ARCHIVED Any Celiac(s) From Canada
love2travel replied to Gerri's topic in Introduce Yourself / Share Stuff
I live in Alberta, three hours from the nearest safe restaurant and absolutely no gluten-free bakeries to my knowledge (except perhaps Calgary which is about 6-7 hours away). However, I scratch cook and bake anyway so rarely want/need that other stuff. I was diagnosed with celiac in February and have been strictly gluten-free ever since. Not feeling any... -
ARCHIVED Mozzarella Sticks
love2travel replied to Juliebove's topic in Gluten-Free Recipes & Cooking Tips
Just a tip - it is far easier to bake mozzarella sticks if they are very cold/almost frozen first to decrease the chances of melting into a big mess. I've made fab mozzarella sticks using just buttermilk rather than egg. You can then use all sorts of crumb mixtures. -
Welcome here! My husband and I have a house in Croatia we will be moving to but are currently living in Canada. But we LOVE to travel all over Europe. Italy is known to be one of the easiest places to live gluten free but my understanding that England is knowledgable as well. It was such a treat to be in Italy in May without any issues or concerns at...

ARCHIVED Boston Pizza Is Now gluten-free!
love2travel replied to Yup's topic in Introduce Yourself / Share Stuff
You are NOT alone in thinking this. When I was first diagnosed with celiac disease I went to BP and thought the pizza was ok but definitely not good (I was feeling pretty desperate at the time of diagnosis). The toppings were fine but the crust? Ick. I generally do not eat out anyway unless it is a high end restaurant where there are no deep fryers, etc... -

One of my favourites is browned butter vanilla bean ice cream with pralines. Gorgeous! And another is strawberry balsamic. -
ARCHIVED Pork Chops For Dinner Tonight.
love2travel replied to erin24's topic in Gluten-Free Recipes & Cooking Tips
I love to brine chops first - it makes them extremely succulent. My favourite brine includes vanilla beans and juniper berries. Then I like to sear and finish off in the oven and make a pan sauce or mushroom duxelles or finish with a pomegranate, blueberry, red currant or fig glaze. I also make about 30 kinds of rubs (wet and dry). Stuffing double chops... -

The What's For Dinner Tonight Chat

Plain boiled white rice for me, some lovely homemade vichyssoise soup I made the other day for my husband. I have been quite ill lately so am keeping it bland and simple until whatever this is passes. -
I am very glad you posted this. It is very interesting but I am sorry you had to find it out the hard way.

ARCHIVED Heat Wave Is Wearing Me Out
love2travel replied to Coolclimates's topic in Related Issues & Disorders
We have been SO lucky here this year! My ideal temperature is about 60F and lots of rain. We have had some days in the 80s but basically it has been mainly in the 70s. Absolutely lovely and green. So sorry to hear of the atrocious heatwaves! That would do me in. I have never liked heat and am more intolerant with fibromyalgia. I have had heat exhaustion... -
My apologies. I thought you were talking the original Diet Pepsi! How weird. I have never heard of gluten in pop aside from a root beer flavour (do not recall the brand). I am thoroughly disgusted and feel for you.

Me, neither. In fact, it is certified gluten free (scroll down to the ingredients). Open Original Shared Link Aspartame bothers me so I do not consume it any longer. Perhaps that could be an issue?

love2travel replied to cyberprof's topic in Gluten-Free Recipes & Cooking Tips

ARCHIVED Help With A Gluten Challenge
love2travel replied to suziq0805's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
About seven weeks ago I attended a major lecture by one of Canada's leading celiac specialists who said you MUST go on gluten for at least three months, eating the equivalent of four pieces of bread a day. That is what my surgeon and dietitian told me as well. Sorry that I do not have any sources for you to read, though. I have handouts from the lecture... -

love2travel replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
Welcome here! I'm so glad you took advantage of tweaking this recipe to your needs. That shows you are a creative baker - awesome. It is indeed a very simple recipe to make substitutions. I'll have to try it with psyllium instead as well to compare. I miss chewiness! -
ARCHIVED Old Bay Seasoning?
love2travel replied to smmeri99's topic in Gluten-Free Foods, Products, Shopping & Medications
I contacted them prior to using it and was told it is gluten-free. McCormick clearly states any gluten on labels. However, this is proof... Open Original Shared Link -
I associate Starbucks with coffee. As I loathe coffee I have just never gone! I am also not a fan of fast food chains, either, for many reasons. This is not just a celiac issue with me. The town where we live literally has nowhere safe for me to eat at. One "restaurant" owner is known to ask those with celiac, "Are you a little celiac or a lot?" However...

ARCHIVED I Hate When We Have To Make Decisions Because Of Our Disease
love2travel replied to T.H.'s topic in Super Sensitive People
As you say, there are are allowances on flights for medically necessary things. As I have chronic back pain I must take gel packs, lumbar support, etc. I always take a doctor's note but so far have not even had to use it. Sometimes I wonder why I put myself through the physical torture of flying (I cry with pain each time) but I must not stop living! ... -
ARCHIVED Hello From Alberta!
love2travel replied to Sunny101's topic in Introduce Yourself / Share Stuff
Greetings from a fellow Albertan! I have celiac disease and as a MAJOR foodie sometimes find it tough but it can be done. If you want more ideas PM me - my culinary library is massive and I do tons of scratch cooking and baking. -
ARCHIVED How Do You Deal With Stress?
love2travel replied to WinterSong's topic in Coping with Celiac Disease
I immerse myself in doing what I love and surround myself with those who love me and "get" it. I lie down on my lounger under a shade tree in the back yard with a good food encyclopedia! Then I putter around with my vegetables in my raised beds. Then if I am able cook, cook, cook and cook some more. The power of distractions is phenomenal. -
ARCHIVED How Do I Stop Being So Generous?

Sylvia is SO RIGHT! There are thousands of great gluten-free cookie/other baking recipe options out there. No restrictions to just a few kinds of purchased ones! Homemade is always better than processed. Good luck!
