  1. Day after St. Patrick's Day always means cabbage and noodles for dinner with whatever corned beef is left in it. I love that my mom makes extra so I can bring it home and make our own since she uses egg noodles.
  2. Tonight we went to my mom's house for corned beef and cabbage plus potatoes and carrots. My mom also made a carrot cake from the Namaste spice cake mix, topped with a homemade cream cheese frosting and it was delicious
  3. My 5 year old loves to cook with me and she likes to look in my Gluten Free Almond Flour Cookbook, but she prefers to take her old kids cookbooks and see what she has to change to make the recipes gluten free.
  4. Tonight I am making roasted veggies (potatoes, broccoli, carrots and cauliflower) with either steak or chicken.
  5. Happy Birthday! Have a wonderful day and a yummy birthday dinner.
  6. This morning was cheese grits.
  7. The recipe looked great minus the not washing it first. It actually gave me the idea to make roasted broccoli for dinner since my husband and girls have never had it, well it was a hit. The two year old asked for broccoli for breakfast this morning
  8. This was a section in my Nutrition and Wellness consultant class and the information for after you add the ingredients in is not there because not everyone uses the same thing. For example, I might use olive oil, some may use canola oil or grapeseed oil, etc. and they all have different nutrition facts. And for cheese there are so many different varieties...
  9. Tonight is simple pan fried beef, baked potatoes and roasted broccoli. Hope that the husband and kids like the roasted broccoli since none of them have ever had it.
  10. That is wonderful news
  11. Oh forgot about my favorite one for my oldest daughter...whole milk caused her alot of phlegm and she would gag, but it took us awhile to figure that out. We took her to a doctor who asked if we had pets and we told him that we had a dog. He told us she was allergic to the dog and to get rid of it so I said that it was my moms dog and we lived with her so...
  12. Some of these are horrible, it's ridiculous. I think most of my bad doctor stories relate to my youngest daughter, starting when I was pregnant with her. With both my girls I had amniotic leakage and preterm labor (with the first one it was at 27 weeks so they monitored and put me on bed rest) with my youngest it was at 21 weeks the doctor sent me back...
  13. This morning my husband and I made almond flour waffles and turkey bacon this morning.
  14. We made something like this for my daughter's birthday dinner last year since she wanted pepperoni pizza and we hadn't found a good pizza crust recipe with no eggs, it turned out pretty tasty. And thank you for posting it since she asked for pizza to be served at her birthday party this summer and I was dreading making gluten free crusts for 40 people.
  15. Steak and cheesy broccoli rice. I have missed cheesy broccoli rice, we used to eat it about once a week and we haven't had it in almost a year now.
  16. Berry and Banana Shortcakes with chocolate shavings:) I made almond flour biscuits and topped them with blueberries, strawberries and banana. Then I put on homemade whipped cream which I didn't add sugar too and then shaved 90% dark chocolate over top. It was delicious and I think if I made a sweeter whipped cream it would make a yummy dessert.
  17. We are having chicken stir fry over white rice tonight.
  18. Tonight we are going to my moms to celebrate my sisters birthday and she is making meatballs (made with rice chex) and mashed potatoes with steamed green beans. I am bringing thin rice noodles, spinach, tomatoes and chicken with a bit of Italian blend cheese. For dessert I am bringing Yoplait Splitz (strawberry sundae and strawberry banana split flavors)...
  19. In the scheme of things that isn't that long and it very well could have been the xanthan gum, too much of it bothers some people.
  20. None of the four of my family have ever had a reaction to the Enjoy Life products, they are actually one of the only processed foods that we will buy since they are free of the top 8 allergens plus others that we can't have plus they don't make anything with gluten in their facilities. If the reaction was to them and not something that you had earlier...
  21. Until I read the recipe (which sounds interesting, if only we could have eggs) I was thinking that it was actual cupcakes with salami in them. I used to work with a lady who made pancakes with cheddar cheese and bologna and they were not the best tasting things.
  22. We had crumbly bacon cheeseburgers tonight...ground beef and turkey bacon with cheddar cheese and ketchup mixed in served with homemade oven fries.
  23. I am so sorry (((hugs))) I know that it is very difficult, but you just start by taking it one day at a time and you will always have that bond to your unborn baby, but in time it will be not as difficult to think of the baby. I wish you ease of the pain this has caused and best of luck to you.
  24. Glad that your reaction didn't last long. And those Mi-del cookies are tricky ones sometimes...a store down the road from us has the wheat filled ginger ones right in between the packages of gluten free ones. My husband said something to the manager but they didn't change it.
