Raleigh and Durham are both super options, with lots of young professional, and only a couple of hours from the ocean. Or, if you are looking for a small community with a good hospital try Northeast North Carolina. RN's and LPN are always in demand around here.

I did and it was wonderful. I personalized it a bit, with turmeric in the stew with smoked paprika, and some chicken bullion in the rice w/ turmeric. Neighbor friends for dinner loved it! Me too! Leftover tomorrow.

Skylark, my daughter is the chemist, not I. So... could gluten build up in our system, as a toxin and hide only to be released though specific dietary means or by other means? Marilyn, I made your Arabic Stew and it was great and I have found a wonderful new adventure.....turmeric! I put some in the stew as well, with some smoked paprika. It was wonderful and made for a great presentation too. Thank you for teaching me about this new seasoning. -
I am not the best person to reply to your questions, because I have not had an issue maintaining a reasonable weight, when healthy (post diagnosis). Through this diet, you obviously are missing some minerals/foods to maintain all your mechanics. You might want to reconsider your approach, adding some protein or carbs. Balance is the key. In a recent paper published in the journal Science, the team presented analysis indicating that 2 to 4 percent of the genes in the maize genome experienced artificial selection. Meaning? That 2-4 percent were genetically selected by the ancients for propagation of crops = artificial selection?

Aly, Being newly to the diet, that's an awesome task, in itself. I would suggest you take small steps and master the gluten free diet. It took me several months to master it. I would certainly suggest that you concentrate on your food intake for now. Master that, then move on to other things as necessary. Cigar smoke should not be on your gluten...

Since 2008 you have been gluten free. I would expect that you are in, what I call remission. For me, it would take repetitive glutenings over an unknown period of time, creating damage, for me to be symptomatic again. Or, built up to the point where I can be aware of a symptom. But, everyone is different. -

Reflux is very common with any pregnancy. Your body parts are moving around to make room for the baby. And the longer you are along the stronger your symptoms my be, with the baby growing.
