ARCHIVED Wow! Great Stuffed Mushrooms!
Marilyn R replied to Marilyn R's topic in Gluten-Free Recipes & Cooking Tips
ROFLOL notme! Good for you for improvising! For the gyros, I'm using lamb and lean ground beef and I'm going to whirl a few pieces of bacon up in the blender, or maybe not. (The thought of having to wash my blender after whirlling up bacon is right up there with eating cat food!) I was planning to use lamb and ground chicken, but the grocery didn... -
ARCHIVED How Big Of A Problem Is Cc With Canned Products?
Marilyn R replied to Asharia's topic in Gluten-Free Foods, Products, Shopping & Medications
Dear Asharia, Hello & welcome to the forum! I was sensitive at first (18 months), but it seems like my autoimmune system is starting to simmer down. During the first year I had a few more obstacles. Soy, dairy and corn kicked me right in the gut. I'm good with dairy now, haven't tried reintroducing corn or soy. I also had problems with quinoa... -

ARCHIVED Living With A Gluten Addict
Marilyn R replied to revenant's topic in Parents, Friends and Loved Ones of Celiacs
My mom was a teetotaler (didn't drink alcohol at all) but could not be compliant with the gluten-free diet. I had people tell me that they saw my mother drunk on her a... downtown, staggering: it was gait ataxia from the gluten. It also affected her mood. All of us children decided that it just wasn't worth it to try to make her happy, because you just... -
ARCHIVED Wow! Great Stuffed Mushrooms!
Marilyn R posted a topic in Gluten-Free Recipes & Cooking Tips
Because of the "What's for Dinner" thread, I bought ground lamb at an outrageous price, $8.99 per pound. (I had to try the gyros!) I had left over 'shrooms that I bought for pizza. I googled lamb stuffed mushrooms and regrettably can't attribute the author, but had a yum moment tonight. I mixed about 1/8 cup ground lamb with about 3 T. minced onion... -
ARCHIVED A Little On The Frivilous Side...
Marilyn R replied to saintmaybe's topic in Coping with Celiac Disease
Piping in again...thrift/charity stores are a great place to shop when you're changing sizes. Some of the coolest things in my wardrobe were bought for $3-$5 at a thrift shop. (Goodwill, churches, etc.) -
ARCHIVED A Little On The Frivilous Side...
Marilyn R replied to saintmaybe's topic in Coping with Celiac Disease
Good for you for treating yourself! I thought you were going to talk about beef tenderloin or lobster! LOL, I've become pretty food focused even thought I wasn't before I had to cut out the gluten. If your hair is still falling out, ask your physician to order a Vitamin D blood test. You might not even have to go for an office visit, if you ask really... -
ARCHIVED Endoscopy Or Not To Endoscopy
Marilyn R replied to Mariah's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Dear Mariah, Welcome to the forum, and sorry to see that you're feeling so bad. I'm sort of torn on my advice. If you've only been gluten-free a month, the procedure isn't that bad. The gastro can rule out some other things that could be going on, like ulcers and GERD and Diverticulosis. I personally wouldn't be willing to re-introduce gluten if... -
ARCHIVED The Pizza Crust Thread
Marilyn R replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
I tried Elana Amsterdam's almond flour crust today. It was ok, far better than Bisquick crust. Pros: few ingredients, quick to prepare. Healthier than other flours (low glycemic, high protein). Cons: mealy/sandy texture. (I drizzled EVO over before baking, even the the recipe didn't call for it, but that didn't help.) My DP said it was like... -
ARCHIVED The Good Over The Bad Of Celiac
Marilyn R replied to New Community Member's topic in Coping with Celiac Disease
This post hits me right in the heart. I recently hooked up with a first cousin on a social networking site. It's been 30 years since I've seen her. I told her about my gluten sensitivity and she responded that it's great that I can deal with a disease by what I eat. She asked if I'd heard that she has pancreatic cancer and is on chemotherapy. She... -

