Disturbing all their extracts and emulations are labeled gluten free.....and none set off gluten testers. Knitty is onto something, your probably in a bad mind set with deficiency issues right now. I do chef work, run a gluten free bakery, and over all quite enjoy hosting for people. Meals are simple just omitting the gluten sides and still quite good. But yeah keeping eating gluten you could get other issues and made worse....what if your intestines rupture...

Yeah gluten removed beers are not safe for celiacs. Try a non gluten based one or hard liquor not made from gluten grains. Pain is we can not even accurately test for gluten in these things due ot the fermentation process partially breaking down the gluten proteins. But our bodies still in many cases recognize the protein and it triggers our immune systems...

Do you have any diagnosed conditions? Celiac, Ulcerative Colitis? UC will flare up with sugars and grains in rare cases, but you would probably notice streaks or drops of blood and mucus in stools. Celiacs can also develop Diabetes or have thyroid issues which could lead to issues with grains/sugars. Celiac disease can also leave you open to a higher risk...

Well you approached the SIBO side...what about candida? Stuff actually sets up worse after antibiotics. Well I respond really bad to sugar, starches, and carbs a few years after my celiac diagnosis with UC ....not diagnosed diabetic, but when I tried cheating and eating some hashbrowns...I started feeling like I was on drugs, and my glucose monitor showed 419........ Now take it easy, take a step back, and do this a week at a time with the elimination diet. Base your choices by what is on sale...makes it easy. Meal prep your meat for the week in batch, cook it unseasoned, and try a seasoning each day to "mix it up" and give you a idea as to what bothers you as the meat is your "base line" for the week. Peas are lentils if I recall, I have problems with green peas, removed them years ago, but no issues with pea protein I think it is the sugars and carbs. But they are known to cause gas, bloating. Bone Broth while great for most gut issues, if you have a food histamine issue...it is the worst, try a cup of plain bone broth if you get issues you know...

I turned to Raw Cocoa nibs, cocoa, and pea protein (seriously look at the iron content on Growing Naturals Pea Protein), I often make my own smoothies, and protein bars/crackers with it. Ditto many of the above, but wanted to say, I had many of my food intolerance issues just crop up after going gluten free. I also had several of my food allergies come up after getting glutened...oddly the allergies conside with something I was eating when I got glutened. Many factors here, just to note, when I was eating gluten, I used to get constipated, sort of a issue with magnesium deficiency from damaged intestines. Maybe yours are healing and regulating? Other thoughts like you said could be the biome of your intestines regulating to the new diet, if you had cadidia before or a biome of primary sugar eating bacteria...

Simplest and best route is whole food meals, look up gluten free crock pot meals, sheet pan meals, stews, soups. I personally prefer omelettes, nut meal porridge and stir fry, and make protein shakes, but I have other limitations. DO read the newbie 101 section. I do updated list quarterly with gluten-free foods but again whole foods should be your goal starting...

Unfortunately for now the only way to diagnose celiac is to essentially poison yourself with gluten so the antibodies to it show up in your body, with most in the blood after building up in your intestines from consuming it for 8-12 weeks straight. Wondering about this with a no carb/sugar version, UC I can not handle alcohol, carbs, sugars, and Celiac so no gluten. You should probably consider going back on gluten and getting tested for celiac disease before moving on. You have to be eating it for 8-12 weeks prior, some do not have noticeable digestive issues but have the disease manifest in other ways. There are some labs you can order online I am sure others have some suggestions on these but I am unsure if they go to your country. I had someone suggest to me with my health issues that I go to another country to get it treated better. Test for test I can not give much advice.
