  4. Which type of diabetes? Type 1 is autoimmune and celiac disease is connected to almost every autoimmune disease.   9. You might as well get started on supplements. I think your damage can probably be repaired, I've heard of other folks doing it.
  10. Assuming you have refrigeration and microwavation you could take any sort of left overs. I also used to take big salads to work and just put the dressing in a separate container. If you don't cook, sounds like you should learn! I recommend watching cooking shows on TV. I learned tons from them.

  12. I don't eat processed foods at all and I don't starve somehow. The vast majority of the foods I eat never contained gluten so I don't need to find substitutes. Anyway, I'm not gloating, just trying to explain that there's lots of things to eat that are very healthy and naturally gluten free, if you want to consider changing your diet a little.
  13. Although there seems to be some controversy over it, the latest reports I've read said oats are not safe for celiacs. Even ones that are certified to be gluten free have a protein in them that many celiacs respond to. It's something I think you're best removing from your diet. Add it in later after you've gotten accustomed to things.

  15. Dairy gives me constipation, it used to counterbalance the dairrhea that wheat gave me, most of the time anyway. Anyway, nowadays my symptoms from dairy are excess mucus production, stuffy nose especially at night and weirdly enough, muscle spasms especially in my neck and shoulder area. I seem to be ok with butter though.

  17. I'd encourage you to give it more time. Our bodies react strangely when we take away things that they're addicted to or even things that are harmful. But if it doesn't go away consider that you might have other foods issues too. For instance, I've finally figured out that nuts and seeds give me intestinal issues. And it seems like taking away other things...

  19. Why do you feel you have to share this info with your doctor? First off, they'll discount your self-diagnosis and they almost certainly won't diagnose you based on that. They'd probably want to take blood tests and do endoscopy, which will be negative most likely since you're gluten free. Just save yourself the hassle and anger and don't involve your doctor...
  20. I'd say 1 or 3 is doing it. Sesame does evil, evil things to me. I went crazy on sesame oil for awhile and had the WORST gas and terrible diarrhea. Later I found out they use it as a laxative in Chinese medicine. Oops!
  21. If you want to self-diagnose then a dietary trial or testing through Enterolab should be fine. I'm not a fanatic about "gold standard" Celiac testing because we've run into a lot of folks on these forums that have tested negative but had amazing health turn-arounds from removing gluten from their diet. So, IMHO Celiac disease is just one form of gluten...
  22. I find protein and fat are the two best appetite suppressants available. If you're meat adverse I'd recommend things like macadamia nuts and avocados. Yum!
  23. Have you ever been to a neurologist? It sounds like you might have narcolepsy.
  24. Some people I've talked to have reported depression or psychological things as side-effects of dairy. For me it is sinus and muscle cramping mostly, secondarily constipation. So yeah, give it up for a couple of weeks and see what happens. Hopefully the withdrawal symptoms won't be too awful. I'm sure I don't have to tell you though... that much...
  25. I had some gum issues and lots of tooth decay. But it's all gone away since I've adopted a Paleo diet. My hygienist tells me my mouth is now in amazing condition. Frankly, I think it was the grains, sugars and sticky sweet things like raisins and dried fruits that were causing the problems. I hope you find your solution!
