  1. No I didn't double the recipe. 4 cups is almost twice the amount of the regular flour called for. The first time I put 3 cups in. Baked a couple of cookies...they spread too thin. So I added the fourth cup and they were perfect. I think almond flour must be lighter so it takes more. They sure were good y'all!
  2. Thank you for saying I was helpful! That makes me feel good. Yes, I wouldn't try to diet at all right now. Just be sure you eat a lot of protein as that helps cells repair themselves quickly. I didn't start dropping weight right away, but once my body realized there would be food coming in on a regular basis, I just started melting away. I was so relieved...
  3. Annato is something those who are sensitive to salicylates react to. Are you sensitive to or allergic to aspirin, or salicylic acid? Annato is also in many yellow colored foods. Like yellow cheeses. Do you react to them? I reacted when I ate the Ore Ida Tots, but I quickly discovered it was the soy oil for me. So soy went out of my diet. I reacted to...
  4. Since you are already having some success with being gluten free, I would not worry about testing. You would have to be eating gluten pretty heavily to test positive and still you might test negative even if you have Celiac. It seems to me that you may not want to pay that price while you are in grad school. The fact that you are also realizing cross...
  5. I was also accused of being alcoholic due to temors and shaking. I don't drink at all. When I said that, they thought I was lying and I got the lecture anyway. It has all subsided on going gluten free but it took a while.
  6. I finally made homemade Chocolate Chip Cookies. I have been reading a lot about the flours and other people's attempts at baking for 5 months but have not attempted to bake my own cookies. Until today. They came out great. I mean GREAT! I used the Toll House Recipe on the back of the chocolate chips. I used 4 cups of almond flour...
  7. I would never trust a breakfast place. The thing is, they use the same spatula to flip pancakes, scramble eggs, fry potatoes, etc. In a kitchen where they actually use flour it is in the air and settles on everything including your potatoes and eggs. It just isn't safe for me to eat breakfast out. I even hesitate to drink the coffee unless it is in one...
  8. Yes it can happen that fast! I don't eat anything where they actually make pancakes as there is flour in the air and it lands on everything. The grill is used for pancakes, eggs, potato's and it is all potentially glutened before it reaches your plate. They usually use the same spatula and go from one food to the next flipping, pressing, checking, serving...
  9. Mushroom: You are brilliant and you have such a way with words. I have nothing to add but would second what Mushroom said!
  10. It can be mistaken for a fungal infection. But that is due to misdiagnosis rather than fungus being the cause. Mine was treated for fungus many times with no change. My son had it too and was treated with antifungals...but that was because of mis-diagnoses. We both have DH and avoiding gluten is the only thing that will calm the inflammation.
  11. I agree. Rotisserie chicken was my "go to" food the first few weeks I was recovering but I realized after a couple of chickens...it must not be safe. I just forget about fast food. A raw chicken goes in the oven and is done in an hour. That is our fast food now. Another thing might be if they use vegetable oil on the chicken...it is usually...
  12. I took the antidepressants to treat migaine headaches too. It never worked. Instead, whenever I complained of chronic diarrhea, they said that was due to the anti-depressants and nothing to worry about. Turns out years later I have Celiac disease. I don't think there is anything wrong with trying out your gluten hypothesis. It isn't going against medical...
  13. I'm depressed about the fact that you are 9 months into this and still having lesions, sores, and burning at night. My DH sores are on my face. They scar. It is distressing because I keep thinking if I am really good at avoiding gluten they will go away. But there you are 9 months in and still dealing with this. I just had to stop taking Dapsone. I...
  14. Shauna gave you the perfect answer. Your body is trying to purge itself of poison. I get it too. Every time I try to eat out safely. Unless it is BJ's pizza or Outback, I don't eat anywhere else. It's really sad for me cause I used to love to eat out and socialize. Now I avoid it as much as possible. It is impossible for me to make sure...
  15. I didn't have to challenge gluten because gluten "challenged" me. I knew I got sick from cross contamination and every time I accidentally ate something with gluten (think of newbie mistakes) I got very ill. If you are like me one bite of anything with wheat will do it. Let us know how it goes.
  16. Nuts Online sells all the nut butters too! Can you tell I like Nuts Online??? I love everything I got and am ordering more. Glad you found them too Irish!
  17. My posts were written around midnight. The answering service was paging the Dr. directly for 4 hours. They have 24 hour on call for such emergencies. I'm not sure why the time on my posts made it appear I had called the Dr. "only an hour ago"...when all your posts were written in the morning? Anyway, it is over and I think that is the end of my story...
  18. Thanks for all your replies. Ravenwood, you are right and I will report it. Not sure why you thought it had only been an hour Richard. The posts were written late last night. The answering service paged my Dr. for 4 hours and they called me every hour to see if she called me back. They were very helpful but she never did call. The pharmacist told...
  19. Still no call from the Dr. The pharmacist said take Benadryl. So far I have swelling in my feet and legs and red spots all over arms and legs. I should have suspected Dapsone immediately when I broke out in hives yesterday. I thought it was another food reaction. I knew I was to be on the lookout for a Dapsone reaction, but I still blamed food...
  20. I have been taking Dapsone 50 mg for about two weeks. Yesterday I got a hive-like reaction on my hands and arms. This morning my DH sores started hurting and swelling. I thought I must have gotten gluten. Later in the day I noticed my legs are just completely covered with pin point fire red raised dots. On my hips I have hive-like welts. I had...
  21. Outstanding reply gluten-free Bro!
  22. Can you take Ibuprofen or Tylenol or Excedrin? Of course read the label, but I know some are gluten free. I think there are people here who take them when they have been glutened. I take a prescription for migraine headaches. I hope you feel better soon. Headaches are awful!
  23. I'm glad you typed so much! That was excellent advice. I'm in my 5th month but enjoyed your information and learned a few things too! I have a 16 yr old recently gluten free and for us...it was extremely important to find a few substitutions right away for our favorite things. Udi's bread is the only one I have ever tried and we love it. Makes great...
  24. One other thing that can cause the symptoms you describe is salicylic acid if you are sensitive to it. Spaciness, an exaggerated startle response, a persisitent dry cough, fatigue, loss of appetite, weight gain, and migraine headaches are symptoms of chronic salicylic acid poisoning. Before I knew I had Celiac, I took a lot of Ibuprofen for the migraine...
  25. If you can eat nuts, they are a good source of protein. Hemp I have not tried yet. But I just placed a huge order through NutsOnline and got some wonderful good quality nuts. They have Certified Gluten Free products too which is really great! I need more protein too and can't have eggs so decided it would be nuts for breakfast! I notice they...
