  3. You might want to check out The Gluten File (see signature). I'd definitely be supplementing B-12 and Folic acid but the other B's as well, B-6 can get depleted. Might as well get them all as B vitamins are water soluable and what you don't use just gets peed away. Congrats on getting a clear diagnosis, so few of us do!

  5. Personally I'd use enterolab.com, in fact, I did! I think that lab, Optimum, might have been called "York" before and they had just horrible customer service. People waited months and months for their tests. Sounds like (if it is the same lab) nothing has changed.

  8. Well, if you want to feel well and lose the symptoms, I'd recommend treating this just as if you had a celiac diagnosis. There's a lot we don't know about celiac disease versus gluten intolerance but as far as I'm concerned, I'm treating them exactly alike. At least give it a good honest try for a few months and see if your symptoms clear up.

  10. I was making a Christmas Stollen, a pretty wreath-like cake (pre-gluten free days) and I forgot to add the eggs. I ended up adding the eggs after the dough was all formed.   14. I diagnosed myself based on dietary trial and using Enterolab.com. It isn't an "official" diagnosis, but I'm a big girl and don't really need one to change my diet.
  15. Doesn't the return of your symptoms kind of confirm that you need to stay on the diet? I mean, what if the results come back negative, are you really going to resume eating gluten and just tolerate the symptoms? I'm not following your logic.
  16. I would think the earlier you start the easier it is going to be to keep them on it. Besides, why not have the whole family eating the same? It's gotta be a ton easier and lowers the cross contamination issues for those of you who KNOW you have issues.

  20. Well, I'm sorry your daughter is having a hard time sticking to the diet. Would sending treats to school with her help keep her from cheating? If she had her own gluten-free cookies, maybe she wouldn't eat the gluten ones. I feel that gluten intolerance can be just as damaging as celiac disease. It has probably caused a couple of autoimmune diseases...
  21. The tests are often falsely negative or inconclusive and so many of us have to believe that dietary response is the best test of all. If it is important to you, ask your doctor for the diagnosis based on dietary response. If not, then just stick with the diet anyway! Genes can't really determine it. You could have the genes but it might not be active...
  22. I'll give another plug for The Paleo diet (or any sort of evolutionary diet). It really helps a lot of people with their autoimmune diseases. Sounds like you could possible have one. Google "paleo diet" and read up. I have a form of autoimmune arthritis that it helped me with immensely. I found that all grains (rice not so much) were giving me issues...

  25. I wonder... I made a chocolate flourless cake for NY Eve using Open Original Shared Link recipe. It was divine! Anyway, I'm thinking that perhaps yours was a bit overcooked? That'd certainly dry it out. The recipes I see for cakes like this with loads of eggs and ultra dense usually have you cook them in a water bath.
