The genetic tests can cause more confusion. I had negative Celiac blood tests, but a very high positive Dx after having an endoscope. Going gluten-free hasn't fixed all of my issues, and now I'm getting reactions from more foods that never bothered me before. Don't cheat Deltron! A pizza place is a danger zone. There's flour that goes airborn and settles on everything. Your friends won't take your diet seriously if it appears that you can can go off and on it? PS..I kind of like a guy with long arms. You'd be handy for reaching things on the top shelf of the cabinet.

It can all be a bit overwhelming at first can't it? If we just went gluten-free and felt fine we wouldn't have to use ourselves as a science experiment! I know you've asked for bread recipes..but most gluten-free bread is more like a batter and don't need the hook. I understand your wanting to play with all the gadgets on your new Kitchenaid. They're fun! Why not use that dough hook to mix up a meatloaf..or meatballs? You can use gluten-free bread crumbs or smashed up Rice Chex for the filler. -

I've heard of false negatives for Celiac (I had negative blood work) but not false positives. Your symptoms sure could be Celiac..or at least gluten intolerance? Since getting another scope is out of the question for now, and your GI seems kind of clueless..why not go gluten-free and see how you feel? You must go completely gluten-free..not gluten-free... -

If you are suspicious of soy, be careful. It's in even more things than gluten! I got to where I am reacting to soy more and more. I found it used in supplements..especially as the source for vitamin E. Look out for tocopherol...can be soy or wheat derived. I've been getting nauseated after taking my calcium supplement. Low B1(thiamin) can cause those symptoms, along with folic acid deficiency, or iron deficiency. Have you had any blood panels run recently? It's fine to supplement the B vitamins and folic acid..(and maybe a good idea because gluten-free foods aren't fortified with vitamins like gluten foods), but you shouldn't supplement iron unless you know you're anemic... -

When I saw the report from my first scope I was surprised to see NSAID use as a possible cause for damage. I don't use them. That made look at foods with a high salicylic acid content. Since I react so much stronger to soy than gluten , and all of the blood tests are negative for Celiac, I was wondering if soy was the problem in the first place..and I started reacting to gluten because of a damaged intestine> I know it's usually the other way around. I've had 2 minor surgeries since being DXed 6 months ago. I didn't have any issues with the disolving stitches..or the ones that had to removed. Healing can be greatly affected by your vitamin/mineral levels. Being slow to heal would suggest you may need zinc? -
