  1. Ahh. I'm just glad my office is directly next to the womens room and down the hall from everyone else. It's also really small, so when people come up I get up and talk to them in the hall so they can't tell I've been farting non stop for the last hour. I hate air fresheners, but I have a scented candle and a little spritz bottle of perfume that I use to clear...
  2. I noticed a big difference immediatly, but it took a few months before the more persistent symptoms went away, like the itchy rash everywhere. After the first week though, I felt fantastic, and its only gotten better since. When I accidently ingest gluten though, it does get right back to square one again pretty quick, but the symptoms usually last 3-5 days...
  3. Some people are morons, bottom line. Everyone's been pretty good about it, no-one's outright accused me of lying, and everyone has seen such a huge change in me that they know even if they don't really "get" celiac disease, whatever I'm doing is working, so cool. I had one 'friend' talk about celiac for 30 min at a dinner and make the most nonsensical comments...
  4. I bought Bette Hagman' Comfort Food book, cooked one thing and haven't touched it since. Several posts on here talk about using the South Beach Diet cookbooks to find easy entree recipes that are either already gluten free or really easily convertible, its simple to cook stuff that makes you look like a gourmet chef. I do not do the South Beach Diet, I just...
  5. Hey JUdy, I'm glad your trip was good. Sorry i missed your call, I was at work . I've been mad busy, its exhausting. When I go to a restaurant I look over the menu during drink ordering and find at least three things that look naturally gluten free, or easy to leave something off of. I've started frequenting only more upscale restaurants just because they...

    ARCHIVED Thai Food?

Be warned though, alot of Pad Thai is not gluten free. The Thai restaurant that I frequent often that makes special dishes for me, I can't even have thier pad thai. Has something to do with the sauce. I know thai kitchen makes a gluten-free pad thai sauce, but most others have soy sauce in them. Elonwy
  7. Yep. Crab with a "K" is totally off limits. The other things to watch for with sushi is reconstituted wasabi can have wheat added to it. (If its not fresh and comes out of a tube thats a red flag). Some lower end sushi chains have been known to coat their seaweed with soysauce before preparing it, which makes everything that had seaweed in it off-limits,...
  8. I didn't get the book, but I have the cards, and they are great. The waiter at Hamburger Hamlet (its like an upscale Coco's) hugged me on Sunday night because of the card. Its a great help and the only time I've been glutened in a restaurant since I got them was when the waiter ignored tha card and wouldn't read it. i have found that I do my best not to be...
  9. This probably doesn't help, but with me they discovered Duodenal ulcers ( the front end) which the doctor believed were caused by overuse of Advil and Alleve to counteract the pain I was in all the time. They biospsied them to make sure, and then told me to use tylenol instead. Elonwy
  10. Sofar as I can tell, I've only got Celiac. I might have a problem with nightshades, but its been kinda hard to pin down, because my reactions aren't the same every time. Other than the Celiac though, I appear to be perfectly healthy, which is nice. I wasn't even really anemic or anything, which surprises me because of how absolutely crappy I felt. I have...
  11. So unfortunatly I got to try Nulev this weekend. I read the label four times, and about two bites in went "something is weird about this" and read the label the fifth time only to spot : Rice flour, sweet rice flour, flour. The whole time I never picked up on the third flour. You know those tests you do where you don't see certain letters when they're in...
  12. https://www.celiac.com/st_main.html?p_catid...-46106001680.ff This has ingredient lists and forbidden things, its a bunch of good info, from this site. i printed these out and walked around with them at the grocery store for the first couple months, now I don't need them because I remember, but its helpful when trying to figure something out, and somewhat...
  13. I use La Choy for table soy sauce, San-J for cooking, and KAri-out packs for my purse. I love kari out soy sauce. Elonwy
  14. Unfortunately, with products, its alot harder to find the gluten than with food because it hides under alot of different names. It won't say "gluten" it'll be some rediculous scientific name or 15 ingredients down will be in tiny letters oat extract or something equally irritating. I personally don't use the products you do, or I'd have better info, but...
  15. Here's my issue: From the CSA website: "WHEAT grass Leaves of WHEAT. There is no research available on the gluten content." From a Wheat grass website ( the only people claiming wheat grass has no gluten is people selling it) "Most wheat allergies are due to the gluten found in the wheatberry, but wheatgrass is cut before the plant forms a grain (berry...
  16. Hi Carol, welcome. The good news is, its not Lupus. I'd rather have this than Lupus any day of the week. My cousin has it, and I got this, and I feel better than I did 6 months ago, having gone on the diet, and she's still struggling. It makes mesad, but also very grateful. There is an initial "I can't eat WHAT?" and then once you start feeling better it...
  17. I had never heard of this, but I googled it and it looks awesome! I've asked my MD about it, see what she thinks. Right now I use b-12 for the brain and pepto for the tummy, but it never really works that well. If this gets rid of the bloating that would rock, because I too, seem to be getting more symptomatic as I continue to be gluten-free. I haven't had...

    ARCHIVED Melting Pot

It seems to be regional. Someone in Atlanta god a good response, I basically got told "don't eat here". There is flour in the cheese fondues, most of thier sauces are off-limits, and I highly recommend contacting them BEFORE you go, because the response I got led me to just go buy a fondue pot. I'm still a little irked at them. Contact the one you are going...
  19. My mom adds unflavored gelatin in addition to the xantham gum, and she makes the most "breadlike" bread I've had yet. She uses betty hagman's recipe and adds gelatin, not sure on quantities, she doesn't really measure. The gelatin helps it be more springy. Elonwy

    ARCHIVED Lara Bars

I have one in front of me and the first engredient is dates, and they definitely can have a prune like effect on some people. Larabar is one of those where they are pretty hardcore about cross-contamination and I don't think they make anything with gluten in their plant. THe other thing too, is it is raw food. The first time I ate raw food my body absolutely...
  21. If you are Novacaine resistant, alot of times lidocaine can help. Novacain does squat for me, but lidocaine works, and I am officially my dentists wussiest patient. Radman, when I first got diagnosed I thought I could skate on a few areas. Once I went gluten free my sensitivity sky rocketed, and my body is very clear that it doesn't want this anywhere...
  22. Its not laugh out loud funny, but it is worthy of an ironic chuckle. My boyfriend outright snickered. I think I would have laughed more if I didn't know the setup. Here's my take on it. I am ecstatic that gluten intolerance is something that could make it into a sunday comic. I think its pretty funny, and I hope it makes alot of people ask "what is gluten...
  23. I don't think anyone who's posting here is actually DOING the diet. I don't believe in diets of any kind, except for the gluten free one . I have a friend who's a south beach freak, because she's got crazy heart problems. She showed me her cookbook, and I said "wow this is easy to make these gluten free in phase 1 and 2" so I got the cookbook and I use...
  24. I use phase one recipes all the time, because they are very easy to make gluten free. I do however, totally ignore the substitutions they put in. I don't use Splenda or any other artificial sweeteners, and I very much believe in butter, Margarine is not allowed in my house. Usually even when it calls for "low fat" things I use whole versions. The food is...
  25. I'd have to agree. 1. Brain Fog - I fix complicated computer systems, and I just cannot function at work when my brain doesn't work. 2. Fatigue - I HATE that I want to take naps all the time, I was always so miss energy and Hey lets stay out til 4am. 3. Irritability - I do not like the unconscious change to "miss b" 4. Bloating. - Ewww. Elonwy
