Simona, I intended to make it yesterday but I had a lot of pain (chronic back pain). However, I see my chiropractor and have a nice long massage scheduled for this afternoon. So, I am definitely going to make it tomorrow. I also plan to do a lot of canning and making jams, etc. because we had to pick all our veg and herbs because of frost. Can't wait...

I feel your pain. My costochondritis was caused by severe bronchitis that turned into pneumonia and actually pulled muscles from my rib cage. Have had horrific daily pain ever since as a result. This happened to me; my chiropractor told me to eliminate anything containing aspartame (mostly for my chronic back pain). Perhaps aspartame bugs you? Don't forget that the longer we are gluten free the more sensitive our guts can become to other things. -

You will find that a stand mixer makes ALL the difference in gluten-free bread making. If you like making pasta I highly recommend the pasta attachment (if the mixer is a KitchenAid).

We have nothing even remotely similar where I live. I have never seen a dedicated gluten-free restaurant outside of Europe although I know of them as I have read about them (would have to travel hundreds of miles). I'm sort of jealous of those who have access to bakeries especially! -
