Find a new doctor, have her continue eating gluten until they run the full Celiac panel (AGA IgA, AGA IgG, total Serum IgA, EMA, ttG), and send this doctor some information about the NIH Campaign to increase awareness among doctors about Celiac, because he is a classic example of why this campaign is needed.

Generally, the reason that recent Celiacs have problems with lactose is not necessarily because of leaky gut itself. If someone has temporary lactose intolerance and is a newly diagnosed Celiac, it is often because of the damage to the villi, caused by the Celiac reaction. Welcome to the board! I second the advice of stopping ANY eating out. I ONLY get glutened when eating out....so it was something that I just had to stop. Not fun, but was the only way for it to stop. Intolerances are also considered "delayed" food allergies. So while traditional allergies are referred to as IgE, delayed food allergies/intolerances are related to IgG and IgA. -

Eating gluten free, even for someone who does not have a gluten problem, is NOT unhealthy. As long as they eat a well rounded diet and are getting similar nutrients from other sources, most people will be fine. Please clarify what you are asking....I'm not quite sure how to answer it Soy in itself does not contain gluten, so soy is safe for Celiacs to consume. However, soy SAUCE can be made with gluten. So, if there is soy sauce in something, you will need to know the ingredients of that (which they should list on the label). -

Jerry, I thought you were on the gluten free diet at the moment? And you are having the Celiac bloodwork done? The two options are: positive: means you are definitely a Celiac negative: doesn't mean you are or aren't a Celiac, since gluten isn't being consumed at test time -

Yes, they can still be present elsewhere. Something like 30-40% of people with an E disorder have increased eosinophils in their blood (I can't remember the number offhand) but the rest do not. Health Valley makes a gluten free Cream of Mushroom and Cream of Chicken soup. They can be a little difficult to find for some people though. Progresso makes a "Creamy Mushroom" soup that is gluten free. I thicken it a bit on the stove with a bit of gluten free flour. -