I don't know if this will help your best friend or not, but my 12 year old doberman was on her last leg 16 months ago and the vet put her on prednisone. That is wicked stuff and we followed the vet's directions but then started buying treats and foods that prommoted good hip and joint. She's still an old girl but so much better. We have had her off prednisone... -

ARCHIVED Can Someone Explain Why I Feel Sick More Often?
Marilyn R replied to Schatz's topic in Coping with Celiac Disease
My parathyroid was attacked vs. thyroid. I used to be supersensitive but I think finally I've crossed the threshold. What helped me, (not to suggest that it will necessarily help your medical condition) was to read as much as I could aat the library about food allergies and sensitivities. The only way I could function at first was to start eating only... -
ARCHIVED The Pizza Crust Thread
Marilyn R replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
Ahhhhhh, in search of the perfect pizza crust. I've done so much research on this. I haven't tried Elana's yet, but I read that coconut flour makes better thin crust pie than Elana's. But you can't use Bob's Red Mill. I posted on the "What's for Dinner" thread that the bisquick pizza recipe is pretty abysmal, but made the house smell good. We both actually... -
ARCHIVED Can Someone Explain Why I Feel Sick More Often?
Marilyn R replied to Schatz's topic in Coping with Celiac Disease
You might be getting sick from other food intolerances (soy, dairy, alternative grains, processed gluten-free foods), or you could be getting sick from cross-contamination. I can't really do that topic justice, but if you use the search engine on the forum you will see. It involves cutting boards and wooden spoons, anything with crevices, like scratched... -

I don't know why poblanos are so cheap at that market. Red peppers are $1 each there, so I pick the prettiest, biggest one. That is used for dipping strips in hummus (a doctor friend told me that's one of the best raw veggies you can eat, full of antioxidants). The poblano peppers are sooooooo good roasted or stuffed. Our dinner turned out great tonight... -
ARCHIVED Thinking I Need To Be Gluten Free
Marilyn R replied to lesliev523's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It definitely sounds like you're headed down the right road. Can you ask your GI for a copy of the radiology report from the endoscopy biopsies? I've had doctor's offices fail to report abnormal labs... -
The funny thing is that I used my smart phone to google that restaurant! All of the reviews were great except one and that was because they had to wait a long time for their order. I should write a review, shouldn't I, telling people that their gluten-free status is basically B.S. I was nascious & constipated last week, but I attributed it to reintroducing...

ARCHIVED Depressed And Hungry....
Marilyn R replied to jenbunni87's topic in Coping with Celiac Disease
Hi Jen, I'm not really sure about what that medication is, and you really shouldn't require medication if you have celiac disease (except some supplements). If you're still having symptoms, there are a few other common food intolerances that start for some people that go gluten-free. (Soy, dairy, corn) As far as finally finding good care, it's great... -

Ribs. DP had salad and ribs. I am so off salads for awhile. But I prepped something to stuff poblano peppers tomorrow. (Sauted scallions, mushrooms, left over Rotel & some left over cooked winter squash with shredded smoked chicken. (He used the new smoker again yesterday.) Tomorrow I'll prep the peppers, stuff them after I add shredded and crumbled... -

I place an order about once a month. I love the samplers, too! All of their shipments have been wonderful. I do the happy dance on delivery day, even before it arrives (because I know it's coming, they e-mail you. Has anyone tried their gluten-free flour mix? (I haven't, just buy the almond flour.) I have pretty simple baking needs, but I'd love... -
ARCHIVED Sami's Bakery
Marilyn R replied to mamaw's topic in Gluten-Free Foods, Products, Shopping & Medications
It was me. For some reason, my antivirous software goes smack raving mad on the Sami's website and I can't navigate it. But I had no problem with your link. The forum members decided (and I concur) that that delicious bread isn't safe, and neither is the restaurant I went to. Thanks for posting. -
I guess DP gets the gorgeous bread. I was just really lucky I didn't get sick last week, or maybe my symptoms are changing. It's funny. The menu doesn't actually state that any of the items are gluten-free, but the restaurant has been written up as having a gluten-free menu in the local paper and gluten-free is painted on their window. I don't intend...
