ARCHIVED Easy Peanut Butter Cookies
Marilyn R replied to Elfbaby's topic in Gluten-Free Recipes & Cooking Tips
That's a really good idea. Will you cut it down by 1/4 cup? I guess if you add dates or raisins, you could cut the sugar down by 1/3? (Thinking outloud, so to speak, and looking for input.) -
It seems weird that the Gastro didn't send her to a lab for a Celiac Panel. Not being cynical or anything, but if he had a plebotomist in his office, I'm sure he would have ordered the blood test. It it helps, tell your mom that sombody's (internet buddy?) mother died at 87 with celiac disease. Her cause of death was not celiac disease, but her...

ARCHIVED Need Help Figuring This All Out
Marilyn R replied to HopefulMama23's topic in Coping with Celiac Disease
I really hope you can figure it out soon. Many people develop other food intolerances like dairy or casein, soy, nightshade, corn after going gluten-free. Others can't tolerate the alternative "safe" grains or legumes. What are you eating and drinking. I had the hair loss, depression and insomnia when I developed new food intolerances. You could... -
ARCHIVED Easy Peanut Butter Cookies
Marilyn R replied to Elfbaby's topic in Gluten-Free Recipes & Cooking Tips
Lara Bars were $1.59 each at my local grocery store today. And they lookied smaller than usual! I decided to make the cookies again instead. I added minced dried apricots (didn't have dates) along with mashed banana, a couple of chopped Hershey's Dark Chocolate Nuggets and a handful of raisins. And I used 1/2 cup each brown and white sugar... -

I'm not a chef but I love pea soup! Don't give up on it...here's one to try. Open Original Shared Link I would rinse and soak the peas first. And saute the onions, spices before starting the soup, but I tend to be a split pea soup perfectionist. -

I worked with a great Belgian chef about 30 years ago. He made a fabulous chilled melon bisque served in a scalloped melon shell. I started thinking about coconut milk and melon and... didn't do anything about it because I have half a bushel of mangos to deal with. Today I made green mango chutney with the underipe ones, salad with the ripe one... -
ARCHIVED Gluten Withdrawal - Anyone Else Feel The Best In The Morning?
Marilyn R replied to ericsnow's topic in Coping with Celiac Disease
Hi Eric, Sauerkraut is one good non-dairy probiotic. You didn't mention if you were taking a multi-vitamin with minerals. My doctor drummed it into me that I must (even if they made me sick) take a MV with minerals. Ask your doctor to check your Vitamin levels (especially D). A vitamin D defficiency can cause fatigue and more, and it's a common... -
And as far as I know, coffee factories don't share lines with other gluten products. It can be a bit rough on your digestive system though. I had to swap to green tea for the first couple of months. Thankfully, I can enjoy my coffee again!

ARCHIVED Do You Aim For Gluten Free Or Completely Grain Free?
Marilyn R replied to ErinP's topic in Coping with Celiac Disease
I agree with limitting the gluten-free baked goods and cereals, but I still like my rice. I grew up in the midwest and was a "cornasoir", loved it. And I loved hispanic foods. About one year after going gluten-free, I developed an intolerance to corn, so corn is out for me. Rice hasn't bothered my digestive system so far. I'm iffy on gluten... -
ARCHIVED Easy Peanut Butter Cookies
Marilyn R replied to Elfbaby's topic in Gluten-Free Recipes & Cooking Tips
I added 1/2 mashed over-ripe banana to 1/2 of the OP's recipe. And added about 1/2 tsp. baking soda and 1/2 tsp. vanilla (not imitation). I had to cook them just a bit longer than 10 minutes, and I really thought they were failures. The trick is to let them cool on a wire rack (if you have one, if not let them cool on top of something that will hold the... -
ARCHIVED Gluten Free, Dairy Free, Soya Free Baking Still Gives Me Trouble
Marilyn R replied to NoodleUnit's topic in Gluten-Free Recipes & Cooking Tips
Have you had problems with corn? That's a more common food allergy or intolerance than tapioca, and kind of leaped out at me because I can't tolerate corn (or maize) anymore. I've given up on almond, rice, hemp, etc. milks. They all have additives that seem to make me sick, and I've got neurological/digestive/nervous system repercussions too. There... -
ARCHIVED What's For Breakfast Today?
Marilyn R replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
A banana and a handful of safe roasted nuts(mix of pistachio, almonds and cashews). 2 cups of black coffee. I know I should eat better breakfasts, but it's hard to get motivated enough to shower, do my hair, apply make up and show up for work. I probably need to get my blood checked again. I went off my multivitamin because they made me sick (4th... -
ARCHIVED Easy Peanut Butter Cookies
Marilyn R replied to Elfbaby's topic in Gluten-Free Recipes & Cooking Tips
I'm sure you'll meet somebody nice who wants to share your cookies! Until then, it works to freeze the extras (out of sight, out of mind, and good feelings about preserving food for the future). After they've cooled completely, I stick two in a zip sandwich bag. Once they're all packaged, I stick the whole lot in a freezer bag (would label them dog... -

We had grilled fish with mango chutney and grilled sweet potatoes tonight. I should have made a salad, but didn't feel like it and decided we just have to listen to our body sometimes. -

Anything that you can saute quick on the stove is good, like fresh (or thawed frozen) fish and shellfish. The seafood can be served over wilted greens or fresh greens with a squeeze of lemon and some nice olive oil and s&p. If you can stand to peel a bunch of white potatos, boil them and make some into salad Nicoise, some into potato salad with... -

I can't tolerate dairy or soy and haven't found a soy free shortening yet. I in fact got tired looking. I considered lard, but that's bad for your cholesterol and the amount of additives in lard are staggering. -

Thanks for the link, Jen. I read the article, but may have missed the audio portio you were referring to. The article didn't reference that E-Coli could be growing in the vegetable. There have also been problems with green onions. Remember the popular mexican chain restuarant that had E-Coli from the green onions? That makes sense. There are...

We had grilled marinated lamb with brown basmati rice pilaf and sliced fresh GA peaches. Dessert was a potato vodka smoothie with frozen banana, another fresh peach and a splash of pineapple juice. I liked dessert best.
