  1. Old topic, but probably should read this snip it of info. "Xanthan Gum is a fermentation from the bacteria Xanthomonas Campestris. Before the 1950’s, this bacteria was best known for its ability to destroy crops of vegetables, namely broccoli and cauliflower. They called it “Black Rot” and for good reason. The slimy substance infected crops and had a...
  2. I get aches randomly a few days later...normally shoulders, lower back, legs. But this used to my "Normal"...I am a bit numb to pain due to nerve damage, so I only notice a dull deep bruised feeling, and trouble moving said muscles. 3. Bit of info I was given a good sale on Cascade Complete dish tabs and tried them out...DO NOT use them with silicone molds or bakeware. I got the flavor of dish soap stuck in them for days. Company claims this can happen with porous items like, crystal, cast iron, and some silicone molds. Trick to getting rid of the flavor soak in hot baking soda water...
  4. 5. You say strict, but you eat out and probably get CCed each time...my symptoms peak in 24 hours of exposure then 2-5 days of issues mostly nerve and psychological followed by about 6+ weeks of random diarrhea til my antibodies start to go down. But everyone is different...I have to really up my intake of B-vitamins, vitamin D, and magnesium after a exposure...
  6. If have celiac there is not much we can do, we can take gliden X right after ingestion to break down some of the gluten and lessen symptoms. If you can peptobismal, some swear by peppermint tea, and use Imodium for D. I just double up on slippery elm, marshmallow root to coat my intestines and go to a simple mush diet for a few weeks with now spices til my...
  7. I wonder if the decreased acid production and acidity of the stomach acids, leads to less effective enzymatic breakdown of proteins thus somehow effecting how the bodies immune system reacts to proteins. This could potentially incerease the chance for food intolerance (enzyme break down issues), food sensitivites, and allergies as increased proteins and unbroken...
  8. Amusingly with the damaged intestines we can be deficient in stuff like B-vitamins, Magnesium along with vitamin D and other things Iron, vitamin A etc. Testing just in range can even be a sign we are low..heck you can be low in some b-vitamins and not others and they work synergistic together. I found supplementing regardless perked me up a bit....I did...
  9. The protes bags I get are full size about 4 servings a bag. I found some Tuna that was safe at my local store just Tuna and water, and found some online that is just tuna and water. You know, give me til the end of the month, going to shop sales, ask about stuff, and see if I can get you a care package of things to try, and I would only ask you cover...

  11. "The recommended gluten intake for the gluten challenge is two slices of wheat-based bread for 6-8 weeks." Some get buy with a few tsp of wheat gluten a day. The endoscope requires you to be eating it for 2-3 weeks prior about the same amount. If you know your scope is going to be months away you might take a break, but then your in trouble if they get a...
  12. I think you doctor has some disablities of their own. The mind set, etc. has me think you got one of those nightmare doctors. Many of us have had to change many doctors to get a proper diagnosis...I went through 5? or was it 4 and the 5th one got it...been to many years. I think more people should think of a doctors office like a food/sells service....

Constipation...I used to have that quite bad, always hungry, could go 3-11 days between BM...laxatives did nothing...entire box of exlax was candy with no BM, we later learned it was Magnesium Deficiency induced constipation, and the only thing tha worked was magnesium calm in some insane dose...
  16. High Fat, Moderate Protein, low carb...KETO. There is a hump as you body gets used to burning fat for energy, fasting at night and using Ketone supplments can help get over the "Keto Flu" where you body feels like it has the flu til it changes gears. 18. Starches and Carbs are common issues on a gluten free diet as we are prone to SIBO and Cadida with our damaged celiac intestines. I see a good amount of fiber in there and some things that cause issues for some. As you noted Brussels, Onions, Hummus, are common gas culprits. Some have issues with Coniferous vegetables like cauliflower, cabbage, kale and...
  19. Random thoughts top of my head that are also common causes, SIBO, Candida, Colitis...I had my Ulcerative Colitis flare to sugars, starches, and spices and cause distention...but it becomes apparent with bloody stool. SIBO and Candida will cause it with flares of die off and sugars and starches fermenting. Examples coconut oil, oregano oil, garlic will cause...
  20. Crio Bru...its ground cocoa nibs your brew like coffee in a french press, they should have instructions...>,< I snack on them also. Cocoa nibs are chock full of iron, magnesium, healthy fats and tons of fiber, they have chemical compounds in them that give a blissful feeling, and energy, also very high in antioxidants.
  21. Thing about this disease, it your damaged intestines and blunted villi do not digest, breakdown, and absorb enough nutrients. So your body is often deficient of a full spectrum of B-vitamins, Magnesium, vitamin D etc. And without these in the right amounts stress, anxiety are major issues, along with various other thing. Do take time to look up deficiencies...
  22. Well, first you a bit mistaken on a few points...all celiac is genetic. The gene can be dormant and activate anytime in life. Most find a sudden illness, pregnancy, drinking binge, etc. can shock the immune system and activate the gene. Then you life long can not eat gluten without your immune system attacking your intestines...sometimes other things like...
  23. Do you have Hemochromatosis? I have a customer at my bakery that has this, along with NCGS, and a T1, but was never tested for celiac before going gluten free so that is unconfirmed. They did have the low B-vitamins and low vitamin D. Have you been tested for Celiac disease? Second thought since your issues is a bit different perhaps you should...
  24. You villi are blunted from the disease, it can take up to 6 weeks for your body to stop attacking them and up to 6-12 months for test to read normal, it varies from person to person. BUT it can take UP to 24 months on a gluten free diet for your villi to COMPLETELY heal according to some studies. And the diet is life long or it can start all over again. ...

Cargill is a MAJOR meat processor, I was at my restaurant supply store yesterday and found they made 8 different types of patties, 6 types of ground meats that I found and was asking about. they are quite sure of allergens and each lines has its own dedicated machines running....so while some patties and products might contain, wheat, corn or soy, they have...
