  1. I'm going to make my stuffing separate this year - we always make ours using cubed bread instead of the hard crouton type stuffing mixes. I haven't decided what bread I want to use yet. I will have to do a trial run this month just to make sure it works well. I made stuffing in the crock pot a couple years ago and it turned out SO well. My family will...
  2. I did heavy metal testing through hair analysis. At the time my levels were good (very high in copper however), but I decided to have my metal fillings changed anyway since one had cracked my tooth. I had a total of 6 replaced and had had them since I was about 14 years old (35 now). So I don't think that metal fillings alone will change mercury levels...
  3. Tonight I'm going with cubed steak and vegetable casserole - comfort food night. This weekend I'm going to attempt to make a broccoli cheese soup - I used to make it with Velveeta, but my system doesn't like it anymore (I swear it just sees the words Processed Cheese Product and revolts). I have a great recipe for Cream of Asparagus soup so I think I'll...
  4. I think it all depends on how things are prepared and what type of soy sauce is used. In the US, we are so used to over processed non-traditional Asian food that I'm not sure it bears any resemblance to the real stuff. From what I know (and I could be wrong because I've never actually traveled overseas), but most of the time they use cornstarch instead...
  5. Who knew that a simple post about tomato paste could crack me up on a VERY LONG Friday afternoon? Brain Frog...hilarious! What's sad/funny, is that I didn't even catch the typo until someone else pointed it out. Maybe I have brain toad instead. When I was younger, I used to eat tomato paste straight out the can - yep, I'm weird. My mom would leave...
  6. Thank you for that - I wasn't aware. My "diagnosis" came from the NP at my GYN office - she was a self-proclaimed IC "expert" and never preformed any of those tests. Just gave me the Rx and the website and sent me on my way...reading all of the information on the website was what convinced me that she was wrong. I have such sympathy for anyone that truly...
  7. I was misdiagnosed with Interstitial Cystitis as well. It's what started this whole mess...thought I had a UTI - was put on two rounds of strong antibiotics which of course only made everything worse (Dr. said "I don't see evidence of an infection, but here take these...really???). After that was when I got the diagnosis. Read up about it and certain things...
  8. I haven't tried the crackers as a topping/coating yet (they are pretty good to snack on with spreadable cheese though) - however I do use gluten-free cornflakes mixed with melted butter for things like potato casserole and vegetable casserole. I also use them crushed to cover chicken/pork chops by adding some seasonings and such. Once I found them and ...
  9. Finally found the Plain Rudi's gluten-free tortillas at my local Whole Foods - they are pretty good! I used to have a lot of recipes that used tortillas for burrito type wraps and I simply don't care very much for corn tortillas (unless I'm making enchiladas of course...but the flavor is masked by large amounts of sauce, cheese and sour cream) Anyway...
  10. What exactly is a "leaky gut" test? I'm almost positive I have it, but didn't know there was a test. Something else is getting me now and I would love to know what it is.
  11. I used to get something on my elbows and shoulders that looked exactly like that. I had two biopsies (one of the lesion and one next to it), both came back negative for DH - however I had already been gluten-free for a couple weeks at that time. All I know is that I've been gluten-free for almost two years and I haven't had it come back. I still have skin...
  12. I too am self diagnosed. I've been gluten-free for over 1.5 years and it still annoys me to have to explain sometimes..."oh you can just have one" Um, no I can't. I find that my answer depends on the person I'm with - if I'm with family and they ask, I can be as vulgar and honest as I like which usually shuts it down pretty quickly (go into detail about...
  13. If one more doctor tells me that my skin issues can't POSSIBLY be caused by diet, I'll scream. Food allergies/intolerances cause depression, anxiety, arthritis? You don't say! (insert sarcasm here) I really wish the medical community would catch up - my friends are getting tired of complaining of their symptoms and hearing me say things like "ya know...
  14. Red wine and good cheese got me through my last breakup...two things my body seems to be rejecting now, but that's besides the point. I cheated once (ONCE) after my breakup and ate regular pizza - I gotta tell you, it tasted good, but not THAT good. Made me ten times more depressed and I couldn't get out of bed for a day (and I never sleep like that). ...
  15. I have been gluten-free for over 1.5 years now (self diagnosed - blood work was negative) - adjusting nicely to the diet. My health was great for awhile, but then I started having symptoms again - mainly skin problems, depression, anxiety. If I try to stay strict on a no sugar/no carb diet, I feel ok. But today, I had half a sandwich (Udi's gluten-free...
  16. I agree with you - I hate the rice pasta. But I do love the quinoa pasta - I would probably still eat it if I could have the regular kind!
  17. Peter, I'm with you on the migraines! Only time I get them now is if I get accidentally glutened. Let's see, I'm healthier than I've ever been, I'm finally at a mostly normal weight and able to stay at it without much effort (I finally self diagnosed when I was losing weight very quickly and couldn't afford to lose another pound), I get compliments on my...
  18. Early last year when I first started my gluten-free journey, I went to eat at a restaurant - asked the hostess for their gluten-free menu. They had the typical "Allergen" menu, but that works just fine. Our server comes to the table (a very perky 19 year old looking young woman named Amber) to take our order. As I ordered, I must have pointed to what I...
  19. Totally agree about the dependence on prescriptions in this country. Yes I get really irritated that I too see so many people that seemingly can eat whatever they want...but these are the same people that think gas/bloating/belching/farting/bathroom issues are just a normal part of life. When I'm obeying my diet and not eating anything I shouldn't, I don...
  20. I was diagnosed with IC a few years ago, but I don't think it was accurate. After two rounds of antibiotics, everything got WAY worse. I have since noticed that my problem isn't simply gluten, it's all carbs/sugar...my symptoms are directly related to candida. If I eat a lot of carbs and/or sugar (even if completely gluten-free), I get the dreaded bladder...
  21. I tried it and it didn't do much for me. I think it held some symptoms at bay, but didn't work as advertised. They say you can use it and not have to do the diet - simply cut back on the sugar/carb stuff. Didn't work for me. Only thing that works for me is to cut out all carbs (starchy carbs, not veggie carbs), all sugar, and all alcohol. Needless to...
  22. I used to have dreams about consuming gluten foods all the time after I first went gluten-free...it passes over time. I also noticed my tolerance to alcohol is pathetic now. Certain brands of wine will do me in big time, while others are fine - very weird. I will never again drink Barefoot wine - also it appears I am now more sensitive to tannins in the...
  23. I haven't used it for pancakes or biscuits...I use it to make sausage balls and spinach balls - just bought some today actually. The spinach ones are SO good!! I serve them at potlucks and no one ever knows they are gluten-free. You can find recipes on the Betty Crocker website
  24. Treatment for candida is to follow the candida diet (you can look that up) - it's not fun and I'm not as strict as I should be about it...(salad with no dressing...really?). Also add in some probiotics and anti-fungals. I'm taking grapefruit seed extract right now, but I do a rotation of other anti-fungals as well to keep my system from resisting. My first...
  25. Ang - I too came across my gluten issue as the result of bladder problems. The whole thing started with what I thought was a bladder infection (used to get them all the time in college). After two rounds of antibiotics with symptoms getting worse instead of better, I was at my wits end...literally. I poured thousands of dollars into the naturopathic doctor...
