  1. I regularly purchase and cook with store brand tomato paste (Publix, Fresh Market, WalMart) and have never have a problem. The name brands should be okay too, they will disclose on the ingredients panel if anything other than tomatoes are in there.
  2. I don't eat out very often, but when I've ended up in a Mom 'n Pop restaurant, I order Chili after asking the server to check with the kitchen if they thicken the chili with flour. Depending on the restaurant, you may be able to order an un-cut baked potato as a side item.
  3. You're right, it would be good to replace the grates. Until you replace them, you can use foil. Butternut squash is really good when it's roasted. It's easier to peel if you microwave the whole squash for a minute. Then peel it, cut it up in chunks. The chunks are good grilled in foil packages with sliced onion and olive oil with s&p.   5. Sometimes I find myself wondering what happened to the old forum...the one where everyone was nice and supportive, the one where you could unload without being judged or slammed. That's probably just me though.
  6. Sounds like you're armed and dangerous to wicked gluten. Way to go!!! My only suggestion would be to add easy snacks, like sunflower seeds or nuts.
  7. Pesto is great with hot or cold chicken ... and you can make pesto dairy free. Your plan looks sound. You might want to add some safe nuts for snacks when your energy is lagging. As for the shared microwave at work, you might want to put a coffee filter or paper towel over your food before warming it up, but I could just be paranoid.
  8. My next decision would be to make a resolution to plan more. You can freeze cooked rice in Sandwich bags and have cans of black or red beans in the pantry. If you make gluten-free pasta, it's just as easy to make a whole bag of it as it is to make a small portion, then freeze single portion sizes. Same with soups or chili or practically anything. ...
  9. If you have an oriental store nearby, they'll have rice paper (and noodles) in an assortment of sizes. Some people don't like to purchase from oriental stores, but I've had no problems and I've found that the prices are significantly better than mainstream grocery stores.

  13. It's like giving your GI a panoramic shot vs a picture. You know how you can take 8 photos, 7 of them turn out bad but you get 1 you love? This is the reverse.   21. It's like someone trying to shove food down your throat. Some people try to shove religion down your throat, and that rarely works. I suspect she'll find out about that eventually, or flutter around clueless, bestowing misdeeds on innocent people who could benefit from a chaplain.

  23. If you have an Oriental grocery in your area, they'll carry sweet rice. We had grilled salmon tonight with chopped rosemary/mustard/brown sugar basting, & mashed parmesan potatoes with a salad. We're always a day late, last night's dinner was pretty awful.

  25. Prickly, have you tried parchment paper? It's sooooo much easier to deal with than aluminum foil. And OP, parchment paper is great to cover your food that you cook in a shared microwave.
