I noticed a big difference immediatly, but it took a few months before the more persistent symptoms went away, like the itchy rash everywhere. After the first week though, I felt fantastic, and its only gotten better since. When I accidently ingest gluten though, it does get right back to square one again pretty quick, but the symptoms usually last 3-5 days... -

Be warned though, alot of Pad Thai is not gluten free. The Thai restaurant that I frequent often that makes special dishes for me, I can't even have thier pad thai. Has something to do with the sauce. I know thai kitchen makes a gluten-free pad thai sauce, but most others have soy sauce in them. Elonwy

Yep. Crab with a "K" is totally off limits. The other things to watch for with sushi is reconstituted wasabi can have wheat added to it. (If its not fresh and comes out of a tube thats a red flag). This probably doesn't help, but with me they discovered Duodenal ulcers ( the front end) which the doctor believed were caused by overuse of Advil and Alleve to counteract the pain I was in all the time. They biospsied them to make sure, and then told me to use tylenol instead. Elonwy -

Unfortunately, with products, its alot harder to find the gluten than with food because it hides under alot of different names. It won't say "gluten" it'll be some rediculous scientific name or 15 ingredients down will be in tiny letters oat extract or something equally irritating. I had never heard of this, but I googled it and it looks awesome! I've asked my MD about it, see what she thinks. Right now I use b-12 for the brain and pepto for the tummy, but it never really works that well. It seems to be regional. Someone in Atlanta god a good response, I basically got told "don't eat here". There is flour in the cheese fondues, most of thier sauces are off-limits, and I highly recommend contacting them BEFORE you go, because the response I got led me to just go buy a fondue pot. My mom adds unflavored gelatin in addition to the xantham gum, and she makes the most "breadlike" bread I've had yet. She uses betty hagman's recipe and adds gelatin, not sure on quantities, she doesn't really measure. The gelatin helps it be more springy. Elonwy

I use phase one recipes all the time, because they are very easy to make gluten free. I do however, totally ignore the substitutions they put in.
