No I didn't double the recipe. 4 cups is almost twice the amount of the regular flour called for. The first time I put 3 cups in. Baked a couple of cookies...they spread too thin. So I added the fourth cup and they were perfect. I think almond flour must be lighter so it takes more. They sure were good y'all! -

Thank you for saying I was helpful! That makes me feel good. Yes, I wouldn't try to diet at all right now. Just be sure you eat a lot of protein as that helps cells repair themselves quickly. I didn't start dropping weight right away, but once my body realized there would be food coming in on a regular basis, I just started melting away. I was so relieved... -

Since you are already having some success with being gluten free, I would not worry about testing. You would have to be eating gluten pretty heavily to test positive and still you might test negative even if you have Celiac. I would never trust a breakfast place. The thing is, they use the same spatula to flip pancakes, scramble eggs, fry potatoes, etc. In a kitchen where they actually use flour it is in the air and settles on everything including your potatoes and eggs. Yes it can happen that fast! I don't eat anything where they actually make pancakes as there is flour in the air and it lands on everything. The grill is used for pancakes, eggs, potato's and it is all potentially glutened before it reaches your plate. It can be mistaken for a fungal infection. But that is due to misdiagnosis rather than fungus being the cause. Mine was treated for fungus many times with no change. My son had it too and was treated with antifungals...but that was because of mis-diagnoses. We both have DH and avoiding gluten is the only thing that will calm the inflammation. -

I agree. Rotisserie chicken was my "go to" food the first few weeks I was recovering but I realized after a couple of chickens...it must not be safe. I just forget about fast food. I took the antidepressants to treat migaine headaches too. It never worked. I didn't have to challenge gluten because gluten "challenged" me. I knew I got sick from cross contamination and every time I accidentally ate something with gluten (think of newbie mistakes) I got very ill. If you are like me one bite of anything with wheat will do it. Let us know how it goes. -

My posts were written around midnight. The answering service was paging the Dr. directly for 4 hours. They have 24 hour on call for such emergencies. I'm not sure why the time on my posts made it appear I had called the Dr. "only an hour ago"...when all your posts were written in the morning? Can you take Ibuprofen or Tylenol or Excedrin? Of course read the label, but I know some are gluten free. I think there are people here who take them when they have been glutened. I take a prescription for migraine headaches. I hope you feel better soon. Headaches are awful! -

One other thing that can cause the symptoms you describe is salicylic acid if you are sensitive to it. Spaciness, an exaggerated startle response, a persisitent dry cough, fatigue, loss of appetite, weight gain, and migraine headaches are symptoms of chronic salicylic acid poisoning.
