  1. Oh absolutely Lisa! With a positive blood test she should have been diagnosed as celiac in the first place (a well-informed doctor would have done that). I've seen a lot of people here who have an official diagnosis based on blood alone. So, yes. I believe that Joanne has actually full-fledged celiac. Not gluten intolerance. Nancy
  2. These are the only two KNOWN genetic markers for celiac. They know that they are others because only 85% (I think that's the right number) of biopsy-proven celiacs have DQ2 or DQ8. Any doctor who does even five minutes worth of research on celiac, or bothered to contact any of the celiac associations would have known that if you have already been diagnosed with celiac, you have celiac and will always have celiac....

  12. I think it's worth it for anyone on the gluten-free diet to go 100% at least for a trial period. That's the only way you'll ever be able to completely tell how gluten effects you.   17. We have really pretty bike trails that wind through the wetlands near our house. The other day a family was feeding bread to the ducks and it got me wondering. Does anyone know, with all the alternative flours we use, if there are potential problems with feeding ducks or geese gluten-free bread? I'm guessing bread isn't terribly healthy for them...

  19. I agree. We could use a resident guinea pig - uh, I mean food critic. My favorite soy sauce of the two I've tried (I've never tried Eden) is San-J. It's very Kikkoman-ish. Nancy
  20. 90% of what I buy is regular stuff. The specialty stuff I buy are bread, crackers, pasta and occasionally premade cookies and ice cream cones. I buy other things every once in a while, but these are our main replacement products. A few of the major food manufacturers make it a lot easier for us. Kraft, Frito Lay, McCormick and ConAgra all have policies...
  21. The krumkake iron has little grooves in it that would hold gluten. I'm not sure it would be safe to use your sister's iron. If it looks like it's okay, I'd still scrub every bit of it, inside and out, and get the design part scrubbed out with a new toothbrush. I do like that they point to celiac.com and I think that will fill people in on the reality of it, but they could at least have spent a paragraph or two hitting the high points.
