I made the one in Elana Amsterdam's Almond Flour cookbook. I checked her website yesterday and saw that she revisited the recipe. The almond flour should be at room temperature and the pancake mix should be allowed to sit for 15 minutes before cooking at medium or MH vs. ML as instructed in the cookbook. It's worth a try. And at the risk of being really boring, I'll suggest once again that you get a pressure cooker. You can teach classes in PC. You can do Osco Busco in less than an hour! If that doen't sell you, I'll shut up forever. -

I tried almond flour pancakes again. They are supremely delicious, (like coookies) but very aggravating to cook. (Tough to flip, long to cook.) But they're delicious and safe, low carb, some protein, so I guess they're worthy, but I need to tweak the recipe. -

Good point Mushroom. Something else to think about is CC from wheat with corn products. (Corn tortillias, corn flour, grits, etc.) They're all made on shared manufacuting lines from what I've seen in the grocery stores in my small town. Maybe there are more options in big city groceries.

No. She died 12/16/10. She was an R.N. I'll never understand why she couldn't go gluten-free. I miss her and still wonder what the issue was. Maybe because she was a depression child?

Have you considered other food intolerances? Dairy, soy, corn can be problematic for some people after going gluten-free, so can nightshade vegetables and legumes or fructose, as well as some of the alternate grains and to a lesser extent, egg yolk. Have you tried keeping a food diary? Sometimes ingesting the other proteins can mimic a gluten reaction...

I've never felt fortunate until reading your post that my siblings and their families get it. It was my partner's birthday. He wanted twice baked potatos and Porterhouse steak with salad. (No cake, the taters are better than dessert, he said.) It's a pia to make twice baked potatos. Hi Hadrian, You've been through so much and I guess my best advice is to try a gluten-free diet for a few years (it took me 15 months to return to what I feel is close to normal, but I'm quite a bit older, so maybe you'll heal faster.) Good luck, I hope you figure out what is right for you.

I can't tolerate carrageenan, so most whipped creams or full creams are out. I can tolerate dairy products without carrageenan, including Half & Half. I've been bummed that I can't find whipping cream without carrageenan. Carrageenan is a seaweed prduct, don't know why it would be problm, but for me it seems to be a problem. -

Maybe it's the soy. Take a deep breath and try to relax. At first, for some of us, it seems like everthing you stick in your mouth makes you sick. Rice is generally good. When it seemed like I was getting sensitive to everything, I started soaking, then rinsing my rice before cooking it. Another poster sorts it by hand before cooking it but I don't have the patience. I have a few Indian cookbooks and the authors suggest soaking and rinsing before cooking, so that's why I started prepping it like...
