Are you new to the gluten-free diet and have cut out a lot of starches? It could be that you are eliminating a lot of excess water from your system. I went through this. Even now, I still get up 1-2 times a night, usually 1 time, depending on what I eat, drink, or whatever. -

Hi eleep--It looks to me like you are still eating a fair amount of gluten--not as much as you used to, for sure, but it's still in your diet. If a diagnosis is important to you, you could go ahead and have the blood panel done and then make the decision as to whether or not you want to do the biopsy. I would also suggest substituting The Gluten Free Pantry Cake and Cookie Mix. That cake is delicious--every bit as good as one made with wheat flour--in my opinion -

B--I use Bare Escentuals foundation, but don't love their mascara and their lip products are expensive considering I can't look at them before I buy. I never noticed this brand at CVS--and I'm in and out of there all the time! Going to take a look tomorrow--thanks! -

Yes, there are tests that will diagnose Celiac--a full Celiac blood panel and also a biopsy of the small intestine. If you have been gluten-free for a while, as you have, the tests have a high risk of coming back a false negative. Hi Robin--The only question I can (maybe) help you with is the french fried onion. I would think that you could make your own, slicing the onions, dipping the rings in egg and rice flour and then frying them until almost done. Then they could finish crisping up when you bake the whole casserole. I don't know of any sub. you can buy. Maybe someone else... -

Even though your husband loves the dairy foods, and I know that eliminating gluten is restrictive enough, I would suggest he try cutting the dairy foods out--at least for a month. Then see if there's any improvement. Casein can produce symptoms similar to the ones caused by gluten beacuse the casein protein is very similar to the protein in gluten. The... -

My weight issues with Celiac weren't dramatic, either. In the months before my Dx, when I was the sickest, I lost 15 lbs. Within 2 months of starting the gluten-free diet, I gained 10 lbs. back and have since gained 2 more. I seem to be staying at this weight--although I wouldn't mind losing the 15 again, but this time in a healthy way! -

Hi UzairH--Glad you found us! It can take longer than 2 weeks to really see an improvement--especially since you've been sick for so long. Right now, for this gluten-free "trial", I would urdge you to make sure there are no hidden glutens in your food or personal care products.
