LOL I learned about keto from someone else that suffers from Ulcerative Colitis and how it helped, I found back then my UC was flaring to carbs/sugars and adopted a modified keto/atkins diet and it fixed many other issues. Again I modified it to a plant based version of fats and a bit higher fiber to prevent backups but it can be useful for some. But everyone...

Love this "Mustard"....yeah that is gluten free pretty sure they mean "Rye" Concept of Gluten Free diet and weight loss, it works but only if you avoid the Processed gluten free food. FACT most gluten free alternatives try to replicate gluten with starches, AND rely on high glycemic flours like rice. These make them prone to spike glucose and cause weight...

Cooking in other people's kitchens
Ennis-TX replied to Renee Piazza's topic in Traveling with Celiac Disease
The Trovolo Smaller one, the hard eggish shaped side can be used to cut into stuff and scrape, the cuppish side is good for scraping the edges of bowls, mixing stuff, folding dough, and scrapping the bottom of dishes, they pair will with the microwave cookware and and can be used to scrape food off and out of them when finished cooking.- 13 replies

Start by making my French fried onions from the other post but add in 2 thin sliced scallion. Then the following. 2 cans greenbeans drained 8oz sliced mushrooms chopped rough ...

Cooking in other people's kitchens
Ennis-TX replied to Renee Piazza's topic in Traveling with Celiac Disease
>.> My kit is a bit more I have a duffel bag of stuff. I bring my own pan and a induction cook top, mixing bowls, knifes, the OXO omelette turner is multi use, and a trovolo jar scraper...again multiple uses, and plastic disposable utensils, some Big Axe Seasoning Blends. If I know they will have a microwave I omit the cook top and bring nordicware...- 13 replies

Celiac Patients Are Bad at Judging Gluten Exposure Based on Symptoms
Ennis-TX commented on Jefferson Adams's article in Latest Research
They have the Nima, and EZ-Gluten for testing foods, it is hit and miss, you need a varied sample including the parts that touched the cooking surfaces, and multiple ingredients. These work best with blended meals, soups, stews, and testing the bulk spices, flours, etc each before being combined so you can get a bit of each....I test bulk samples of food...- 30 comments

Check the sensor pod, if I recall correctly 3 strips is gluten, the bottom stripe is the gluten one the top two turn red no matter what I think are controls. Sometimes a false positive can be triggered on a Nima by the whole strip turning reddish when developing. That bottom stripe is the real teller and how deep or just hardly present is reactions to how...

Fiber can be addressed by adding whole seeds like pumpkin seeds, flax meal, chia seeds (chia pudding is great with almond milk), Nuts etc. I use nut based baked goods and eat low carb (keto and atkins rotation). I used to have constipation issues....exact opposite now days, but I used to take Natural Vitality Calm for it, many times celiac constipation...

Is Turkey From A Stuffed Bird Safe?
Ennis-TX replied to RWWolfe's topic in Coping with Celiac Disease
We have joked about comparing rat poison, ortho powder or antifreeze as a comparison for gluten for us IE, asking them would they eat something that knowingly had rat poison mixed in then picked out, dusted with ortho powder, or cooked with a bit of antifreeze (DO NOT ACTUALLY OFFER THESE OR FIX IT, This is a VERBAL suggestion to them not something to do... -
I get anaphylactic reactions from some foods randomly, certain things make reactions worse, Iodine enriched foods and salt and sea weed can make reactions worse, egg whites raw are a histamine liberator do look into it. Also research histamine foods and foods high in histamines...like yogurt etc. Might be a histamine overload and this can stack then burn...

15 Foods People Wrongly Think Are Gluten-Free
Ennis-TX commented on Jefferson Adams's article in Additional Concerns
Yeast is only a problem if it is "Brewers Yeast" the left over yeast from beer brewing sometimes used for a flavor enhancer, or nutrional supplment. Active Raw yeast in Gluten Free breads is normally Gluten Free, but can cause fermentation and gas issues, those with compromized guts can even have it setting in their intestines and cause all kinds of havoc...- 16 comments

Cross Contamination, when something touches something with gluten then touches your gluten free feed, IE you use the same knife, cutting board, or a scratched pan....it transfers tiny amounts of gluten to your "safe" food and makes you sick. I do thanksgiving all gluten free....I also have to do it corn free, so it can be done. They make gluten...

Couple of cheap tricks to slowly convert over, as mentioned you have to get new wooden utensils, new cutting board, colander, toaster, and toss any scratched pots/pans. BUT few things, 1. Crock Pot liners can make cooking large simple whole foods stews, soups easy without worry of CC, just mind that lid might be CCed. 2 Microwave cookware, Nordicware makes...

A keto diet if done right is healthy and normal for humans, our ancestors would stop eating carbs, and fruit during winter months and eat more nuts and meats effectively a keto diet. Look up stuff by Ketogenic Girl, Maria Emmerich, and ketoolgist etc. Make sure you get plenty of vitamin and eat different foods and if you can find a nutritionist to help you...

Yeah get those nightmares randomly of eating somewhere or something not safe. Food allergies? Allergies do not really go away.....they are pretty much life. Food sensitivities and intolerance issues do go away sometimes. I used to have a legume issue with pea protein that went away in a few months, the sesame issue stuck around for over a year I can...

Read about keeping a food diary Open Original Shared Link For now stick to whole foods only, can take months to get over a exposure. Common issues are dairy as the vili that produce the enzymes to break it down are damaged so we get intolerance for it, soy, legumes, and spices are harsh also. Think of your intestines as carpet burned anything spicy...

Many of us use it, as a citrate you have to dose to tolerance and ease into it. IE start with a scale and 2g or 1/4tsp, and up it that much each day til you get loose stools then back it down til it firms up. If you find the citrate form irritates you you can try Doctors Best Magnesium Glycinate.

Indian Pudding Day and Recipes
Ennis-TX replied to Ennis-TX's topic in Gluten-Free Recipes & Cooking Tips
Yeah I used miracle rice but it did not thicken so I used coconut flour and almond flour the used ooolfavlors cornbread flavor drops. but again I just sort of spooned it and and stirred...did not measure but was a about 1:2 ratio of coconut to almond as coconut thickens and almond gives it that grainy texture, you could probably adjust more and even omit...
