  1. That sounds like a pretty vivid dream. At least they didn't have wheels of brie in your prison dream. (I can picture you wheeling them right to your cell in your red top and denims!
  2. I think most mainstream doctors think of celiac as a gastrointestinal problem. They screen, if they're good, for patients with malabsorbtion and excessive D, or if someone mentions that they have a first degree relative with it. I'm not surprised that you lost weight. You have significantly reduced carb and processed food intake. As for my own experience...
  3. You might find this old thread interesting.
  4. Good for you! Let us know if we can help with recipes or anything!
  5. Those dreams are normal. (My nightmare was about being at a party and eating fluffy hotdog buns with a bratwurst or hotdog.) And the dreams were very vivid, I saw color, shape, sounds. I told my Internist about the nightmares and she said it's like when you graduate from college and dream that you can't find the location of your last exam and keep...
  6. Yes. Corn is one of the "biggies" that can bite us after going gluten-free. Dairy, soy, legumes, nightshade vegetables (peppers, tomato, okra...) can also be problematic, but not for everyone. And some people are successful at reintroducing foods after awhile. Sorry you aren't feeling well!
  7. Hi lovetotravel, My HDL was above normal limits but LDL within normal range about a year after going gluten-free. I'd been totally off dairy for about 9 months then. Before going gluten-free, all of my bloodwork, to quote my doctor, "was perfectly normal". She said that over and over but never ran the celiac panel. (Argh!) Have you tried grapeseed...
  8. I love the flavor of buckwheat flour too. Almond flour pancakes are like cookies for me, I bet Almond and Buckwheat flour would be over the top. I had to eliminate corn, but that's been several months ago. Maybe I should try corn flour again. Thanks for your post, you have me thinking.
  9. Those cookies and croissants look absolutely fabulous! Thanks for sharing. Do you think that the crust will hold up for savories, like meat pies or empanadas?
  10. Wow. that sounds incredible. Guess you went around the world! (At least US, France, Italy and Mexico...did I leave anything out?) Oh Canada, Oh Canada...
  11. I think you sould go with your insticts. If you want to be cautious, just mix a bit of the chicken with the sour cream/garlic and taste it after if sits for a few hours or overnight. If you want to stretch the chicken a bit farther, chop up grapes, celery, apples, toss in some nuts, and have that on a bed of lettuce or in a lettuce wrap. You could...
  12. Grilled mini olive burgers, (no buns) cottage cheese and fresh black cherries. That probably sounds disgusting, but it was really god.
  13. If you can get a copy of your blood tests, I would love to know which tests Dr. Murray ordered. It's so nice to read about a positive experience with a doctor/hospital system. Thanks for sharing.
  14. Great post, bartful. Well said.
  15. Have you tried grilling squash yet? If you nuke a butternut squash for a minute, it's easier to peel. Then cut it up in chunks, slice some onion in you like it, and sea salt and pepper and drizzle it with grapeseed oil or olive oil and grill it until down. I love it. There is real depth in the flavor and if you get a big squash there will be plenty...
  16. Hi Mache, and welcome! What do you like to eat? Can you pinpoint what made you go off the diet before? If you love baked goods, go to Nutsonline.com for their gluten-free Almond Flour and purchase or check out "The gluten-free Almond Flour Cookbook" by Elana Amsterdam from the library. If you love snacks, you can still have Kettle Brand S&...
  17. Yes, when soaked in hot water overnight. I think that's one of Heloise's hints. Not sure I'd want to use that pan again if scratched and soaked in whatever they put in fabric softener sheets, btw. Good luck with your pan and your man.
  18. Over and above whacking him in the head with the pan? If it's burnt macaroni, I'd soak the pan (if still unscratched/unscathed in hot water, and if you have them, one of those fabric softener sheets for the drier over night. Tomorrow, use a microfiber cloth with hot soap and water to wash it out, rinse well in hot water, and drip dry, then inspect...
  19. Maybe we can help better if you tell us what you can't eat. And do you have a blender or food processor?
  20. I want to thank you, those were some interesting links. I kind of got wrapped up in the first one, and will hit that site again. It's an interesting proposition you presented. I've enjoyed beer my entire adult life until going gluten-free. I've tried several of the gluten-free beers, can't say that they appealed to me or hurt me as much as some of the...
  21. Can you add nuts? nutsonline.com is great, and they have some gluten-free flours that you might not be able to purchase locally. Yesterday I started a new post on a different thread about how happy I am with Almond flour and really wish I had found it earlier. It's great (and more forgiving) then wheat flour for making gravies. Skylark uses arrowroot for...
  22. I wish I had spent every penny on almond flour in the beginning, instead of dabbling with buckwheat, chick pea, coconut, tapioca, rice flours. I found almond powder by accident, but had to order it online. It is a great thickener to make a sauce or gravy, is low carb, and even though I have a tree nut allergy, it's never bothered me in the least in...
  23. We're having grilled hog snapper thai style with basatmi rice and lemon drop martinis. Maybe a salad, maybe not. (Had salad for lunch, as usual.) So we're off to Thailand tonight.
  24. Tomorrow I'm going to have greek yogurt with fresh sliced peaches and a drizzle of honey. Yum! (Newly back on the dairy wagon!)
  25. Hi Neal, and welcome to the forum, you've come to a good place. It seems like you've already done some research if you already know that a molecule of gluten can harm you. When I was new to this, I used the search forum quite a bit to learn, and read all posts in every topic that applied to my situation. One of the memorable ones that I didn't expect...
