  1. So I ate something I am obviously sensitive to or intolerant to.....but I have no clue what....AND IT HAPPENED ON MEAL PREP DAY. So the offender is likely present in my prepared meals for the next 4-6 days and I might have to toss them. Going over the list is maddening, I am dealing with diarrhea, and vomiting every time I eat anything or drink anything now...
  2. For me the peripheral neuropathy was linked to Gluten Ataxia which will cause to issues your mentioned and then some, and yes, some times cross contamination of certain types of gluten or a certain amount hit a tipping point with me. Like complete motor control loss on the floor....sometimes with vomiting. Normally slight cross contamination with flour dust...
  3. The genes that cause celiac in humans need to be edited out. Heck the one I got also causes Ulcerative Colitis which I got Diagnosed 2 years ago with and can cause diabetes and RA.
  4. Sounds about normal, the worst of it is normally the first 6 months so your about over that. I still 6 years later though get tantrums from my GI tract when I eat something it does not like. Do note many of us get new dietary intolerance issues with celiac, and many do not show til after going gluten free. The body was prioritizing the gluten, now the...
  5. I have compiled many list, tricks, and tips for traveling gluten-free, taking mess kit with me, and back up bars, and safe foods. As a disaster responder you might look at stuff from the emergency section of my quarterly food list, MRE, and freeze dried foods to take with you. I also tend to keep meal bars like Julian Bakery, dried kale chips like rythem...
  6. If he is eating gluten daily then celiac can be screened for easy enough. You have to be eating gluten every day and the doctors can run a celiac blood test to see if he has the antibodies. https://celiac.org/about-celiac-disease/screening-and-diagnosis/screening/ Tar like stool can be many things but if it is black sticky tar, is there a chance it is...
  7. Bit of a cookie crunch to it. The blend is the exact blend I use in my chocolate chip cookies, figured reverse cookie IE chocolate with cookie inside instead of cookie with chocolate inside. I used sugar chips in it so I could not taste it really, next time I am doing it with the more expensive chocolate I can eat.
  8. I once assumed this, sort of had the enzyme issues before the blood sugar issues. Thinking it might be more along the lines of what cycling lady said. Another thing to consider is that the genes for diabetes and celiac are often linked or share common ones. As the years have shown on this forum Diabetes and Celiac go hand in hand very often. If it attacked...
  9. So bit of a fun thing get either a candy melter or the old trusted double boiler method (boil then simmer water in one pot and stick a metal bowl/bot in containing the chocolate to melt in it using the hot water to heat your melting pot). Use a trusted chocolate, I used Gerbs for this to give away, normally I would buy LUVs, Phi, Lakanto, or even Lilly's...
  10. I started a cottage home bakery, doing gluten free baked goods and almond butters at farmers markets. I then started doing chef jobs and cooking for some people. I am now looking at starting a food truck that is 100% gluten free with a paleo based diet, still pending investors/sponsors but I have been testing menu items with clients from the bakery and tent...
  11. Love almond flour, keeping it simple with just almond flour, sweetener, egg whites, salt and extract. Dust in cocoa powder and confectioner or just confectioner and bake about 22mins. The confectioner dusting gives it a hard outside and soft inside. I sometimes add oil or coconut flour for various textures. You can also change out almond extract for lemon...
  12. Yep, I got a odd one, I tested negative for the standard gene but have this snippet https://www.snpedia.com/index.php/Rs6822844 Which in my humble opinion is a much worse one I have Ulcerative Colitis on top of it so I had to find my UC triggers also which happened to be carbs, soy, some hot spices, and sugars, and another wammy later when I found I...
  13. As Mentioned by GFinDC you should look at getting tested, once you go gluten free it is too late. And if gluten is the issue for your health issues it will often rebound MUCH worse when reintroducing gluten. I use Coconut Secret Sauces, They are gluten and soy free. I like a combination of the Teriyaki and garlic ones.
  14. https://www.simplyorangejuice.com/products Q: Do Simply Beverages contain ingredients with any of the Big Eight allergens as defined by the FDA? A: No, Simply Beverages do not contain ingredients with any of the Big Eight allergens (milk, eggs, fish (i.e. bass, flounder, or cod), crustacean shellfish (i.e. crab, lobster, or shrimp), tree nuts...
  15. Used to drink simply orange years ago....god I miss that full pulp juice. WIth my UC and blood sugar issues I can not lol I get by with oooflavor drops in tea/water with stevia/monk fruit, a Zevia Orange soda, or using some orange peel when brewing tea....which is actually VERY good for adding flavor. Few of my old winter favorites were Russian tea with...
  16. Well if not a blood test you can go for a endoscope and biopsy >.> heck you can ask they take your blood while your under sedation for the scope. This will involve a gluten challenge, IE you have to eat gluten daily they say 1-2 slices of bread a day or a tsp of vital wheat gluten for 8-12 weeks for blood test or 2 weeks for just the scope. They will...
  17. Do know that a percentage of celiacs respond to oats just like gluten regardless (I discovered years ago I also reacted to them). Also there are 2 types of gluten free oats, mechanically sorted...they literally just have a machine pick out the wheat grains, and protocol. I would really only suggest gluten-free harvest if you want to keep them...but as a diabetic...
  18. Most of us with Celiac also have other food issues for various reasons. I tend to think that my damaged gut let food proteins into my blood stream and I got allergies to them, others I lack enzymes to break them down and get intolerance issues to, and some I am just sensitive to and they just make me instantly sick. I keep a list in my signature in my profile...
  19. The brain fog can be attributed to vitamin/mineral deficiencies, blood testing only test for the bare minimum requirements as normal, and it is not a one size fits all requirements of B-vitamins (full spectrum not just a few), magnesium, vitamin D, iron, vitamin C, vitamin K, etc. With damaged gut and digestive tract from the disease your only absorbing a...
  20. Airborne gluten is a concern in that we can get it stuck in our mucus in the nose and throat then swallow it. There is also the concern of it getting on food or food prep surfaces. It can reach the small intestine this way and trigger a flare if you have celiac, which I am assuming you already have been diagnosed with? They make pollution mask that you can...
  21. We have had a few members test negative on the blood test but show positive on the biopsy. Keep eating it and push for a Endoscope with biopsy and perhaps a Colonoscopy. If both of these are negative you obviously are at least NCGS which is a condition we have members with and is still serious requiring a gluten free diet although not widely recognized by...
  22. LOL here is a another new concept some of the restaurant/food truck guys were talking about today on newer biodegradable utensils and straws. IT is gluten free and made of avocado pits. So far poor chance of seeing it somewhere, our cost is like $615 per 1000pcs with markup value making them have to charge $1.25 a set. https://www.biofase.com.mx/copia...
  23. There are many genes for celiac, some less known the others, some rare. Frankly I have a one they called some Rnumber that I learned about a few weeks ago, still not much info from doc other then some link to snippet info. https://snpedia.com/index.php/rs6822844 I started to see improvement for a few years but still had random gut issues, gas, bloating...
  24. Umm most paper towels and TP are made from pure paper pulp from tree farms. They literally grow only trees quickly for the purpose of making paper products instead of harvesting forest in the USA. Exceptions to said paper products might be things made with recycled paper products or "biodegradable" utensils and paper ware from the new fad groups using wheat...
