Mushroom Brand
Ennis-TX replied to LilyR's topic in Gluten-Free Foods, Products, Shopping & Medications
I have been fine with Polar Canned mushrooms, we have 2 local farmers here...they told me they use various seeds sprayed with teh spores to grow. I think I did a post with the exact information a few years back but think they were using barley to grow the mushrooms from. Some even use compost with wheat to grow them in. OH on polar...they are in a liquid... -

Ennis-TX replied to Jen1104's topic in Coping with Celiac Disease
lol I think your braver then me. Between my corn allergy and celiac....I can not be around the normal americans and gluten eaters for long. I gave up working with normal people a few years back. Oh lets eat a gluten and corn burrito and wipe my hands on his desk and chair (we got this one on camera) Oh lets go and eat this stuff he can not eat in front... -
Maybe glutened by microwave at work...
Ennis-TX replied to Jen1104's topic in Coping with Celiac Disease
When I use a microwave at a gas station or whole foods to warm up the stuff I brought with me I do the following" Use a paper napkin to open the door, lay napkins inside and on top of my food, do not touch the controls with my bare hands. and lay down some freezer paper I brought with me or paper towels on the counter I am eating on to avoid gluten residue... -

Pepto bismal
Ennis-TX replied to Jherm21's topic in Gluten-Free Foods, Products, Shopping & Medications
Many other celiacs swear by it....I can not take it for other reasons, but many of our regulars say to use it after a exposure to make it easier to deal with symptoms. -
Celiac related nerve issues can have multiple causes and even be more then one. Celiacs and sometimes non celiacs can get something called Gluten Ataxia, in my case my immune system attacks my nervous system in reactions to gluten, this has caused numbness, along with nerve and brain damage. With the brain part it will show up as white spots on a MRI from...

OK, first welcome, second might do good to check the newbie 101 thread. https://www.celiac.com/forums/topic/91878-newbie-info-101/ Now about the testing.....you do know you have to be eating gluten every day for the testing? The biopsy test will require you to be eating a slice of bread a day for 2 weeks prior. A blood test much longer but you already...

How safe are Costco and Nuts?
Ennis-TX replied to vvicin02's topic in Gluten-Free Foods, Products, Shopping & Medications
Use Nuts.com or source direct from manufactures. It is hit and miss with those kinds of things. I never had issues with most trader joes nuts, I get my almonds in 25lb cases from alldrin brothers best pricing ever lol, AND they only handle almonds, no other nuts, seasonings, etc. -
Pancreatic Enzymes An Celiac
Ennis-TX replied to TLymanP's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
This is a old post from 2005, if your having issues please start a new topic and perhaps someone can help? I have some odd pancreas issues with mine not producing enough, seems I had some issues with my immune system attacking my nervous system etc. and after a gluten exposure a few years ago I stopped digesting some foods like meats, animal fats... -
This is a personal note to myself on things to remember next time and things to consider. If unsure of exposure take glidenX next few meals, blend and nima test samples of ingredients used to see if it was something you fixed. THOW AWAY that tooth brush....you brushed after getting glutened...your brush is contaminated.... MAKE SURE to add...

If your growing them from seeds should be fine. Just make sure now wheat kernels are in the packet lol. But yeah..most name brand veggies, have the shared lines with sauced (gluten) lines and use the same damn packing machines. I found a local provider that has safe lines, and I have pureed some of the broccoli and nima tested it and found it safe.....

Dairy free Pizza cheese alternatives?
Ennis-TX replied to mystic's topic in Gluten-Free Recipes & Cooking Tips
Good to hear... I miss it lol, I started reacting to all daiya cheese quite bad, and ran out of my frozen stocks of the old stuff prexantham gum era. Called them to find out the reason and checked all ingredients...the citric acid and xantham gum they use is from corn....a allergy of mine. I been playing with Miyoko for pizza, and leaf cuisine spreads... -
Have you tried the Califour Foods Plant crust? Bit thin but gluten, corn, soy, dairy, grain, and even xantham gum free. I have done everything from chips, pizza, dessert pizza, and even put two halves in a waffle iron with either Miyoko Vegan Mozz or Cream cheese between them with other fillings to make a off shoot of a calzone.

Well you have one of the genes for it and Celiac is genetic. Suspecting gluten intolerance
Ennis-TX replied to pjg's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yeah with celiac lactose intolerance is common. The enzymes to break down the lactose are introduced to your system by your villi, and celiac destroys these so you get lactose intolerance. Some cheeses, and Greek yogurt are lower lactose so you get less issues. Removing all dairy for a few months til they grow back will make you feel better. -
Is Nausea A Symptom Of Celiac?
Ennis-TX replied to spaz-bubble's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
You have probably developed another food sensitivity or have a enzyme/acid issue. Do you vomit soon after meals, if so then I would think it is a sensitivity.https://www.mindbodygreen.com/articles/are-food-sensitivities-for-life.I get this with tons of foods and after a gluten exposure odd new ones crop up and I have to only eat a few whole foods blended... -
The disease is a chameleon and different for everyone...but fact is for most the reactions are MUCH worse if you get glutened after going gluten free. It goes along the lines your immune system was worn out and always fighting like a rag tag army beat and broken, and you were so used to most the pain you found it normal. After going gluten free the army that...

Suspecting gluten intolerance
Ennis-TX replied to pjg's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Might be bit of a combo problem, many with celiac develop issues with dairy. SO in addition to celiac tested as mentioned above remove dairy for a few weeks, replace your milk with almond, cashew, or coconut milk. I used to get the pimple outbreaks from dairy years ago....all through child hood I would get them til I developed lactose intolerance and... -
They used to use a malt syrup from barley in it to give it a malted flavor, some high end places still do this. Amusingly I get physical symptoms and nerve issues in 2-4 hours....but with my last exposure the anxiety, brain fog, depression, and suicidal thoughts hit 3 days later. ......the following diarrhea last up to 6 weeks....I...

Well your body detects even the tiniest amounts of gluten....gluten is a protein smaller then a germ. And your antibodies go up and attack your intestines. Some the damage can keep happening and it can take up to 6 weeks for the antibodies to go down. On a gluten free diet you can mostly heal in a year, but many studies show it takes up to 24 months to completely...
