  1. Got the response Thank you for your interest in our products. The citric acid in the Calm powders is derived from non-GMO sugar beets. The flavored versions have a trace amount of organic maltodextrin, which is derived from organic corn, but doesn't contain any of the corn proteins that are usually responsible for the allergic reaction. If you want...
  2. Keto? Would be a high fat, moderate protein low carb diet with no added sugars, starches, or sugary foods. Go look up stuff and recipes on Ketosummit, avoid anything with eggs, if it ask for cheese or milk substitute with dairy free versions. I can give you some dairy free, soy free, gluten free cheese brands that can work. It would be a mostly meat...
  3. Early on I was told my diagnosis was a sign and a guiding light. For me to eat better, and use my love for cooking to start a new business selling gluten free baked goods and cooking for people gluten free. Each diagnosis of issues I got have guided me. Corn allergy and Uclerative Colitis made me go paleo with a keto emphasis with my baked goods....still...
  4. Good question I was just bringing up the citric acid issues in my blog this morning. Some cases they make it from sugar cane....many cases it is processed to the point the end result contains no proteins that can set off a reaction. I will see about asking Natural Vitality Calm about their source today.
  5. 2 reasons, 1 it insures they do not dry too much out, 2. when they do cook it helps sort of steam cook in the inside giving that "puffed" soft texture inside and the oil gives it a fried crisp outside. If you cook on a wire rack placed on top of a cookie sheet it almost air fries them. Bonus points if you have a convection oven
  6. Amusingly I just had someone send a recipe for sweet poatoe steak fries this morning. Total Time: 25m Yield: 2 servings No ratings yet. Ingredients 1 sweet potato 1 tbsp oil or spray optional salt as desired optional seasonings, such as cinnamon, onion, garlic, or chili, or curry powder Instructions Cut...
  7. The chips I personally use are Protes and they use sunflower oil. I cater with Kettle Brand chips and they have ones cooked in avocado oil and almond oil ones that I keep buying. Had a nice smoked salt one that people loved.
  8. So I am allergic to corn...in a odd way. Corn starch, corn flour, corn syrup, corn oil will give me blood blister in my mouth and a 99-103F fever. Skin contact will cause a red sunburn looking rash that if not washed will start getting more like poison ivy.... Some derivatives from corn do not bother me, xylitol, erythritol, fibersol, etc. I used to think...
  9. Some celiac end up with issues with Xantham Gum intolerance or sensitivity...the way it is made can make it quite the offender. High and large amounts of starches and sugars used in most gluten free breads can cause gas, bloating. Celiacs especially those recently diagnosed are prone to SIBO and Candida. If your have these the excess loads of starches and...
  10. Just to state on both sides of this again. I have bought Just Hemp Foods Hemp Protein with a gluten-free certified seal and gotten sick...and tested positive on a Nima. I have bought royal Hawaiian macadamia nuts.....processed on equipment that handles wheat....tested safe on a nima and did not make me sick. I got glutened by steam fresh...
  11. It will have the full fat profile of the seeds but yes. Whole shell will be bit more gritty but have the added fiber. A burr grinder is needed and needs to be done in pulses to prevent it from getting hot and making it into a paste. (I have tried in a blade grinder and it makes a thick paste if you run it long enough to grind it all uniformly.) I use...
  12. Yeah that might sound good and all...but you will develop very bad issues with other foods before it kills you and it will be miserable......I got issues with sugars causing pain and distention, allergies to bloody corn and whey....yeah imagine that limitation, Oh the fun one...gluten ataxia...rare but I got that joker card. Nerve damage, brain damage (took...
  13. Um we have had members get blockages that end up resulting in it rupturing and having to have a colostomy and a bag attached. We have lost a few members over the years to cancers of the intestines and lymphoma. I had Ulcerative Colitis come from mine being left untreated for years.....and my UC keeps me from eating carbs, sugars, dairy, soy or gluten or it...
  14. On this note, I do recall something my nutritionist suggested. She said to eat 1-2 brazil nuts a day to make sure I get my selenium. I also wanted to note on Vitamin C, dose to tolerance...I can not take more then 2000mg a day and sometimes cut down below that. I use Ester C capsules and just dump the powder in a shot of other other meds. Try in 500mg...
  15. Trick with the capsules made of cellulose....dump them into a small medicine cup toss the cellulose pill shells and down the powder and chase with a drink. I do this with most of mine...nasty and I have to mix a sweetener in with it sometimes but lets me take them without the vomiting of that weird film that forms from me eating it.
  16. Gluten beer even in moderation, even if you do not feel it will flare your antibodies in the background and keep on causing damage for weeks after even a sip. As a fellow Texan and I know you can get in the DFW area look for Austin East Ciders in whole foods and HEB Hell just saw the huge variety pack for $17 at whole foods on park lane in Dallas. They...
  17. It is normal, I only eat at a place with 100% dedicated gluten free kitchen, or if I get something simple I and get to see how they prepare it (IE fish/veggies roasted on tin foil in a oven). I would not trust my own mothers to fix me a meal in her house. NOW if she came to my house and cooked it in my dedicated kitchen with ingredients I chose then we have...
  18. Umm I have gotten glutened off of gluten-free certified foods, Nima tested positive after. If you keep a eye on GlutenFreeWatchDog there are many cases of a company with the certifications changing ingredients and putting barley malt, or other gluten ingredients in the products and getting GFWD to call out on them...the FDA will very rarely get involved,...
  19. Just saw this recipe and it reminds me of my first days living on a budget gluten free, I did bacon and cabbage. Cooked the bacon in a pan, then saute chopped onions and crushed garlic in the oil threw in a chopped head of cabbage, fried it a bit, added in a cup or so of water and broth with the copped bacon back in covered and stewed til the cabbage was...
  20. Collard Greens are a leafy green vegetable that is naturally gluten free, if you buy them fresh in the store they are gluten free. Canned and preseasoned ones are probably not.
  21. PS health updates and things I found out, well I got glutened by my pets foods, and my symptoms changed a bit, the numbness and motor loss is missing, the pain is missing, the vomiting is gone....but I do have Diarrhea 2-3 times a day, brain fog, and random times for for the damnedest reasons considered suicide when all felt lost. (I am taking GlidenX maybe...
  22. Order the American Lea and perkins on amazon?
  23. No like make a whole foods meal with unprocessed foods for your hamsters. Like salads and a bowl with say sunflower seeds, nuts, pumpkin seeds, gluten-free oats, buckwheat? Peices of dried or fresh fruit? You know a more natural diet. Look up what they would eat in the wild and build on that. There are other grains other then gluten ones you can feed them...
  24. July update, I am really pushing catering...I have to. Trouble at the market with a new baker is driving me mad, late onset gluten exposure + her new ideas....it had me suicidal at my purpose and reason for being alive being taken away. Frankly my Saturday sales....used to be $30-120 a saturday, she has come along and started offering "Gluten Free" and...
  25. Anemia/Iron, B-vitamins, thyroid, vitamin D....I would say magnesium but that is hard to test by. These are the major causes that celiacs have for fatigue and most of us have to supplement for awhile or life. Iron requires vitamin C in combination to absorb. B-vitamins work synergistic together, so something like Liquid Health Stress & Energy. Magnesium...
