				Always ill
Ennis-TX replied to Katsnkids's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Celiac is autoimmune disease, where your immune system reacts and attacks your own body when it detects the gluten proteins. SO it would make sense you might get more sick with it as you body is already fighting the gluten. BTW did they finish testing? They normally will follow a blood test with a endoscope to check for damage to your small intestine... -

Ennis-TX commented on Zyana Morris's article in Spring 2018 Issue
This disease evolves, ever changing. If you really have celiac, your damaging your intestines, many never show the standard mentioned symptoms but develop other issues. Ennis-TX replied to LilyR's topic in Gluten-Free Foods, Products, Shopping & Medications
I only use 3 companies seasonings, I mostly use spicely organics, but fell in love with the blends from Big Axe Spice, I use The Spice House for Chorizo Sausage, Merigenz Sausage for making vegan sausage and other things like eggs taste like sausage is in them. -

				Bread question
Ennis-TX replied to mbrookes's topic in Gluten-Free Foods, Products, Shopping & Medications
Make my own grain free, but used to use Julian Bakery, have to order fresh from them, the seed loaf was lovely, the coconut was great for french toast, and the almond one they had was great toated with mashed avocado and scrambled eggs. They recently came out with a new sandwich bread. NOTE I use them and my own as I require grain free, xantham gum free... -

I have this perspective, I have a infection that is getting worse, drugs do not stop it, and I can not get surgery due to money. So I life life to the best trying to bucket list on a budget knowing I could die...

				ARCHIVED gluten sensitivity symptom review
Ennis-TX replied to ChasingTreatment's topic in Coping with Celiac Disease
I would get checked for Celiac, start eating gluten daily now or you will will have much worse symptoms when you go to get tested later. Celiac test require you to be eating gluten daily for 12 weeks prior for it to show up on the blood test. My first sign to even tiny amounts of cross contamination manifest in hand issues, like more of a loss of feeling... -

				Severe Burning Stomach pain
Ennis-TX replied to Erick's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hindsight, ditto on kareng about getting both scopes, "right side near belly button" would suggest Ilium/cecum/ascending colon so colonoscopy and endo to be sure. Plus I doubt you will get a child to take the prep twice if they know what it did the first time around so push for both at the same time. If the pain is constant, no matter what she eats,... -
Well I constantly update list of gluten free alternatives on a quarterly basis, more of treats but this list helps many find safe gluten free "cheats" that help with cravings. Have over a dozen updates to make next month and post new list but this is so far. https://www.celiac.com/forums/topic/121148-gluten-free-food-alternative-list-2018-q2/

				ARCHIVED Need advice / direction
Ennis-TX replied to Silentbob's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Um many of us have Neurological issues with gluten, for years I always just had no energy then my symptoms changed and it made me Mr.Hyde mode, I would get looping thoughts unable to move to the next step in a process and it would drive me mad/angry. Years after going gluten free, I have not seen Hyde but exposures now cause fog to lesser degree, motor control... -

ARCHIVED My Blood test came back Positive for celiac, very confused now
Ennis-TX replied to shad's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I was on jarrow which were porcine pancreatic enzymes, but it is was a bit incomplete and helped some. I am moving to SliverFern ones when they come in. They are supposed to be much stronger and work in various PHs levels. Down side to pancreatic enzymes like Jarrow is they require a very strong stomach acid to activate......I have noticed via testing my... -

ARCHIVED My Blood test came back Positive for celiac, very confused now
Ennis-TX replied to shad's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have similar issues and have to eat blended, soft, easy to digest meals in the evening. Combination of not enough pancreatic enzymes to break down foods, and my stomach and gut having dumping issues in the evening. Helps to eat simple meals, soft meals, blended or cooked to swish able mush, like smoothies, and take digestive enzymes. -

				Severe Burning Stomach pain
Ennis-TX replied to Erick's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
The celiac is specific blood panel that they need to ask for and do the full panel, they will follow up with a endoscope and biopsy to check for intestinal villi damage. She needs to be eating gluten daily for this. Open Original Shared Link For now keep a food diary and record everything she eats, how is prepared, etc. and time frames of various... -

