?!? what are you thinking?" I'll reply "I was in AC all day and I love soup!" LOL! We have...
  22. For potato chips I can only eat plain Wavy Lays or Kettle chips. I can't eat the Stax because they have soy. For corn chips I make my own most of the time using Mission Corn tortillas. I spray with olive oil, cut with a pizza cutter and bake them on a baking sheet with holes in it at 325 for 12-15 minutes or until crispy. I don't buy the bagged ones very...
  23. There are no studies done to answer this question and therefore no guidelines. That is why your drs are telling you it doesn't matter. They have no information telling them that it does. Everyone is different also in how long they have been sick prior to being diagnosed. I personally decided to wait until at least a year gluten-free so that I was healthy...
  24. It's nobody's business whether you tested negative or not. If eating gluten-free makes you feel better just tell people your dr prescribed a strict gluten-free diet and leave it at that. I am diagnosed via elimination diet only because I cut it out of my diet before I knew that the tests would be inaccurate unless I ate gluten for 3 months before testing...
  25. Here's a list of over 300 associated symptoms: Open Original Shared Link Vaginitis is listed under the female reproductive system symptoms. Unless you are also low carb when on a gluten free diet, candida would be fed by other food you eat with carbs and sugar. Candida is also not just yeast infection of your privates it is systemic can affect your whole...
