Hey Jerry - I've made some pretty good croutons out of gluten-free bread. I love croutons, so I totally get how you could fall off the wagon on those. I used to eat croutons out of the box like other people would eat crackers. Plus, they're so small and innocent looking. I haven't made them for a while, but this is basically what I do...

ARCHIVED Very Gassy
Nantzie replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
This was one of the symptoms that was so hard to deal with because you can't go anywhere (why should anyone else suffer?). I found that after several months of being gluten free, after my intestines had time to heal, it got better and I didn't get quite so gassy after a glutening. Now, after I'm glutened, if I get gassy it's not anywhere near as gross... -
ARCHIVED Candida?
Nantzie replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
YES. It totally works for candida. It's worth every last cent because you don't have to change your diet any more than you already have. I used it a 2-3 times a year (for a month each time) before finding out that gluten was most of my issue. I just thought I kept getting reoccurances of it. It would take away 80% of my issues, but the ones that... -
ARCHIVED What Is The Deal With Fibromyalgia?
Nantzie replied to floridanative's topic in Related Issues & Disorders
I was never diagnosed with anything (my family thought I was just trying to get attention and nobody would babysit my kids so I could go to the doctor), but the pain I had was very similar to people who have fibromyalgia describe. When I went gluten-free, it went away. Poof! Now I only get it when I'm glutened. Nancy -
No matter how good something tastes at the moment, the payment for it last 10,000x longer than the enjoyment you felt for the moment. You wouldn't buy something with those terms would you? It's like buying a car, driving it for a month and then paying for it for 10 years for that one-month experience. Plus, we like having you around here...

You should write a diet book! Nancy

Ugh. I hope you feel better quickly. That happened to me a few weeks ago. It really ticked me off too. We spend years basically having food poisoning every day, then when we figure it out, we still get food poisoning. I think we should be exempt. Mother nature is a real $#*&% sometimes. Nancy

ARCHIVED Mood Swings?
Nantzie replied to madlinmom's topic in Parents, Friends and Loved Ones of Celiacs
Plain chocolate is usually fine, but some things that they add to it can sneak up on you if you're not aware they have gluten. Crisp rice is one example (they add barley malt). Also, some snack sizes and holiday shapes of normally gluten-free candy bars can have gluten. Nancy -

ARCHIVED Very Interesting Article In The New Scott Free Issue
Nantzie replied to jerseygrl's topic in Coping with Celiac Disease
Yep. My husband doesn't kiss me if he's had gluten. He has to brush his teeth first. Or if several hours have gone by, it seems to be okay. Just like the rest of the celiac life, the boys who really care about her will be more than willing to do what they need to do to keep her safe and healthy. It will probably weed out a lot of jerks. ... -
My stool used to be really hard to flush - it was kind of pasty in texture and it would kind of stick to the side of the bowl as it went down. It also took a lot of times for me to wipe myself clean. (TMI...) I'm guessing it was one version of fatty stool that they talk about. It also was thin in diameter - which I was told is a sign of irritation/inflammation...

Hi Carla! Sorry 'bout that echo (echo.. echo.. echo...) Nancy -
ARCHIVED Enterolab
Nantzie replied to pnltbox27's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The genetic test will tell you if you have one celiac gene and one gluten intolerant gene, or two celiac genes, or two gluten intolerant genes. Two gluten intolerant genes aren't likely because you tested so strongly positive, but it's still possible. This is done by a cheek swab. The rest of what Enterolab does is via stool testing - You can actually... -
ARCHIVED Enterolab
Nantzie replied to pnltbox27's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Nope. Enterolab is generally used when someone has negative or inconclusive tests, but still responds to the gluten-free diet as if he has celiac. A lot of people get enterolab to make sure they're barking up the right tree and it's not "all in their head". Since you have positive tests, I would skip the Enterolab unless you want to do it out of curiousity... -
ARCHIVED How Much Is Genetic Testing And Where To Get It?
Nantzie replied to janelyb's topic in Parents, Friends and Loved Ones of Celiacs
Same here. 2 1/2 weeks. All three times I did it. It must be the standard turn-around. I'm sure it depends on how many people are being tested though. If you provided an email address, they email them to you. Nancy -

ARCHIVED Has Anyone Been To A Luau?
Nantzie replied to changes2keep's topic in Traveling with Celiac Disease
Yep. Just contact the place doing it and they will almost certainly take care of you. If they can't guarantee the safety of the luau food, they should be able to provide you with a safe plate of food so you can eat with everyone else. My understanding is that most of the companies that do luaus also do general catering, so it shouldn't be a problem for... -
ARCHIVED Telling Your Friends
Nantzie replied to TrillumHunter's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I tell people it's kind of like having a hangover and food poisoning at the same time on the day after you way overdid a workout (I get nerve pain and mobility issues too). "At the same time" gets their wheels turning on their own personal experiences because most people have experienced each one of those at least once. And the idea of having all of... -
I use Bob's Gluten Free All-Purpose too. Works perfect. Nancy

I wanted to mention that Enterolab has JUST the gluten stool test for $99. It might not be the full panel, but it will give you an answer sooner than waiting to afford the whole thing. That's what I did for my kids. Nancy

That is SO COOL!!!! I can hardly wait. Nancy

ARCHIVED I Think I Found A Good Snack
Nantzie replied to Amanda Thomas's topic in Parents, Friends and Loved Ones of Celiacs
Yep. If the company paid the extra money for the gluten-free oats, they'd be advertising that they were gluten-free. I'd almost guarantee that the oats are contaminated. Sorry. That sounds yummy too. Nancy -
ARCHIVED Gluten Free Home
Nantzie replied to sara78's topic in Parents, Friends and Loved Ones of Celiacs
I think it varies from family to family. It sounds like you're doing what I would do if there was only one gluten-free person in the family. I would advise seperate toaster, cutting boards, nonstick cookware, wooden spoons for the gluten-free stuff though. I know those type of things are enough to cause a reaction in me, so I always advise that. I also... -
ARCHIVED Celiac Or Other Nutrient Deficiency And Nerve Pain?
Nantzie replied to daniella's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Before I went gluten-free, I had pain that was like sudden electric shocks in my hips and back. For the last 2-3 years of my pre-gluten-free years, I developed this to the point I could barely walk. If it wasn't for finding out about celiac as a possibility, my next doctor appt would have been to find out how to get a handicapped placard for my car rather...
