Yeah, first few weeks feel like drug withdrawal. We also suggest removing all dairy, and oats, and going with simple soups, stews, and whole foods only meals to make it easier to navigate the new diet, crock pot/slow cooker stews/soups with bone broth cooked so everything is super soft will makes it easier on your gut for now. The standard blood testing tells you if your producing antibodies to fight/attack gluten testing for certain ones. Pretty much helps tell them you have it, the gene test tells them you "Could" have it. They will confirm with a endoscope and biopsy later checking for damage. BUT you have to be eating gluten daily for 8-12weeks for the blood test, or 2 weeks...

almost all of it would not be safe, they use heavy soy sauce made with wheat, go with plain steamed veggies if anything but do talk to your server/manager it being safe. I assume celiac here, BEST suggestion is make it at home, skyvalley makes some gluten free korean BBQ sauce, Marinade some pork or beef in it for 24 hours, if you doing the thin cut style...

Actually the cooking of eggs changes the profile a bit, by example raw egg whites are a histamine liberator while cooked not so much. Many people I know can not have plain or soft cooked eggs, but in baked goods are fine. I myself can not tolerate the fats in the yolk in plain meals...but no issues in baked goods. Egg whites are no issues for me even raw...

I think the more common issue with Celiacs and dairy is even the gluten free stuff will bother many. With damaged villi we will have enzyme issues with dairy products and breaking them down leading to intolerance and other issues. Gas, bloating, diarrea, vomiting, skin break outs, all can be caused by this. I can suggest many dairy free alternatives... -
Carmel Color in the USA is often made from corn though often processed so the proteins that would trigger even allergic reactions to corn are removed...not a issue for you but I have a corn allergy. We are all different but I went with a paleo basis, then more of a keto/atkins diet. This removes grains, beans, corn, starches, etc. and goes to a more basic human diet our ancestors would have eaten. My particular take removed sugars, fruits, and potatoes also, but tons of protein so not quite keto. The lack of carbs, sugars, helped with inflammation, gas...

Few issues at the market with another baker showing trying to sell gluten free, she also does gluten foods in the same kitchen so I ended up in big debate. She has Made in a kitchen that handles gluten, wheat on all her stuff...but since she showed up my sales have dropped by half. Leading to even more stressful life. LOL my only purpose for living is cooking...

I would say give the diet a try, give up cooking with and in the family kitchen...I wish I had, we had so many fights over that back then in a shared house. Get you own little area in another room with a fold out table, a microwave, and a combo ricecooker/crockpot steamer to start with, and some Nordic ware microwave cookware, they have omelette makers, grill...

Could also be the dairy or any of the other crud in the cheese....I make my own vegan cheese sauces, or buy a Alfredo cashew cheese sauce I recently found. Daiya makes their cheese packets you can just buy to put on what ever you wish. Many celiacs have issues with dairy as the damaged villi will not work with the enzymes to break it down. In my case, I had a few other issues, I would have told myself to drop oats then also, and forget about processed foods and go for a whole foods only diet. I also would have given myself advice on treating my then undiagnosed Ulcerative colitis issues by telling msyelf to adopt a paleo based diet leaning towards a akins/keto ratio of fats and protein low...

Nordic ware microwave cook ware....cheap and a great option for cooking, they make omelette makers, grill plates with splatter covers, steamers, rice cookers etc....put a paper towel down in the microwave and put your cooker on it. Butcher Paper/Freezer Paper....pretty much a disposable place mat, you lay it down to fix your food on and eat off of if...- 2 replies

Also you would have to make the bars in a non contaminated environment with new spatulas and probably use a foil lined pan and a new mixing bowl. Gluten can get stuck in the handle connection point of spatulas, and scratches in bowls, pans, gluten flour can stay airborne for hours.....most of us will not eat anything not made in non gluten free kitchen or... -

Monte Cristo.... it is a 3layered deep fried sandwich, honey wheat bread, swiss, ham, honey wheat bread, turkey, cheddar, honey wheat bread, dipped in a pancake like batter and deep fried with a powered sugar dusting...I think cheddar still has them but we used to have them at bennigans. ^I actually have it in my will to be buried with one of these....... -

I have various issues with cheese from a gut issues, allergies, and the stand point of humans and bovine hormone ridden breast milk..my personal choices for cheese alternatives are stuff like Violife...makes vegan Feta...I have been dying to try their cheeses and hear good reviews. If you follow the diet strictly, no eating out, check everything, gluten free home, etc....I doubt you will have much show out of normal on the antibody test. Chances are your issues your still having might be a deficiency issue, years later I still need Magnesium and B-vitamin supplements, much lower dosing that I used to need but I still need them or all...

It is your right to have a copy of you test, I would demand it. Some test negative on the blood test. If you keep on having issues see about getting a scope to see if there is any other issues.....if you doctor has a issue with this here is a idea...go in...eat a sandwich and have him witness the distention...ask if that is normal. Other thoughts Non Celiac... -

They check the level of damage and other complications.....you could have other issues, and secondary issues caused by celiac that might need to be addressed. Heck a double scope to check lower and upper in one procedure would be nice they did not give me the colonoscopy the first time, years later found out I also had UC. Some people test negative on the blood test, but have the damage show up on intestinal biopsy. You have to be eating gluten daily for both test. So were you eating gluten daily prior to the blood test? Other things to consider even if all your test come back negative you could be Non Celiac Gluten Sensitive and just have to trial the gluten free diet... -
Celiac and Ulcerative Colitis, multiple allerges, with some other nerve and gut damages. Manage mostly with supplements and herbs, along with a diet to avoid trigger foods and stuff I can not digest, mostly paleo with keto/low carb diet with a basis on nut butters, seeds butters/meals, egg whites, leafy greens, avocados, and nut based baked goods.

Spelt or any species of wheat flour in any form is not safe for celiacs, we react to small particles of wheat flour...like that dust that comes out of a flour bag and settles on something can make us sick. Gluten is a protein smaller then a germ and with celiac our immune systems mistake it for a invader. So regardless of added gluten or type of gluten gluten... -
damn most of these post are filled with terrible, and misguided information. Gluten removed beers as of this date can not be reliably tested for gluten content. There for most celiac organization say to avoid them completely and they are not safe for celiacs. If you want beer you have to go to non gluten grain based ones, hard ciders, and non gluten...
