Marilyn R replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
I have something to look forward to when I get over my dairy intolerance!! Buttermilk biscuits and sausage gravy. OMG. You're giving me food envy! I'm a skinny thing and need to put weight on my bones, would love to do it with biscuits and gravy! -

ARCHIVED Lost And Confused And Sad
Marilyn R replied to marie33's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Don't sweat the negative test results. An earlier poster (a month or so ago) was denied life insurance from a few carriers. Every test I've had shows I don't have celiac disease. But I have permanent nerve damage from consuming gluten, according to my neurologist. One Internist said she'd diagnose me on the spot when I told her my before and after... -
No. Don't worry about salt. Reading your tag, I'd worry about the small amounts of lactose free milk. Have you tried coconut milk, in the can, without preservatives and additives (from oriental or indian grocers)? Good luck.

His and hers pulled pork sandwiches. His on hamberger buns, her's open face on toasted Udi's. Both of us had saurkraut on the side. His with BBQ sauce. We had banana nut chocolate cookies for dessert. (I think that's the only thing I bake anymore.) -
ARCHIVED Introduction And Questions
Marilyn R replied to Bryan E's topic in Coping with Celiac Disease
I added the Vegetarian Cooking Under Pressure to my list but I'm not sure if a pressure cooker is in my budget now, I will check it out however. Bryan, don't put that book on your list unless you get a pressure cooker. And since you're financially pinched, ask for one for a Christmas or birthday present. In the meantime, go with your original idea... -
ARCHIVED My Stages Of Healing: 5.5 Months Gluten Free
Marilyn R replied to HopefulMama23's topic in Coping with Celiac Disease
Possibly you've devloped another food intolerance ... nightshades? corn? fructose? legumes? What are you eating and drinking. Maybe someone can help pinpoint the culprit. Do you keep a food diary? Good luck! -
ARCHIVED Happy To Be Celiac?
Marilyn R replied to ilookthetype's topic in Coping with Celiac Disease
It's funny ... I was talking to my former boss and good friend today and she has a miserable summer cold. She said she came down with it last weekend and is starting to feel better, and that she only coughs when she's talking. I mentioned that I haven't had a cold in two years, and used to catch one every 4-6 months. (Work in medical, get exposed to... -
Noodle, jungle, jac & RL... Are you eating plenty of protein? And I mean intermentently throughout the day. It seems to help. I'm worthless if I don't get my protein every few hours.

ARCHIVED Introduction And Questions
Marilyn R replied to Bryan E's topic in Coping with Celiac Disease
I've heard these are good but I don't know how to prepare any of them: kale, millet, buckwheat, lentils. Hi Byran, and good luck. Kale and spinach are delicious when you saute roughly chopped garlic in olive oil, (start over if you burn the garlic) add just washed greens over medium high heat, stir fry and add s&p. I wouldn't do tofu, but... -
ARCHIVED Disaster Plreparedness

I bought two cases of canned fruit today (without high fructose corn syrup), six cans of Hormel Corned Beef Hash and 4 cans of Spam. (Yuk.) And three big bags of safe nuts. The best flashlights are the ones you strap on your head. (WalMart sells them in the camping section.) They're lightweight, hands free and take up little space. We have a rule... -

Roast pork with homemade NE Carolina BBQ sauce, carrots, and taters. I really need to start thinking green. Dessert: potato vodka with pear juice and fresh lycchee martini. My sidekick opted for the usual (peanut butter cookie using THE recipe.) -
ARCHIVED Need Help Figuring This All Out
Marilyn R replied to HopefulMama23's topic in Coping with Celiac Disease
Dear Hopeful, Thank you for your kind response. To answer your question, for me, I usually can't sleep the evening of the day I consumed gluten or one of the other bugs I mentioned. The next day I tingle all over my body, especially after I shower. But the infuriating thing when you're trying to figure this out is, depending on your body (and probably... -
ARCHIVED Anyone Feel Like A Full Time Chef?!
Marilyn R replied to GFreeMO's topic in Coping with Celiac Disease
Yes, and I used to actually entertain. Now I never entertain and usually I'm embarrassed when somebody pops in because my home isn't as tidy (inside or outside) as it used to be. Oh well, maybe I'll get around to cleaning and entertaining again. The important thing is we're feeling better and recovering and functioning, right? -

ARCHIVED Disaster Plreparedness
Marilyn R replied to Marilyn R's topic in Coping with Celiac Disease
Wow, FooGirlsMom, great suggestions and resources...thank you! Don't feel bad about buying all of that wheat. I made an even worse purchase a year before going gluten-free. I spent a major amount of money on, of all things, a concession stand mini donut maker. I still have the dang contraption, and about 10 lbs of vegetable oil that contains soy, and... -
I live in the deep south and it's hurricane season. What would you stock up on to ride out the aftermath of a storm or disaster? I went through 11 days without electricity 8 years ago, all of the grocery stores, restaurants and gas stations were closed. (They didn't have power.) I wasn't gluten-free then, but I had a gas grill with a side burner...

ARCHIVED Anyone Alergic To Eggs?

ARCHIVED Best Vitamin D?
Marilyn R replied to SarahJimMarcy's topic in Gluten-Free Foods, Products, Shopping & Medications
You bought Vitamin D-3, right? I read (online, so maybe not reliable) that D-2 is worthless. Solar is the brand that I bought at the Health Food store, and it has been great. My fingernails are growing again vs. being paper thin, and my hair isn't falling out. It says on the bottle that they're gluten-free SF DF. And that mfg. has been around since ... -

ARCHIVED Need Help Figuring This All Out
Marilyn R replied to HopefulMama23's topic in Coping with Celiac Disease
I felt great better, slept better and performed better for two months after going gluten-free. Then I started feeling crappy again. I searched this forum and decided to give up dairy without going through the lactose test. I immediately started feeling better. Within in the same month, I started feeling crappy again. I'd been making stir fries quite... -
ARCHIVED Do You Aim For Gluten Free Or Completely Grain Free?
Marilyn R replied to ErinP's topic in Coping with Celiac Disease
Overwhelming response, isn't it? The truth is, everybody cares. And here's something I searched and posted for you... Buckwheat is a pseudocereal that is eaten like a grain, though botanically it is neither a cereal nor a grass. Rather, it is a seed from the herb family Fagopyrum. Buckwheat is not related to wheat, and contains no gluten, so it can be safely... -
ARCHIVED Are Chills On The Scalp A Symptom Of Gluten Withdrawal?
Marilyn R replied to ericsnow's topic in Coping with Celiac Disease
I didn't listen to somebody who advised me to make sure my Dr. monitored my Vitamin D level early on in this ordeal. It turns out that I have an abysmally low Vit. D. My doctor says the tingling cannot bet attributed to low "D", but I'm feeling better and less buzzing (and hair loss) since adding Vitamin D-3 supplements daily. I shoot for 4500 to 50... -
ARCHIVED Easy Peanut Butter Cookies
Marilyn R replied to Elfbaby's topic in Gluten-Free Recipes & Cooking Tips
Wow! That's expensive for a Lara Bar. I haven't had an Enjoy Life bar for quite awhile, they're pricier here. There are some cool recipes on the web for homemade Lara bars. I haven't tried making them yet, lost the link (just checked), but the recipe I saw was to chop dates & dried cherries in a mini food processer, then chop almonds or other...
