I've only been at this a few more months than you. My (self-inflicted) rules after a poisining are... lots of water, homemade chicken soup, a hot soak in the tup with epsom salts and baking soda, and a good night's sleep. Exercise if you can. You want to get it out of your system. -

I tried plain quinoa within a few months of going gluten-free. It kicked me in the teeth. (Actually, it kicked me somewhere else, and it took me a few days to recover.) I waited awhile to try oats. I called in sick on Monday because I tried certified gluten-free oats on Sunday (broke my rule about trying new foods on Friday so I'd have time to recooperate... -
Grazing is ok, but I'd try to give up the sugary things (unless it's fresh fruit, since you'll get good nutrients and fiber.) And yes, I had a hard time sitting down to a meal for the first few months. It gets better.

I scored a level 4 allergy to turkey after being gluten-free for about six months. (You need to carry an epi-pin if you score a 5 on a scale of 1-5.) I never really cared for turkey anyway, so it hasn't bothered me. It could be CC or it could be new food allergy...has she had the little guy see an allergist yet? Grilled shrimp kabobs with onion and mango chunks (could substitue any fresh fruit slices) and greek olives. It ended up sweet and sour and savory, a nice surprise (just used what I had and hoped it would be edible, and it was really good!) Served the kabobs with brown rice pilaf. -

Three words of wisdom, learned on this forum. SOY is evil. (For some, including me.) And I have to add, since I can never do just three words, that soy is especially bad if you have thyroid issues or concerns. -
I would suspect the mayo if it was processed. Probably made with soy oil. (Gluten's evil twin to our autoimmune system.) I keep a little stash of anti-anxiety meds for times like you're enduring now.
