ARCHIVED I'm Starting A Support Group/help Group
cgilsing replied to BamBam's topic in Introduce Yourself / Share Stuff
I think it sounds like a great idea Bambam! Let us know how it goes! As your group progresses maybe you can try having potlucks together or meeting at gluten-free freindly restaurants for fun! -
ARCHIVED Do You Think That All Gluten Is Created Equal?
cgilsing replied to frenchiemama's topic in Coping with Celiac Disease
That is really interesting. I'm tempted to try that out next time I know I'm in trouble....although it scares me that the depression was worse in your case. I think I would rather endure the rash (although I only get a mild rash anyway) I have always thought that barley and rye had a stronger affect on me than wheat......I realized that I couldn't tolerate... -
ARCHIVED Emotional Reaction From Gluten? Do You Get This?
cgilsing replied to tiffjake's topic in Coping with Celiac Disease
Tiff I'm glad you are doing ok.....words can be very powerful....we are here to support each other, not to tear each other down. I know what you mean about the emotional issues. I used to be one of those people who didn't understand how a person couldn't have complete control over their emotions and words. That was until it happened to me. I went through... -
ARCHIVED Emotional Reaction From Gluten? Do You Get This?
cgilsing replied to tiffjake's topic in Coping with Celiac Disease
You know...I've always thought that home made gluten-free food tastes every bit as good as the original! Rice flour doesn't have a funny flavor, so I don't know why it would! Any time we have people over I serve everybody gluten-free food, and I've never heard anything but rave reviews! So why can't they make gluten-free packaged food that doesn't taste... -

Oh YES! And they are oh so good! We have been perfecting this recipe for a while too......Hubby agrees that they are every bit as good as the Chinese restaurant! What you need: Veitnamese rice paper Milk Eggs Rice flour Corn starch seasame oil 1 8oz pkg. of cream cheese 1 tbs of soy sauce green onions pkg REAL crab (they sell the... -
Hi Kiki! It will get better! I'm not going to lie to you and say it will get better over night but with time it will. Everyone is different and for some people it takes longer than others. It's hard when you are at the stage in the game that you are. There is a lot of stuff to look out for and a lot to learn about. This board is your best friend! There...

