  7. Terri- True that! And I have to say, if by some chance, this restaurant was "forced" to offer substitutions and cater to those with allergies/celiac--I would be afraid there would be some bitterness there, and and something else might end up in my potato--know what I'm saying ??

  11. Life insurance shouldn't be a problem. I have a policy. And remember, if you have had continual coverage and are not applying for a self-employed insurance policy, you shouldn't be denied the insurance. You can also do one of the mail-in labs for a test also. Does anyone actually know how much insurance companies check up on things like blood tests...

    I choose a GI doc, who did my endoscopy. However, most docs can give you the blood test. My hematologist did that. If those tests come out negative, and you are confident of a gluten intolerance, then I'd try an intolerance food test, which you can do via mail as well...
  13. Are you just using white rice flour for the 5 c of rice flour? I think I would split it up between white, brown and sweet rice flour for sure. Sweet rice flour is the same thing as glutinous rice flour or sweet rice powder. It helps bind your baked goods together. I also like to add almond or nut meal to my baking, it helps with a moist, fluffly texture...

Open Original Shared Link ps--it is okay to take children's vitamins... but if you are an adult with celiac, i would recommend an adult vitamin--simply b/c you may not be absorbing as much of your vitamin as a celiac-free individual, and a children's vitamin...

However, it was a place I wanted to go back too, and it was a chain, so they benefit by responding to the 'power of the people.'   22. I echo Jnkmnky--get your results and go see another doc. Many are poorly educated on celiac and still think you can only have it if you have diarrhea and are losing weight.
