  1. The choice is up to you. As someone who also has skin problems as my main symptom, I wonder sometimes about my gut. Fortunately (?) for me, my Mom had celiac so I am fairly certain that I too have celiac, not just gluten sensitivity. It would be nice to have been tested, not so much for the diagnosis, but so I could watch my progress as I heal. I read here...
  2. You might want to wait a while on that. As I said, it took 14 months before I could tolerate even corn starch. I'm pretty sure my gut has healed significantly, but even now I know I have more healing to do. My health and well-being have improved tremendously, but I'm still not quite there. My energy level is up, but not all the way up, and I am still troubled...
  3. A lot of us have had problems with corn. I think (in my case, anyway) that until the gut heals, the body mistakes the corn protein for gluten. For me it took 14 months before I could tolerate corn at all. At this point I can tolerate corn starch, but not corn meal. I haven't tried whole corn, corn syrup, or corn oil, and frankly, I doubt if I ever will. None...
  4. The rash could be excema or psoriasis and I am convinced that they are both caused by food. My psoriasis has cleared up completely after 14 months gluten-free. I'm sure it would have gone away sooner but I developed sensitivities to other foods as well and one of them was corn which is almost impossible to avoid completely. But now that my gut has finally...
  5. I'm STILL discovering symptoms I had but never realized they even WERE symptoms. Psoriasis Insomnia Brainfog Minor digestive issues Edema in feet and ankles Heart palpatations Snoring Asthma Hair falling out And probably some others I can't think of right now. With the exception of the asthma, every one of these symptoms is now GONE. But I included...
  6. I never had kids of my own, but I did have a great Mom and Dad. When I was born I was very sick. I almost died at birth and it was touch and go for the first three years. My wonderful parents did everything they could to keep me alive and grow healthy. My Dad mentioned one time that when I was an infant he would always sleep with his hands behind his head...
  7. For bread I like Udi's multigrain. Canyon Bake House San Juan Seven Grain is really really good too. It is more like those multi-grain breads in the supermarket with little nutty bits in it. I don't want to put a damper on anything for you but I will tell you about my experience. When I first realized I had a problem with gluten I went out and bought...
  8. According to this, folate deficiency CAN cause neurological symptoms: Open Original Shared Link B12 deficiency is another possible culprit. Maybe you can get your doctor to test for ALL vitamin and mineral deficiencies. There is a celiac symptom called gluten ataxia that mimics MS. It too might be caused by malabsorbtion of vitamins and minerals. ...
  9. Thanks everyone for the congrats. It is amazing what an emotional boost it has given me. Yeah, it's great to expand my diet, but the best part is the way I feel mentally. The big old ugly dark cloud has lifted and the sun is shining again. Every morning when I wake up I am doing the happy dance, just at the thought of being HEALTHY!!
  10. Open Original Shared Link After you have checked out the lists of foods, go to their home page and check other sections of their site. VERY informative.
  11. Folate, zinc, and copper deficiencies can cause this. There are a LOT of things that can cause it actually, but since celiac can cause deficiencies, especially folate deficiency, I would think that might be the reason. See if your doctor agrees with that and maybe he can test you again after you have supplemented for a while? In the meantime, try not...
  12. Paprika is very high in salicylates. Peppers are too, but it might just be that you reached the "tipping point" with sals. Salicylates build up in your system and everyone has a different level or "load" that they can handle. You could try an experiment: after eating paprika and getting sick from it, try to eat some peppers or other high sals food to see...
  13. I have been successful adding corn starch back to my diet, but when I bought some Canyon Bake House bread I didn't do so well. It has corn MEAL as well as corn starch. I won't be trying whole corn, nor corn oil, nor corn syrup. I don't want to rock the boat. It's strange that all of us seem to tolerate different parts of the corn. I would suspect the...
  14. There are selfish, blind people everywhere. I have not run into any problems with my diet and friends, but I have run into people who refuse to stop pouring a gallon of perfume on their bodies, even after witnessing the violent asthma attacks perfume gives me. Two of these people were co-workers at two different jobs I had to quit because after being asked...
  15. I wouldn't take the chance if I were you. For most of us, CC gives us a few days of misery. But because you get anaphylactic reactions, the next CC incident might just kill you. My Dad had asthma, and one night even the epipen didn't work. He died. PLEASE, don't take any chances!!
  16. Now THIS is funny! I, the world's worst cook, am responding to a post about cooking! I think your best bet would be to cut them into strips/chunks first and then fry them. You could either deep fry them or use a large skillet with enough oil to cover them. OR, if you can find those Sesmark Rice Thins, even though they are a cracker, I think they...
  17. Well, as most of you know I have gotten corn back after not being able to tolerate it for over a year. I lost potatoes back then too, and recently added them back to my diet with no problems. So yesterday I went to the healthfood store and bought a bag of Kettle Brand chips. I used to LOVE these. They were my favorite chips of all time. But you know what...
  18. I would think that rice vinnegar would work as well, and rice vinegar is YUMMY!
  19. I have also heard the apple cider vinnegar helps. The theory is that your body makes too much acid and the vinnegar shuts that off. I listen to "The People's Pharmacy" on NPR and I have heard it there many times. People swear by it.
  20. OR...if your husband gets sick in the next day or two, you'll know he caught the "bug" from you. You say this is the worst and quickest reaction you've ever had to gluten. Maybe it's just a coincidence that the "bug" (if that's what it is) hit you while you were eating?
  21. If you can find Sesemark Rice Thins, oh my, are they GOOD! They are gluten-free and so good that I used to eat them before I had to go gluten-free. My neighbor used to get them and every time I'd go to her house I would eat almost the whole package! I know they're not cheese crackers, but you could make them into cheese crackers by putting a thin slice of...
  22. So Mitzi, what are your hobbies? For me it's guitar and I can "hide" behind my guitar in social situations where I'm not comfortable. How about you? Do you knit or crochet? Sewing, quilting? Do you paint or do ceramics? There must be SOMETHING you love to do that you could bring with you to these events. If you bring something with you that you can either...
  23. I've got a picnic coming up soon, plus a wedding. I guess I'm different from most people because I could care less about the food at either event. I'll be bringing my own food to both and I will enjoy the company of my friends. At the wedding, I will be the, well, I can't call it maid of honor because I am no longer a maiden. I can't call it matron of honor...
  24. I'm not a doctor so all I can do is repeat my own experiences. I have found that there are certain foods that I can't tolerate, and they have nothing to do with gluten or grains at all. There seems to be no reason in the world that I can't tolerate leafy greens for example, but they go through me like water. And those wonderful Kettle Brand chips - I know...
  25. It isn't in the tea, it is in the paper the bag is made of. There is corn in a lot of paper products - even some paper towels, paper plates, and TP! There are several corn allergy forums where you can find out some of the other places corn hides.
