  1. Marty- Well, we're glad you're here to join us. I understand the expectation... I had heard of people who felt better within a week--it does happen. I'm not one of those myself. I have been gluten-free for 6 mos, and have noticed few changes. I am not constipated like I was before for years--which is great, and I've noticed my fingers are growing really...
  2. For me isn't wasn't so hard either--The idea of intestinal cancers with a very slim chance of recovery were enough to make me steer clear. It makes me fearful of accidental or intestinal glutening ! I'm sure some others will have ideas though... I have also found a host of gluten-free foods I love and find it frustrating mostly only when I venture out...
  3. Marty- First off, 3 weeks is still very new to the diet. Most people are on it for several months before they start noticing real improvement. However, some notice things before that time. It depends on the person. But since you have been suffering for a long time, you'll probably need to be patient and give it some time. Second, are you sure you...
  4. I have yet to break out the quinoa flour, but regular quinoa i love ! i simmer it in broth, saffron or spices and serve as a side or i sometimes sub it in rice recipes--like beans and quinoa with sausage and shrimp or we eat it in tacos/fajitas sometimes, or i add it to thicken up soups. very versatile and yummy. i recently figured out i prefer the regular...

  7. rachel- with this whole 'glutening' thing--all i know is i am constantly amazed at contamination and what strange ways it seems we can get 'glutened'. it seems like no way is impossible! the longer i'm gluten-free, the more strict i seem to get. makeup can be expensive. bare escentuals lipstick is $15 where i buy it from sephora.com. i'm not sure if...
  8. TIffany- thanks for info. i haven't ever bought it myself, but it was on my palm list. it just says trader joe's (w. coast) ckn broth-canned. i do struggle w/ trader joes a bit b/c they say they can't account for cross-contamination at all...

  10. unfortunately, even meats can have gluten in them. you need to ck if there are added spices, or if the meat is frozen or cooked in broth etc. i have cked a couple of times on tyson's fresh/frozen ck and it is okay. ie: i had to ck b/c the package said the ckn was frozen in broth. they verified the broth was gluten-free. to answer your question, call...

  25. I first would be curious to ask this individual if they had a definite or confirmed celiac diagnosis and not a simple gluten intolerance or allergy. Then I would want to know how they were "cured." Most of the peeps around here would agree there is currently no 'cure' for Celiac. The supposed cures I have seen advertised are things like liver cleanses...
