Nikki--That's interesting that you get those symptoms from eating gluten even though you made the choice to go gluten-free . It adds creadence to the theory that wheat isn't good for anyone. After reading Dangerous Grains, I believe that to be true--some people (probably a small %) don't react at all and a much larger % have symptoms that they don't attribute... -

Just recently I read an article that said that it was once thought that the neurological symptoms of Celiac stemmed from vitamin deficiency, now they feel that Celiac somehow actually affects the central nervous system. -

I also don't think you are weird! I grew up across the street from a cemetary. Always felt very comfortable with it just being "part of the neighborhood". We used to cut through it to go to the park. Since I've been gluten-free, I tend to get cold--especially my hands and feet--during the day. At night, at first I have a hard time warming up under the covers, and in the middle of the night, I get hot and have to kick the covers off. Hot flashes are part of the problem, I know

Hi--welcome in! Your symptoms could very well indicate Celiac, in my opinion. In fact, I had many of the same issues you do. If the diagnosis is important to you, I would suggest NOT stopping gluten and make an appt. with your doctor. List your symptoms and tell him/her that you want to have a celiac panel (blood work) done. Then, you can make a decision... -

Karen--that sounds terrible. I really hope the doctors come up with something that will help--you have such a great attitude and zest for life! Even at my sickest, I would look forward to going back to bed at night because that was the only time I would get relief. How long have you had this? I enjoy several of their products--the pizza crust, cinnamon rasin bread, sandwich bread. I agree about their use of soy flour--I would like to be able to try more of their things, but I stay away from the ones with the soy flour. -

Plastic would be fine, you're only planning on using it with non-gluten items anyway, so I would get whatever you're most comfortable using. I use an old-school type hand crank can opener. I throw it in the dishwasher when I use it. -

According to The CSA Gluten Free Product Listing, dextrose is gluten free. It says it occurs naturally in fruits and other parts of plants and is a naturally occurring form of glucose. It does not list potassium lactate. -

M-m-m--How long have you been gluten-free? Like I said, the time it takes to feel a difference varies. I would think a few weeks would at least give an indication that it was working. You have seen an ENT--have you been seen by a Gastroenterologist? You didn't mention any gastro. symptoms--are you noticing any difference in that area? -

Whenever I use rice milk in a recipe calling for "milk", I substitute it 1 to 1--never had a problem. -

How long have you been on the gluten-free diet? Have you noticed any positive changes so far? I didn't start to feel better until the 4th. month gluten-free. I had pretty severe gastro. problems, though. How long is an individual thing--a lot depends on how long you've been sick, your symptoms, etc. Are you sure that you're 100% gluten-free? Maybe if...
