  2. Millet works really well, too. If you make a roux first, just add millet flour like you would regular. We used it for Thanksgiving this year and no one knew the difference.

  5. Liquid brewer's yeast can have gluten in it, as it's often started with beer as the nutrient, but that's only an issue if you want to make your own beer, wine or cider. Regular baking yeast (and, I believe, dry brewing yeast) is gluten-free.
  6. Some kinds of wasabi paste have wheat flour; others don't. I don't know about that particular brand, but Whole Foods carries a type that doesn't have gluten - don't remember the name so check the labels. I've mixed up my own wasabi paste before and brought it with me, along with my gluten-free soy sauce.

  9. If you ever go to China, it's not uncommon to have a whole duck or chicken complete with heads, feet, etc. plopped on the table in front if you. I was told that restaurants do that so they can prove you're really getting what you ordered. Yum!

The only reason to try for an 'official' diagnosis is if you'd get some benefit from it (which you won't - it's not like there's drugs for celiacs!) or if you think you'll cheat without it.   20. Agreed. What always surprises me with articles against trying the gluten free diet if you're not diagnosed w/celiac is that NO ONE ever addresses the expense of being 'officially' diagnosed.   23. Depends on the symptoms... I get terrible migraines w/nausea and appetite loss and irritability/emotional craziness (go figure). If I lived in a med marijuana state, I would definitely go that route - but I don't, so a dark room and a cool compress are the best I can do. And I don't think MJ would help w/diarrhea, gas, bloating - might work on stomach pain...
