  1. We didn't, although I know it's traditional to. We always liked the cookies much better than any of the fillings, so we started doing just the cookies. Nancy
  2. Oh... It looks sooo preeeetttyyyy.... I'm in Sacramento. Where we regularly get to 105-110 degrees F in the summer. December in Sacramento looks pretty much like August in Sacramento. But we have mountains nearby where it snows. Nancy
  3. I've been using Annalise Robert's Flour Mix in a few family cookie recipes with a lot of success. Today I decided to use it in my mom's Krom Kakor recipe, which she got from an elderly neighbor in the 1950's. Mrs. Carlson taught my mom how to bake, and gave her several recipes, which have now become our family's recipes too. Annalise's Flour Mix,...
  4. Try Pamela's Wheat Free Bread Mix. It is so close to wheat bread that you'll be shocked. It even smells like wheat bread. It's soft, tender, and it even bends. It also doesn't have a weird taste, like some of them do. We go through 2-3 loaves of it a week. Nancy
  5. Same here. It's not wanting to feel like that that most keeps me on the straight and narrow with gluten-free. I can handle the GI symptoms of getting glutened. I can even handle the pain and mobility issues. But I can't handle that dark cloud that settles over my mind. I'm blown away too that I was able to live that way for so many years. It's...
  6. Before I went gluten-free I never thought I had headaches. Ever. But it was only after going gluten-free that I realized that I was actually having constant headaches. I just thought that the way my head felt was just the way it felt to have a head. It had been the way I felt for so many years that I just never considered it as as a symptom or even a...
  7. Just wanted to give you a {{{hug}}}. Everything is going to be okay. Being sick and not knowing what it causing it is the worst part of it. Just remember that we're all here for you. That's why we're here. That's why, even when we can do gluten-free with one hand behind our backs, we come back every day. Because we were in the same spot as you...
  8. Ooo...!!! I'm hosting Christmas Eve for my family this year. That would be perfect as one of the desserts! Nancy
  9. I made this yesterday. Thinned out some premade frosting with some milk to make a glaze. It was SOOOOO good. Texture and taste were both spot-on. It was actually the first and only cake my daughter has ever actually eaten. She doesn't like cake, even before being gluten-free she never ate it. She just eats the frosting. I gave her a piece thinking...
  10. Geez, what a mess of a day. Sorry it was so rotten. Unfortunately, compassion is only truly learned through experience. Nancy
  11. I did the official medical tests for three reasons. 1) My husband thought celiac was just another of the dozen or so health kicks I had been on to try and fix my symptoms. He didn't realize that the symptoms that I was trying to fix were the same ones I had been suffering with for 18 years. He started thinking I was a hypochondriac and being worried...
  12. Well, I guess it isn't very common, but for me, hair loss is directly related to my gluten intake. I've got a lot of hair too. It's not the normal hair loss. It's significantly more. Not handfuls, but way more than normal. Like 3-4x the normal amount. Up until recently my hair was very long, so I was used to the normal "shedding" of long hair that...
  13. I was the only gluten-free one in the house for several months. My kids were 2 and 3 at the time, so with them eating gluten, I was pretty much covered in gluten with them crawling all over me. It ended up working out better than I thought it would. Washing your hands after you touch a bagel, or whatever, is exactly right. There are some people...
  14. I make hamburger buns using what's called a "muffin top pan". I use cooking spray, and then just pile the dough in there and spread/push it out to the edges. I got mine at a local cooking store, but here's a link so you can see what type of pan I'm talking about. Open Original Shared Link Nancy
  15. I used to LOVE Kikkoman soy sauce. La Choy is gluten-free. It's not my favorite, but it's very easy to find. The best gluten-free soy sauce that I've tried so far is San-J Wheat Free Tamari, which tastes a lot like I remember Kikkoman tasting. I use it in all the Asian cooking I do now and my husband hasn't mentioned noticing a difference. I had...
  16. ROFLMAO!!! Sorry. I know this is an honest question, but I just can't help myself. Nancy
  17. I know how you feel. All my testing came back negative too. What I ended up doing was planting my feet and doing the gluten-free diet this past January no matter what ANYONE said. And a LOT of people in my family said a LOT of horrible things to me and about me, to my face and behind my back. It was really rough. But I started feeling better really...
  18. How frustrating. I'm praying you get some answers in Calgary. Nancy
  19. What I was told was that the damage to the intestines is very patchy. Picture spattering paint on a wall. And then blindfolding yourself and trying to take samples of only the paint areas. That is why a person can have a negative biopsy (non-celiac) but still might have damage to their intestines. There are also people like me, who have negative blood...
  20. Added {{{{{{{{{{{{{{{HUGS}}}}}}}}}}}}}}}}}}}} from me too. It's true. The phrase "the straw that broke the camel's back" has poignant meaning to moms, especially moms of kids with health issues. We can handle anything and keep a smile on our face for weeks, months, or even years, but there comes a point where we just can't handle one more freaking...
  21. It's so great that you're so supportive and willing to go the whole nine yards for your girlfriend. It's mind-boggling how many family and friends are the absolute opposite for some unknown reason. So thank you for being so great. Like others have mentioned, non stick pans aren't good for you in their own, but they're also prone to scratches where...
  22. Yep. Absolutely. There was a thread on here not too long ago where we actually discussed the timeframe after which a gluten-eating person is deemed "safe", and it seems to be about two hours. Not sure if them brushing their teeth makes them immediately safe thereafter or not. It's heartbreaking to have to turn away a sweet little child's kiss. ...
  23. Here's a recipe if you don't mind baking them. I posted it here several months ago. I make it as little snack-type crackers for my kids too by using some little cookie cutters I got from Pampered Chef. It's a good comparison when the other kids at Sunday school get Teddy Grahams. 24. That's exactly what happened to me after I went gluten-free. I had been constantly hungry for years. After I went gluten-free, my appetite just disappeared. It was actually kind of difficult to eat, so you may need to remind him to eat. Small meals is okay, work with him to keep it balanced. He may forget to eat because he won't be driven by hunger signals...
  25. That sounds SOO good. Might have to break out the fondue for New Year's this year. Nancy
