  1. I ate out for the first time in months. My big brother is visiting from the other side of the country. We went to an upscale fish chain restaurant with a gluten-free memu. We had to die for mussles and stone crab, swordfirsh, garlic mashed potatos and mixed veggies. I'll probably dream about it tonight. Have my fingers & toes crossed that I won...
  2. I've had problems with quinoa, but never with any kind of rice. I buy it in 5 lb. bags from the oriental grocery store. I never tryed the GAPS diet, but I've read some old posts on the forum that indicated it was fairly contoversial. If you switched to GAPS because you weren't feeling really well, it may be because it really does take some time to heal...
  3. I got rid of my old grill, but sorry, I can't buy into getting rid of the old oven. I use parchment paper on top of my old cookie sheets and stick them in my old oven. I could be wrong, but wish you would provide scientific evidence (aricle or etc.) to make this claim.
  4. I find I don't have an appetite in the morning. I had the day off today and loved a bowl of homemade chicken fennel soup around noon with some almond flour crackers. I snack on nuts or seeds or fruits, some dried fruits. I like the almond flour because it's high protein, low glycemic, and really satifies the hunger. Even my non-gluten-free DP likes...
  5. Thank you. I had a problem with Spectrum canola oil mayo, and none of the other mayo's work. It's 30 miles to the nearest Whole Foods, maybe I'll make a road trip.
  6. Meringue cookies...here's a recipe I haven't tried: Open Original Shared Link If you happen to have a fondue pot, a simple homemade chocolate sauce is so good with fresh fruits, and so festive. You could have an amaretto flavored whipped cream for your guests who partake in dairy. Easy to make. The chocolate sauce would probably be good in a small...
  7. I know the feeling, sometimes I feel like my phone is smarter than me. Regarding giving up the processed foods, I had a problem with that too. It takes time, like any big life change. I had an attitude about it for a year. But then I kept getting sick and that really sucks. Now I'm perfectly content with eating every meal at home, or packing...
  8. Here's my two cents. I've been soy free for over 18 months, except for an occasional dark chocolate. I don't crave soy, so I keep avoiding it. I think (but don't know) that it's related to thyroid disorders. It made me so sick before, and I like sticking with foods that didn't make me sick. I used to wish I had soy sauce for stir fries. A reasonable...
  9. Would you share your noodle recipe? Pretty please, and Jestgar, if you have a good pickle recipe, I'd live to learn...
  10. If you haven't bought a stick blender yet, you might find it helpful. Veggies taste so pure and so good when pureed, and it's a slam dunk pureeing them with a stick blender. I always think I'm going to get electrocuted when I stick that blender in the dishwater to clean it (while it's plugged in), but that's an easy way to clean it and I haven't bounced...
  11. Tonight we're having crackers and white bean /fennel dip, sweet potatoes and grilled fennel sausauge. I still have left over pear crisp, but that might be tomorrow's breakfast. I'm finally getting used to being food focused.
  12. I bought a clump of fennel at the farmer's market on Friday. So far, we've had Ina G's fennel and cheese gratin (scalloped potatoes and fennel with cheese), chicken soup with fennel and root vegetables, white bean dip with fennnel. I'm loving fennel! For dinner, we had grilled pork loin ribs, Ina G's taters, and pear crisp. I made homemade crackers...
  13. Wow. Thanks for sharing your knowledge.
  14. Hi Fish On, and welcome to the forum! I'm not a medical technician, but it sounds like you have diverticulosus, which isn't uncommon for people who have celiac disease. Help with the diet: eat whole foods like fish and meat, avoid processed food, kiss that Italian bread good-bye, purchase Udi's (only palatable bread that is gluten-free that I've...
  15. My guess would be soy. It's in the mayo, and probably in the lunch meats. There are trace amounts in most of the alternate milks, most peanut butter and tuna. It's in the Coconut Ice Cream, and most chocolate. Soy whipped me almost as bad as gluten did, with very similar side effects. As for getting over that, Green Tea has caffeine and doesn...
  16. I never knew that I was "lucky" that my mom had celiac disease, and all of my siblings seem to understand it. Funny thing is, my Mom couldn't be compliant, even though she was an R.N. So I get what you're saying about the anthropology of it. She was 100% dutch and grew up on wheat, we had it in one shape or form for every meal. I don't know if it would...
  17. Wal-Mart sells Masa Harina in the Latin food section locally, but we have a large Latin population. If you have a Latin grocer, they will most likely sell a press. You've got me hankering for fahitas now! (And huevos ranchero...) I'm going to have to do a corn challenge this weekend! Wish me luck!
  18. I love squash too! I can't get enough of it during this season. Have you tried that really pretty yellow and green one shaped like an acorn? I love butternut, but I love this variety even more. I'll probably have squash tonight, and smoked pork but with green papaya salad if I get adventurous, or just pork with squash and asparagus. (DP smoked...
  19. Yes...many of us have problems with secondary food intolerances. The protein in soy, dairy, and corn can commonly be a problem. Six weeks after going gluten-free I had to cut out soy because I started reacting to it in the same way I did with gluten. Then dairy. Shortly after, I couldn't tolerate corn. I'm tolerating dairy again now. Those are the...
  20. Baked potatoes with homemade chili and crumbled queso cheese and yogurt. Since I was baking, I filled the oven up with winter squash and extra potatos. I love squash!
  21. I get almond flour on line and LOVE it for gravy and sauces, as well as for the little amount of baking I do. (But it doesn't perform well for pizza crust IMHO.) The disadvantage is that you have to freeze it, and it's a little lumpy itself (doesn't have all those additives in it.) The advantages are that it's high protein, low glycemic and low...
  22. I've finally found something that works for me. I go to the produuce stand or farmer's market once a week. I go to the grocery store and just buy meat and dairy, (Sometimes I pick up a pint of Haganndaz Rum Raison Ice Cream.) I buy rice and coconut milk from the Oriental store, along with rice noodles and pure coconut milk, dried mushrooms, fish...
  23. I applaud you, but I'm exhausted by just reading the recipe! Good for you, I bet it was delicious.
  24. gluten-free Pasta with homemade vodka sauce, smoked pork butt and sauted mushrooms and asparagus. (Really glad I have left-overs!)
  25. I'm really sorry, but I don't think you can clean that enough. I wouldn't be willing to try it. Even if at first you're ok it seems like you get more sensitive down the road, and respond worse to minute amounts of gluten. I'd sell it and buy a new one, or try hand rolled pasta. Maybe that's just me, but ewwwwwwww.
