ARCHIVED Ugh. Seriously?
pricklypear1971 replied to pricklypear1971's topic in Coping with Celiac Disease
I don't have a problem with dairy (except iodine). I used half butter, half shortening. I think it's the concentration of fats and sugars - and that the cake uses a ton of white sugar and powdered sugar compared to mostly brown Turbinado in the cookies. Probably isy liver/gallbladder. Oh well, who needs cake, right? -

ARCHIVED Ugh. Seriously?
pricklypear1971 replied to pricklypear1971's topic in Coping with Celiac Disease
Lol. Just found that online. Interestingly, my doc said my bloodwork shows my liver is struggling a bit. Not suggestive of disease but consistent with Celiac stress and the corticosteroids i was on and she wants to retest in 6months. I've never had obvious gallstones or problems but it makes sense. Cake makes me feel gross. And yes, gassy. I'm rather... -
ARCHIVED Trans-Derma Contamination

Very possible. And cats have very rough tongues. Painfully so. Constant licking alone could irritate a delicate spot. -
ARCHIVED Meh, I Think I React To Chex :-(
pricklypear1971 replied to anabananakins's topic in Coping with Celiac Disease
Probably so. I forgot about that. I had a horrible reaction to Riceworks chips - supposedly gluten-free but packed full of every nasty flavor enhancer, color, etc. known. -
ARCHIVED Ugh. Seriously?
pricklypear1971 replied to pricklypear1971's topic in Coping with Celiac Disease
I eat corn without problem, eggs without problem, and have been using xanthan gum (Bob's Red Mill) without problem. Both mixes had everything in them except liquids. I used same C&H sugar in both. BRM xg in the cookies. And in my biscuits and pancakes. It's just WEIRD. -

I have nothing helpful, bit did think of you this morning when I used xg. The bag was sticky and I suddenly had a vision of dropping it on my floor. Ick. -

Ya know, I never have been a cereal person til gluten-free. Then i picked up Rice Chex. I never read the label til I dropped milk to reduce iodone - and discovered they have dye in them. I dont do well on dyes, never have. So I won't be buying more. -
Ok, my Betty Crocker cake was a bust for several reasons - all fixable but that's not it. I ate a few pieces to try it...and now I feel gross. It's cakey stuff. I don't think the cookies did it, but the cakey stuff does. I feel gross. Chocolate chips, no problem. Ice cream, no problem. Junior Mints, no problem. Cake- PROBLEM. Those cakes and cookies...

ARCHIVED What Food Do You Miss Most And What Has Taken It's Place?
pricklypear1971 replied to mommyto2kids's topic in Gluten-Free Recipes & Cooking Tips
I miss being able to spy a good bakery and go in and just taste. I'm one of those people who go on vacation to a place where I can't speak the language and just eat whatever looks good. Obviously, that isn't happening now. I have found Talenti Gelato and it does help soothe over the lack of bakery access. I've also gotten back to cooking,... -
ARCHIVED Completely gluten-free Resturaunts?
pricklypear1971 replied to CeliacMom2008's topic in Gluten-Free Restaurants
Tucson Tamale Company. Totally gluten-free and fabulous! Also a bakery in Phoenix bit don't know the name. There's also a Mexican chain that's gluten-free except for liquids, beer, and flour tortillas. -

My son asked me "when will we be done with the gluten-free thing?", too. Yeah, it's tough. I think it would be tougher if I hadn't already weeded out a lot of crappy foods, prior. Don't get me wrong - we ate plenty of junk and probably still do. But going gluten-free is hard-core when you can't "slip" and be ok. -
I have a recipe for a carrot souffle/casserole you'd love. It has a touch of flour in it - I'm sure you could use gluten-free flour. It's great when cooked in little ramekins so the top caramelizes like creme br

Can you eat nut butters like almond, cashew, etc.? Those are great for protein and healthy fats. Also, sauces like apple, peach, pear. My new favorite pick-me-up is cashew/macadamia butter with a drizzle of honey. If you can eat potatoes make a double-stuff potato and mix in a pureed veggie and fat in there. My son loved yogurt, spinach, potato pureed...

ARCHIVED It Has To Be Celiac.
pricklypear1971 replied to Twinklestars's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Don't eat wheat. Seriously. I don't know if you're celiac (sure sounds like you have an issue with wheat) but I can tell you if you are experiencing angioedema or possible anaphylaxis you shouldn't touch it with a 10 ft. pole. Any sane doctor will tell you that. If you want celiac bloodwork yes it must be done now; however it is not the end-all. There... -
ARCHIVED What Was Your First gluten-free Week Like?
pricklypear1971 replied to futuredvm24's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The first week was just weird. I remember having raging emotions - like PMS on steroids. Week 2 the brain fog lifted and I had stamina. That's when I knew I was on to something. -
ARCHIVED Curious And Need To Sound Knowledgeable!
pricklypear1971 replied to Sam81's topic in Dermatitis Herpetiformis
Let me clarify what my derm was getting at. The blisters destroy the iga directly under it so that's why they want clear skin - so there is iga. Some DH rashes are easier to biopsy than others. I'd bet a big blister type is easy, whereas my nest of blisters wouldn't be since it fades to minuscule blisters not to clear skin. So where's the line to clear... -
ARCHIVED Gluten Free 9 Months Still Sick
pricklypear1971 replied to jesimae's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Be careful coming off prednisone. Do it slowly, it can send your adrenals in a spin. I had to watch my blood sugar VERY carefully. Eat regular meals of complex carbs. I agree, you need vitamins. Of ask about IV vitamins for a while next appt. -
ARCHIVED Wanted To Share A Photo Of What's Left On My Upper Back And Scars
pricklypear1971 replied to Flasaltwater's topic in Dermatitis Herpetiformis
I got into a few somethings including my dog's shampoo - wheat germ oil. Noticed too late. I have a few new bumps on my otherwise healing rash but they are minuscule in comparison to what they were. Another week of low iodine. Hurray for me. Ugh. I just want ice cream and cheese back. I think carageenan really tears my DH up. -
ARCHIVED Breyer's Ice Cream
pricklypear1971 replied to jebby's topic in Gluten-Free Foods, Products, Shopping & Medications
I used to eat it all the time til I found Talenti Gelato. OMG. It's labeled gluten-free. I don't think I had a problem with Breyers, just didn't want corn syrup. -

ARCHIVED I'm So Bitter And Sick Of It
pricklypear1971 replied to zus888's topic in Coping with Celiac Disease
I get ya. I was really really pissed at having Hashimotos. Dr. visits and blood draws, constant monitoring, people saying it never gets "great, just better". Oh I was pissed. At everybody. Even though knew the meds worked (to a degree) I was pissed. Then life moved on, I started to feel bad and developed this damn rash. Then I figured out it could be... -
ARCHIVED gluten-free Restaurants In Jacksonville?
pricklypear1971 replied to Ash8324's topic in Gluten-Free Restaurants
If y'all know of anything good in the St. Augustine area please post too. My parents live on the island and we go every summer. I know it's about 45 mins. away but I know lots of people go there from Jacksonville. -
Well, peoples symptoms change over time. However, i wouldn't be so convinced that rash doesn't bubble up again very soon. If you want to know if it's DH, eat 3 eggs for breakfast, go out and eat sushi, drink a ton of milk, eat potato skins and see what happens. DH flares in the presence of iodine and those are all high-iodine foods. Then, immediately...