ARCHIVED Cna You Answer These
cgilsing replied to joemoe003's topic in Introduce Yourself / Share Stuff
1. how long have you had celiac? I'm not certain, but the earliest I remember having celiac disease symptoms was in H.S. I was probably 14 or 15. 2. At what age were you diagnosed? I was sortof diagnosed when I was 23, but I was never sent for a biopsy or a blood test....so it's not official I guess. I'm still working on that. I got... -
ARCHIVED Tater Tots
cgilsing replied to Moongirl's topic in Gluten-Free Foods, Products, Shopping & Medications
One time my husband brought home the crispy crowns (look like tater tots) on accident and they are not gluten-free! -
ARCHIVED What Is Your Favorite gluten-free Recipe?
cgilsing posted a topic in Gluten-Free Recipes & Cooking Tips
I thought it would be fun to share each other's favorite recipes, so we can try out some proven winners! Plus, I see a lot of newbies that are stumped on what they can eat.....maybe this could help them out! I'll start! I've got a couple really good ones: 1. This one is really easy and is great for a Wednesday night dinner: Oven Fried Chicken ... -
ARCHIVED Emotional Reaction From Gluten? Do You Get This?
cgilsing replied to tiffjake's topic in Coping with Celiac Disease
The rice paper is hard to find! We stock up on it when we visit my in-laws. They live in a bigger city and have a gormet shop that carries them, as well as an ethnic food store that carries them. If all else fails you might try ordering them on-line! It might be the easiest way. Plus they don't require refrigeration or anything so shipping should be... -
ARCHIVED Emotional Reaction From Gluten? Do You Get This?
cgilsing replied to tiffjake's topic in Coping with Celiac Disease
Well, we have that down pat! We take vietnamese rice paper and brush it with egg. Then we wrap up ground pork, cabbage, bean sprouts, gluten-free soy sauce, and corn starch in them. After that we dip them in a VERY thin batter made from eggs, rice flour, corn starch and milk. Then deep fry till brown...mmmmmm.....they are good. I usually make my own... -
ARCHIVED Really Thinking About Starting A gluten-free Cooking/social Club
cgilsing replied to cgilsing's topic in Coping with Celiac Disease
Well.....no health food store for about 45 miles! I really wish we did have one, that would be a GREAT place to post a flyer! I'll talk to Kroger and see what they say....I'm also trying to get ahold of the nutritionist at the hospital for her suggestions. Maybe she knows some people I'll let you know how it turns out! -
ARCHIVED Emotional Reaction From Gluten? Do You Get This?
cgilsing replied to tiffjake's topic in Coping with Celiac Disease
I just re-read what I posted to tiff earlier......I told her to step away for a while and leave it alone. I hope she knows I was talking about that particular thread and not the board in general After re-reading I see that it could have been taken that way. I didn't mean to make her think that she should leave the group or anything! -
ARCHIVED Really Thinking About Starting A gluten-free Cooking/social Club
cgilsing replied to cgilsing's topic in Coping with Celiac Disease
Well, that's the thing....I only know of one other lady in town that has celiac disease....and I only know of her through mutual aquantances. I've never met her in person! I just keep hearing "Oh you have celiac disease! You know so and so's ex-girlfriend has that too!" It's a pretty little town....no Whole Foods here! We have a Kroger and an IGA. I... -
ARCHIVED Really Thinking About Starting A gluten-free Cooking/social Club
cgilsing replied to cgilsing's topic in Coping with Celiac Disease
I'm from Central Illinois. We are about 2 hours west of Indianapolis, and about 1.5 hours east of St. Louis. There really aren't any sizable cities in the area where we can participate in their groups....soooo.....I think it would be really fun to start our own! Besides I like this idea better than a support group anyway. When I think of a support group... -
ARCHIVED Emotional Reaction From Gluten? Do You Get This?
cgilsing replied to tiffjake's topic in Coping with Celiac Disease
Yeah I know what you mean I'm starting to think that the emotional effects of gluten are as bad as the physical! I made egg rolls on Monday night...and ate left overs on Tuesday. I know the egg rolls are fine, but I used an over the counter sweet and sour sauce to dip them in. I have been fooling myself for too long now, that I'm not affected by distilled... -
ARCHIVED Really Thinking About Starting A gluten-free Cooking/social Club
cgilsing posted a topic in Coping with Celiac Disease
I've been throwing around the idea of starting a gluten-free cooking/social club in my area. I think it would be really fun to take turns making dinner at each others houses, having potlucks, maybe even asking some of the local restaurants to host us from time to time. celiac disease is trying on so many levels (especially in the beginning), but once you... -
ChelsE I'm so sorry to hear about your grandpa. I will keep him and your family in my prayers. Just remember (as everyone here knows), doctors don't know everything. I'll echo Lynn in saying that the human spirit is so much stonger than any doctor! I'm sorry you aren't feeling well either. That makes times like these so much harder. I can...

It's so funny! I've heard from a lot of people that we all have the dream/nightmare about a temporary lapse in awareness where we eat gluten! It's strange that this disease manifests itself in dreams the same way for so many people! Lately I have had some different dreams regarding celiac disease that have actually been pretty good! In both dreams I...

LOL!!! Vincent! I'm sorry I came in on this so late! Have you had a genetics test done for celiac disease? It looks good from what you have written that you may be good for gluten....I'm so sorry about the dairy though. Live it up Vincent! Go have a beer for all of us!!!

Thank you! That is much better!

I logged on yesterday and the layout of the treads had changed. It now shows the original post in full text, but the subsiquent posts are just listed on the bottom and you have to click them to read. I thought maybe Scott had changed the site layout, but when I logged on later on a different computer and it was the same as always. Does anybody know if...

ARCHIVED Ignorant Server Of The Day
cgilsing replied to floridanative's topic in Gluten-Free Restaurants
Hubby and I were at a pretty upscale restaraunt and really the whole thing turned out ok, because our server was willing to ask the chef anything we told him to ask, but the poor guy was sooooo stoned he couldn't remember more that one task at a time and that only stuck in his head for about 30 seconds I told him when I came in about celiac disease and... -
ARCHIVED What Are Foods That We Would Like?
cgilsing replied to Neshy's topic in Gluten-Free Foods, Products, Shopping & Medications
Here lately, I've been having a re-accuring dream that I'm on vacation and I stumble into some magical gluten-free world where there are gluten-free restaraunts and grocery stores. I had one dream a few weeks ago about the grocery store....and there was gluten-free pita bread, focaccia, baklava, angel food cake....and all the the other goodies. The whole... -
