love2travel replied to celiacchef's topic in Gluten-Free Foods, Products, Shopping & Medications

Happily you CAN have great gluten free red velvet cake as cakes are amongst the simplest things to make gluten free. Anyway, here is a good red velvet cake recipe: ://www.glutenfreecookingschool.com/archives/gluten-free-red-velvet-cake/. I have another in one of my books. I believe someone posted a recipe for Pop Tarts on here not long ago. -

ARCHIVED Misery Loves Company
love2travel replied to Avalon451's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
A big resounding YES. I went through every single stage you mention and thankfully am at acceptance. However, I still diagnose everyone around me! That may never go away. My Mom clearly has celiac (seriously - she has about 10,000 symptoms) but she will not get tested beyond her negative bloodwork. However, she would not be one of the rigid careful celiacs... -
ARCHIVED Heavy Duty Standing Mixer

That is awesome about your husband's bread-making skills and conversion! So far I have used my KA every single day this week, sometimes a few times a day. I made another batch of baguettes to take with me as I leave Sunday for two weeks to visit my family. It is necessary to have something that resembles bread!! Back to the KA - it has been... -

That's great! Pulled pork is always better the subsequent days. I just love making it. And lobster - yum! I am still a bit squeamish about killing a live lobster...but do it anyway. Sounds as though you are great at re-purposing! -
I WILL think of you now whenever we go to the IC. We are going in March and are staying at the Union Bank Inn. Do you know it? It is gorgeous - we are using a groupon for it as there is no way I would pay $300 for a hotel room just for one night. I will be inhaling so hard that you will probably feel the breezes in Winnipeg! Yes, the Red Ox Inn is...

ARCHIVED How Long Till You Can Truly Cope With Celiac?..
love2travel replied to tigerlily83's topic in Coping with Celiac Disease
My diagnosis was a bit different than many because I did not have outward symptoms when I was diagnosed so I do not feel better physically, ten months later. It did take a few months for it to sink in because I wanted the gluten lifestyle so badly! I wondered how I could possibly have it if I could eat so much of it and not feel sick. Fast forward... -
ARCHIVED A Farewell... Beating My Symptoms
love2travel replied to josh052980's topic in Coping with Celiac Disease
How awesome, Josh, that you are staying but that your attitude towards celiac has changed. You should be highly commended for overcoming fears. It is such a difficult thing but I am happy that you have come to that place. Your posts are thought-provoking and it is great that you chose to continue to post here. I completely understand what you mean... -

ARCHIVED Is Toasting Bread Time Consuming?
love2travel replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
It IS dense and pretty good. I have had better. Hmmmm...maybe I'd better put it into the toaster oven now in time for lunch in an hour and a half. It's hilarious having to plan when to put bread in the toaster oven so you have it finished on time. I have a feeling that gluten eaters may not have quite this in-depth discussion about toasters and bread... -

ARCHIVED Your Cooking Method For gluten-free Pasta
love2travel replied to researchmomma's topic in Gluten-Free Recipes & Cooking Tips
You know what? The second time you make pasta it literally takes 30 minutes, start to finish. Honest. I make it once a week as it is so quick and delicious. What kind of stand mixer do you have? Mine is a KitchenAid and I do have the pasta attachments. They really do help. It can be done by hand if you roll the dough thinly. This is what I do for... -
ARCHIVED Any Bean Info That You Can Give Me!
love2travel replied to shayre's topic in Super Sensitive People
As I mentioned above, I am not a super sensitive celiac. However, I do purchase dried beans, lentils and so on and my favourite brand is Clic. Has anyone had any luck with that brand? The other I buy is my store brand. -
Man, I love that place! I could almost live in the store except the wonderful smells of all that great bread would drive me crazy. Every single time my husband and I go (several times a year) we are like children because we are that delighted and excited. Each time there is something new to see. I think we literally look at each item practically. My...

ARCHIVED Your Cooking Method For gluten-free Pasta
love2travel replied to researchmomma's topic in Gluten-Free Recipes & Cooking Tips
My pasta is always homemade now, too, as I found a delectable recipe that truly tastes like gluten pasta. Anyway, it does not stick, nor does it clump at all, even when re-heating. I can add herbs, spinach, butternut squash, etc. to it. If anyone is interested in the recipe just let me know and I will type it up. Perfectly cooked in 3 minutes but if you... -

Although it is Robbie Burns Day today I kind of wasn't thinking about that when planning tonight's menu. Robbie Burns wasn't Asian! I made a delicious teriyaki sauce so we are having Beef Teriyaki with Broccoli and Carrots and white rice vermicelli. Not sure of what else at this point as I want to make a side, too. -
ARCHIVED Is Toasting Bread Time Consuming?
love2travel replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
Oh, that sounds delicious! And perhaps therein lies the answer. My breads seem to toast far better but they are lighter and made with darker flours such as amaranth, sorghum, etc. Happy Robbie Burns Day to you! -

ARCHIVED Is Toasting Bread Time Consuming?
love2travel replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
This one was white rice and millet. To be honest I do not even know why I bought it as my preference is not for white rice products when I can help it. It does taste good and it looks good but I can make better. Most of us could! Anyway, the dumb toast just wouldn't do anything! Stubborn stuff. -
Dr. Connie Switzer is a leading specialist in Canada and she practices in Edmonton. However, she is not a GP but a gatsro specialist so it may take months to get in to see her. I attended a lecture she gave last year and she was amazingly knowledgable. She specializes in celiac. We live a few hours from Edmonton but love the city. We go there regularly...

I know! Isn't it strange? How much moisture can one stuff into one loaf of bread, anyway?
