  1. So either like me you have carb issues and grain issues, or you just want to be healthy for what ever reason we get those cravings. I thought I would share what I use, I thought forever I would be stuck with using Capella Flavors Cereal flavoring in almond milk or nut porridge (homemade but Keto and Co makes instant ones) til I found these First...
  2. I find after a flare with UC or after glutening I have to avoid vinegar and spices...Compare your damaged intestines to a carpet burn...... Anyway I tend to stick to coconut vinegar, Apple Cider Vinegar, and Smidgens of balsamic but find it can make me feel off. Mayo...I use only primal kitchen now days. They do not use any grains in any of their condiments...
  3. SO it started off and has been very rough these past few weeks. I kept having issues finding a new car, found one much cheaper and I just have to wait 2 weeks for it. The Food Truck, working on getting a new LLC corporation filed for the truck then I can apply for offical financing. My initial inquires for financing were ignored or denied as the...
  4. It is highly processed, many celiacs react to xantham gum, it gives me indigestion, and in large amounts vomiting. You could have a corn issue, I have mild reactions with sweating also with daiya I assume is from my corn allergy. Some daiya products use pea protein, this is a legume and many have gas, bloat, diarrhea, and indigestion from it. There is...
  5. Wholesome Foods brand, I use it in come stuff for catering, like beans, chili, and BBQ.
  6. First consider the surface area of your small intestines if laid out is the size of a tennis court....and they are only taking a few samples from this. They might have missed it. The pins and needles can be a sign of magnesium or b-vitamin deficiencies caused by damaged intestines not absorbing them. Supplementing can help and I can give you pointers...
  7. This disease is in another members words a "chameleon" over the years your symptoms will change. Each exposure can be a bit different. I started off with constipation, ataxia, extreme brain fog, and anger. Now days the ataxia is mush less, but I have straight up D for 4-6 weeks after a small exposure. Helping the symptoms vary from person to person,...
  8. As mentions a whole foods diet is best cooking stuff from scratch with just whole foods. Keep a food diary if you can, record what you make and how you make it. Many with celiac end up with not just gluten issue but the damaged system can develop other food sensitivities or intolerance to other foods. Remove dairy and oats at first too. Open Original Shared...
  9. You can limit grain intake and focus more on a Paleo based diet, I use keto/atkins myself. But if your body is meant for carbs and you do not have bloat issues going Paleo and using sweet poatoes, squash, etc for your carbs might work out better in the long run and avoid grains.
  10. Great thing about those industrial stainless griddles, 500F+ destroys the gluten protein, and those suckers on max can get 550-600F But still need to be careful in other departments.....been there on that note with the Decon phase....recall accidentally glutening a non stick pan early on after dia and panic attacks about throwing stuff away....Peace of mind...
  11. Food diary, and keep eating gluten and get the full celiac panel done. See about getting a endoscope and a colonoscopy at the same time. This way they can check for Celiac, Colitis, Crohns, Ulcerative Colitis or any other issue of the bowls that might be causing your issues. 12. I get panic attacks entering other restaurants or kitchens myself, I also have a corn allergy so yeah that is another of my concerns. Your right, to have done what you did, I would never trust a whataburger...I miss them but can make my own at home....though I will admit their thin and HUGE wide patties are something to be missed...hard to make those...
  13. Sadly with celiac we are more prone to issues like SIBO and Cadidia which can make bloating worse, other food intolerance, and sensitivities are also issues. Start keeping a food dairy and rotating your foods. Open Original Shared Link Open Original Shared Link I found I had another issues and went keto/atkins. there is a transition phase, but without...
  14. Sounds like a allergic reaction, I would normally suggest finding just plain tapioca to test it but your reactions seems severe to the point of me suggesting your avoid it all together. Do be aware that modified food starch, food starch, etc can also be either tapioca, corn, potatoes, or rice. I found liquid antihistamines in little shot bottles to be great...
  15. I use the Colgin in my catering with ribs, burgers, etc to give added flavor. It is honestly the only one I have found that is safe. I do have one customer that has issues with tannins who can not handle it though. The caramel color is normally derived from corn in the United States, other countries might still use wheat.....but I found it does not even effect...
  16. This is how I do my ribs at home and for catering, get smithfield baby back ribs, the Natural ones have less crud in them and are labeled gluten free. Find these at most walmarts Open Original Shared Link Preheat oven to 275F Salt and Pepper the ribs and rub with a bit of Colgin Liquid Smoke (this is a gluten free brand), and wrap tightly in foil, place...
  17. Hm I got glutened a while back and spent the last 4+ weeks with D, and it is on and off flaring my Ulcerative Colitis. Other then high potassium intake and stuff to dry out your stool like coconut flour in baked goods, shakes, and whisked into my egg to keep stool somewhat solid not much else but wait it out. Few tips to make it easier, avoid sugars...
  18. Or the same in a deli wrap between 2 chunks of iceberg lettuce The iceberg method is...
  19. You could eat gluten for the next 8-12 weeks daily then go get a celiac blood panel done.....Could the rash be DH? https://celiac.org/celiac-disease/understanding-celiac-disease-2/diagnosing-celiac-disease/screening/ https://celiac.org/celiac-disease/understanding-celiac-disease-2/dermatitis-herpetiformis/
  20. Hemp Protein is great but as of a few years ago none of the producers in the US of the processed protein make it ACTUALLY gluten free....I have bought and tested most every brand, Nutiva, Manitoba, Just Hemp Foods, Foods Alive and all tested positive for gluten. mygerbs is the only exception of hemp seeds being gluten free and milling these in a burr grinder...
  21. Yeah it is because it is high in potassium without sodium, the potassium dries out your stool and then causes you system to flush out the liquid, more sodium can help offset the balance with retaining water. NOTE coconut water in moderation is good, try watering it down quite a bit so you just get some of the electrolytes but not throw your system so out...
  22. I have seen some react back to garlic and onion....and spices in general...think of your damaged intestines like a carpet burn on your arm...do you want rub spices or alcohol on that? Considering you reaction is over and not lasting longer I would assume it is not gluten....most I know like me will get reactions to gluten lasting much longer, to some degree...
  23. Well I emailed them they use corn in other chips, with your corn issues....it is probably related to that and cross contamination.....OR you have issues with carbs? To plain potatoes bother you?
  24. Love the suggestion, fact I am looking at something. With the new food truck I am looking at doing and working with my local farmers market. I think doing Gluten free cooking classes outside of my truck or streamed from my truck. I have been asked to do this before, and some of my followers on my cooking page also ask. Perhaps I can expand along your idea...
  25. Dairy Free, There is Miyoko, Kite Hill, And Daiya. BUT Kite Hill, and Daiya have corn diriviites in them. Miyoko Cream Cheese is 100% Dairy, Gluten, Soy, and Dairy free. Traders Joes stocks their Unlox your dreams version.....not sweet but a savory seafoodish tasting one with a bit of nori in it. You have to order their plain from them...shipping kills...
