  1. We travel to Europe regularly and from experience in France, I reiterate what others have said. Their unprocessed foods and fresh markets are like a celiac paradise! We are moving to Croatia and can hardly wait. Their grilled fish and seafood are sublime! Check pharmacies for gluten-free goods. I am unsure what flours are available in France so if...
  2. Anger is natural. I was absolutely stunned and floored with my diagnosis from screening bloodwork. I even told my doctor there must be a mistake. In fact, that night I made a list of 70+ things to have one last time and went on a gluten bingd for two months, until every last thing was crossed off. I did not get sick at all so I went into denial. My doctor...
  3. When I go out to eat (almost never as the nearest safe place to eat is three hours away), I call ahead to speak with the chef. As you are shy, this may help. It is understandable not to desire unwanted attention but you will need to become more assertive out of necessity. If the place does not feel right, don't do it. I would recommend not going to fast...
  4. This morning I made an awesome enchilada sauce from a ton of dried chiles et. al. for chicken enchiladas with Manchego and roasted poblano rice. Unsure of the side at the moment...
  5. I am SOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO jealous of your lobster! Make the risotto. Wait - make the baguette. How refreshing to hear of a thief who has a conscience!
  6. Oh, how I love goat curry!
  7. Me, too. Don't worry - not gaggy sweet milk chocolate but bittersweet is the most ofen used. How do we convince 'em, Barty?
  8. Mostly homemade bread but also pulverized lentils, gluten-free steel cut oats, crackers
  9. You are funny. People like me love the heads on for stock making. Tonight: Chicken Piccata Wild mushroom risotto Roasted red peppers with feta, herbs and olive oil
  10. Lef'douvres! That cracks me up!!
  11. Baked Appalachian Beans Spicy sweet potato fries with blueberry "ketchup" Apple cider slaw Buffallo wings
  12. Actually, Alton's is similar to what I use. Google Jamie Oliver's. His is sublime! In fact, that is what I am making today for lunch.
  13. Mine is the real deal with the Cheddar, egg, cream, Worcestershire but I did not use ale this time. I can find a recipe if you want with actual measurements!
  14. I miss you so hurry up and get back here! Where is Sylvia, by the way? Not that I expect you to drop in a THIRD time or anything...
  15. Have you tried cornmeal? I find glass not to be the best for pizza. Do you happen to have something that can withstand high heat which is best for pizza such as a pizza stone or aluminum or even a cast iron pan?
  16. A big fat serving of Welsh Rarebit. Oh, man...
  17. Yeah, I'm fairly certain you may find today a bit chilly at -22C.
  18. Thai beef stir-fried noodles (excellent lemongrass et. al. marinade), delicious sauce, etc. And about 30 ingredients so it is my kind of cooking. Scallion pancakes with dipping sauce will go rather nicely. Trying to use up stuff from the fridge. Unrelated to dinner, am making a batch of spicy garlic chili sauce to keep on hand and also a big pot of ...
  19. We are thankful for our big house when we have family staying with us. I cannot tell you how nice it is not to have any gluten floating around! It feels great to be in a safe environment. When cooking with alcohol, be sure it boils or reduces to eliminate that raw alcohol flavour. It is just there to enhance, not overwhelm. And I know how you adore...
  20. I am with you on all homemade stocks (I roast the bones, veg, etc.) and broths including Parmesan. Also make mushroom broths. And, like you, I always use wines in gravies and sauces unless it is with mushrooms and then I use Sherry. The key is to build a great flavour profile otherwise what follows will not be as good as possibly can be. We celebrated...
  21. No recommendations but just a note to say I LOVE SCOTLAND!!!! My husband and I have been there six times and my sister lived in Glasgow so she was sort of a temporary foreign Glaswegian! :-)
  22. One more thing - if you have an electric can opener, clean the mechanism well. All the best as you begin your journey to renewed health!
  23. Happy to hear it. Sleep is truly miraculous. I do not sleep well myself so when I do my days are brighter. :-)