				ARCHIVED Symptoms still persisting
Ennis-TX replied to LilyBujak's topic in Introduce Yourself / Share Stuff
Gluten free medically is different then fad, your food has to be prepared in gluten free dedicated cook ware. Gluten is a protein smaller then a germ. You sort of have to decon your kitchen and replace several kinds of cook ware like new colanders, wooden spoons, scratched pots, pans, Tupperware etc. New condiment jars (butter, jam, nut butter jars often... -

				ARCHIVED Salted nuts
Ennis-TX replied to Smilewiper91's topic in Gluten-Free Foods, Products, Shopping & Medications
So Delicious, silk, and almond breeze make non dairy yogurts. I used to use the So delicious til they tried using xantham gum in them and I started making my own after that. Simple process warming up a mason jar full of nut milk of choice, then dumping in 2x 50billion probiotics, cheese cloth over the top and letting them populate for like 24 hours.....just... -
People sometimes ask what they can do with my Artisan almond butter. I came up with a pie recipe that can be used in any of my crust or your own. Depending on the type of almond butter you use you can get different flavors. Pictures are my Cheese Cake Almond Butter with Chopped Pecans, This is actually Sugar free and Keto with my Pastry Crust. 1x 4oz tub...

				ARCHIVED Risk factors
Ennis-TX replied to Katya773's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Last time I got glutened I it took over a month for all the symptoms to go away. Sounds like your bad enough off you can not try the gluten challenger for the offical testing. But I hear they are working on a new form of Dia. that does not require the challenge. From what you mentioned and that your mother has it, you probably do also. Open Original Shared... -
Yeah sure a little will not kill you, bit it will still damage your organs. Residue or a crumb can leave many of us with so much pain and other issues it is ER worthy. Even if you do not feel all that bad, truth is with celiac disease your immune system will attack your intestines and destroy your villi regardless if your "feeling" it or not.....any amount...

				ARCHIVED Salted nuts
Ennis-TX replied to Smilewiper91's topic in Gluten-Free Foods, Products, Shopping & Medications
Actually, I make sugar free jam with pomona universal pectin, it uses calcium water instead of sugar to set up. So I use with almond, coconut, or cashew milk, or use the calcium packet they provide, then swerve sugar replacement sweetener and extracts from lor ann or watkins to make fruit or cream cheese flavored jams without using actual fruit, sugar, or... -

				ARCHIVED Great Value Sausage
Ennis-TX replied to Sephira81's topic in Gluten-Free Foods, Products, Shopping & Medications
Never tried them, I am overly paranoid myself, and cook for others as a chef. Only ones I tend to use AppleGate, Jennie-O, my local HEB brand, and this one brand of mexican chorizo from down here locally. Technically sausage should be gluten free, unless they used seasonings that were cheap and contaminated, or did it on a shared line with something else... -

ARCHIVED Just been diagnosed with celiac"
Ennis-TX replied to Katsnkids's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Well welcome the club you never wanted in, do read the newbie 101 section about how to clean out, decon the kitchen preventing contamination, and reading labels. https://www.celiac.com/forums/topic/91878-newbie-info-101/ Yes after removing gluten many of us get much more violent reactions when it is reintroduced either due to being "numbed" to constant... -

				ARCHIVED Salted nuts
Ennis-TX replied to Smilewiper91's topic in Gluten-Free Foods, Products, Shopping & Medications
OMG I love making pizza out of the mushrooms, turn upside down remove the stem and some of the fins, preheat the oven with a cookie sheet/pizza pan in it to 400F. Put a few spoons of sauce over them or pesto, then add in some vegan cheese like miyoko mozz and other toppings and cook 15-20mins. Healthy take on bagel bites, and if you put other "supreme" pizza... -

ARCHIVED Did I just “get glutened?”
Ennis-TX replied to kg51's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Might have, I stopped eating out except at 100% gluten free restaurants for a treat. I do have 2 places I go to that are not gluten free dedicated but I only order 2 menu items, and I have talked to the manager each time and seen how they cook them, (they lay down foil on a conveyor oven and put veggies or fish on top unseasoned and just roast it then dump... -

				ARCHIVED New symptoms?
Ennis-TX replied to kam00096's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
This disease is a chameleon, over the years your symptom will evolve, changes like a sickness, getting glutened, or other shock to the immune system will likely cause a change in symptoms. After going gluten free....we react more violently to gluten when it is later reintroduced. Double check the newbie 101 section see if you missed something, go to a whole...
