  1. Hi Slee, and welcome, I went undiagnosed (and am still undiagnosed!) and it took me 15 months to really feel better. That said, some people recover more quickly, and I felt better gluten-free than pre-gluten-free. I'm older thank you so that could shave time off your recovery, and even though we share some symptoms, some are different. That...
  2. I didn't know rice yogurt exists! Good luck with your trial. If that doesn't work I know there's a way to make coconut milk yogurt if you don't react to coconut. I don't have it at my fingertips, it would take some digging to find it...
  3. You're welcome. Those of us in "The Club" have to watch out for each other. Glad you aren't living in captivity anymore!
  4. Hi Padme, I'd recommend Elana Amsterdam's cookbook "The gluten-free Almond Flour Cookbook". Not all recipes are dairy free, but she's got some really good gluten-free DF Cookies in that book. Her website Open Original Shared Link may help. I checked this cookbook out from the library, and I'm considering purchasing it now that I know where to...
  5. :ph34r:So the past couple days on the grill we have had steak, Ahi Tuna steaks with mixed veggies steamed in foil packets, and chicken kabobs. Tommorrow I'm doing either bison or turkey burgers if the dishwasher's still broken, and I might even get paper plates and use plastic ware, LOL! So the past couple days on the grill we have had steak, Ahi Tuna...
  6. Thanks for the link, Skylark! That was interesting reading. I had a tablespoon of cottage cheese at the hospital cafeteria today as the next step of my challenge (still haven't tried the yogurt). Now I'm wondering if there's carrageenan in cottage cheese! Oy vey. Whatever happens, we've all been through worse and survived, trudging on to conquer our...
  7. So very sorry that happened, I think you an gluten-free Manna are dead on right. Thank you for sharing your story, it may prevent others from the same dreadful outcome. And watch out for hand rails and gas pumps, even door knobs if you're sensitive. Hope I don't sound like Howard Hughes!
  8. I had ravenous hunger for a few months after going gluten-free. Instead of empty snacks like pretzels, you might like to try whole nuts for a snack. The really satisfy the hunger and quiet the beast. (Your stomach.) I'm underweight but really sensitive, so the gluten-free Foods at the grocery didn't work for me. Another wierd thing that I discovered...
  9. Thanks for responding skylark, I have learned so much from your posts. I've tried every alternative dairy product (rice, almond, goat, lactaid free, coconut milk) and the all made me sick, probably from the soy additives. I'm finally used to drinking my coffee black, I may just stick with that. But I understand how wonderful it is to be able to finally...
  10. Hey Kaylee, I hope it works for you! And I went to a natural food store today, even the organic cream has carageean in it. Oh well for whipped cream, hope you get to enjoy your pizza soon!
  11. Yay! I used to LOVE cottage cheese. You were smart not to add anything else to your diet. I added chick peas on Sunday evening (no dairy) thinking that my AI system had finally rested. I didn't have a bad reaction, but I'll be avoiding legumes again for awhile.
  12. I daydreamed that if I went for Ice Cream, it would be HaganDaaz 5 ingredient. I was afraid this tolerance to dairy was too good to be true and wanted to test the waters with what I've read are kind to our tummies. P.S. I haven't tried the yoghurt yet. I'm scared! I'll try it Wednesday I guess.
  13. I've avoided dairy for more than a year because it made me every bit as sick as gluten. Friday evening, I tested hard cheese (cheddar). I didn't have a single repercussion. I daydreamed and night dreamed about dairy the last two days and nights. I dreamed about whipped cream on meringues or gluten-free biscuits, ice cream, all cheeses (ranked...
  14. You might like almond flour even better! I'm loving it so far, just received it last week (via Nutsonline.com) and I'm digging into Elana Amsterdam's "Gluten-Free Almond Flour Cookbook". (Note: Bob's Mill Almond Flour won't work for her recipes, according to the cookbook. I love it because you don't need gar gum or xanthum gum or a mix of other stuff...
  15. Hi Bubba, It isn't uncommon to have an intolerance to soy after going gluten-free. Here's a link you may find helpful. Open Original Shared Link I've been soy free for over a year now with the exception of soy lethicin (I know it's in my calcium supplements, and in my occasional chocolate.) Good luck, hope you feel better soon. I had problems...
  16. I came back with high ANA too. It's freaky when you get the results and research what that means. Be prepared for more weird blood tests if you experiment with alternative grains and you're sensitive. So my advice is, relax, chill, keep with the diet. Easier said than done. I've actually learned to ask the doc to take the same blood test six weeks...
  17. Hi colorme, To answer your question, zero. You have celiac disease with a confirmed biopsy. I can't think of a single reason to go for the upper GI unless you're concerned about ulcers or GERD. The doctor that suggested you get a second opinion doesn't have a clue about celiac disease. Unfortunately, that's fairly common.
  18. Just scrolling through some old threads. Yum, that sounds good! I'm up for adoption!
  19. Badia spices are available where I live. They usually have a separate section in the supermarket, sometimes in the Latin section, sometimes in the spice section. I paid about $5.00 for a little plastic snap shut container that has lasted over a year. I think Badia usually has their display arranged alphabetically.
  20. If you want to avoid soy, or discover that's a problem, coconut aminos (from health food store) are a reasonable substitute for soy sauce, not as salty, but you can always add salt. It is very frustrating at first. Hang in there, good luck cleaning out the kitchen this weekend. Say good-bye to bad stuff! (And feel good about donating to the local food...
  21. Hi wildapple, just interuppting here. It is overwhelming at first. If you want to get diagnosed, don't start going gluten-free now, just research it and think about it to get your mind in the right place, and make a plan. And try to focus on all of the really great things you can eat. You can't buy processed overpriced yucky stuff. You can...
  22. Hi Hubby and Welcome to the forum! I'm glad you finally discovered the answer. I've read quite a bit over the past 15 months, but I'm not an expert. For me, some symptoms improved immediately but others took longer to improve. I had good days and bad days at first, and I think that's normal. Make it a priority to eliminate cross-contamination in...
  23. Grilled indian spiced minced lamb kabobs with saffron rice and lettuce tonight. There is no egg or binder in the recipe I used, so they didn't end up being kabobs (slid right off the stick and ended up being burgers or logs). Last night: Vietnamese shrimp with rice noodles, shredded carrots and lettuce with two dressings (both Vietnamese). We...
  24. I'm guessing he's maybe Italian since you said he likes pasta. (Sorry a lot if I'm stereotyping.) Easy salad: Chopped, washed, dried romaine lettuce hearts with chopped salad cut hearts of palm (buy the can and stick it in the refrigerator the night before, rinse them and use about 1/4 of the can in your salad), chopped black olives, a tsp. of capers...
  25. Biopsies aren't always 100%. I know a medical assistant that had MRSA from a fresh tatoo. She had the site biopsied 3 times. The 1st and 2nd came out negative for MRSA. She said she told the derm. to really dig down there and take a good biopsy the 3rd time, and it came up positive. This may not be the case with you, but thought it was relevant. Have...
