Well, I saw a new PCP about a month ago, completely useless, and then charged me a ridiculous co-pay I could not even afford (I got out of this on a technicality on their part). Anyway, he just heard my issues and got me an appointment with a GI doc. I saw the GI doc yesterday told him of my issues and the random daily cowpie like BMs on and off I have been...

1 Week Gluten-Free And I Have The Worst Gas Please Help!
Ennis-TX replied to sallyb's topic in Coping with Celiac Disease
@GlutenTootin As mentioned above, limit your carb intake, removing starches, and sugars. Many gluten-free bread/baked products are mostly starches which will be fermented in your gut into gas. Seriously look at the ingredients, all those grain flours, starches etc. Look for nut-based ones with NO starches if you want to enjoy something without the gas. ... -
To Frankenstein, a dish in the name of experimenting is quite common with food. I recently did something with funny results and lessons learned I think some might find amusing. So my concept was to make a gluten-free soft moist brownie and sugar-free. I have done this with thick nut butter like sunbutter before, and iffy results with thinner ones. But...

Makes for a bit of a gritty gravy, the egg yolk method works well. Coconut flour general rule is 1/3 the amount vs flour. It works GREAT for making taco meat roux, IE add in 1-2tbsp with some stock and seasonings after browning the meat, garlic, onions and this is how I recreated my mother's taco salad meat. The egg yolk method, take your drippings...

So it used to VERY common for me to run fevers for days growing up. But I have not had issues with it in a few years till recently. For the past few months I have been running a fever nonstop 102-104F, would not have really noticed it aside from constant sweating sometimes. Anyway I keep checking my temp and seeing it always in this range, no fatigue, sometimes...

Just realized I messed up on the easter roast a bit. My chef side was like, Rub the meat with 6 cloves of garlic and some sprigs of thyme and olive oil and let marinate for 24 hours, set to room temp then oven 275F 3 hours with celery, beef stock, and onions and finish 350F with the potatoes, and carrots 1 hour, let the meat set on plate strain the broth...

Avoid the standard gluten-free cakes etc. Starches/sugars/carbs will do nothing for healing, and putting on healthy muscles. Look to real food full calories of stuff your body needs. Fats, Go for nut-based baked goods (look up keto baked goods/bread recipes on ketosummit, or brands like mikey's, Julian bakery or flour foods pizza crust, even Know foods...

Which Seasoning Brand Do You Use?
Ennis-TX replied to mart's topic in Gluten-Free Foods, Products, Shopping & Medications
I stick to spicely organic for most spices, I also use Big Axe Spice blends in some cooking. Never had issues for myself or those I cater for. -
Not normal per se but could have many causes, some related to celiac, some other issues. I am not a doctor so I can not say for sure but here are my thoughts. B-vitamins deficiency would be one of my top suspects, B-5, for example, can cause tingling when deficient. B-vitamins are often sprayed on most processed foods and grains. Going whole food diet...

Vitamind D can come from a few different sources, we have some members that can not have D3 from Lanolin which is the most common source. This is from a waxy substance secreted from glands on a sheep. You might have to look at a D3 from fish sources or a vegan sourced D2 if you wish to try again. I am sure some other members can give you the brand for this...

I started with a Paleo diet (diet of our ancestors) but moved to one with Keto Ratios, Basically, my body uses fat for fuel not carbs, and the human body is actually designed to do this on rotation and our ancestors would do this with seasons. But I often use almond and coconut flour to make nut meal porridge and use it to make baked goods also. Nut...

Most of us end up with a whole list of things we also cannot eat, heck many the same as you. Keep a food diary, it is not uncommon to get new ones with later exposure. I keep a list in my signature. I also have a rare gene for celiac that makes me prone to other things as well some of which I have gotten and others I have the potential to get but am...

The Differences Between a Gluten-Free and Keto Diet
Ennis-TX commented on Shaun Wong's article in Spring 2019 Issue
The keto diet can also benefit those with some other AI issues, it varies from person to person but I took it to deal with my Ulcerative Colitis, and then had to really stick to it when I learned I had blood sugar issues. It can also help with people just transitioning to the gluten-free diet as fewer starches/sugars mean less gas and bloat. Some people...- 1 comment

Sh$t that was one of my favorites next to Progranola from Julian Bakery. If my next case is the newly formulated version I will flip a table. Like really, I just put stevia or monk fruit on it for safe frosted flakes...and carby lovers would probably pour sugar on it anyway so why mess with a product that covers both bases. Going to petition them and probably...

Extreme anxiety
Ennis-TX replied to Crispy chick's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yeah, it was worse around those times. I still have some issues to this day but use a solid regime I built to my needs. B-vitamin complex, neurological support, from Liquid Health, Magnesium Calm or Magnesium Glycinate twice a day, I also take Hemp Paste to deal with extreme depression and bad thoughts. -
God I miss corn flakes I became allergic to corn about a year after diagnosis when I messed up. But I will go ahead and mention the alternatives you might try. Nuco Coconut Crunch, it is a low carb coconut flake cereal, (You can order on Amazon or LuckyVitamin Ships international) I up the realism by using either Capella Flavors Cereal 27 flavor drops...

It depends on the cause, it can be related to vitamin/mineral deficiencies with B-vitamins, but in cases like mine, it was caused by gluten ataxia. Gluten ataxia the immune system will also attack the brain and or nervous system. In this case, it can show up on an MRI as white spots. Someone will probably link you the medical info I will see if I can find...

Well, I had something really odd happen yesterday. I woke up took my meds, worked out, downed my green shot of powdered kale, moringa, and chlorella mix up. Then a few mins later felt dizzy and nauseated and felt the need to cough something up and up came a whole bunch of blood, slime like mucus, and some of the green liquid. Throat felt bad, and I found...

If your a carby and want to stick to it use sweet potatoes for carbs. Grain-free at first to see how much better you feel. But you do not need carbs at all, the human body is designed to use fat or carbs for fuel on rotation. Our ancestors did not have access to carbs during winters or off seasons, they would be on a fat/protein diet of nuts, meats, and...

Look up Paleo Diet, and since your mention sugar, I would try the Keto version with no carbs. Ketosummit has a bunch of recipes. Just use coconut oil in place of anything for butter or ghee, and full fat coconut milk canned in place of heavy cream recipes. I also have some simple meals on my blog here. Neuropathy, if it is caused by nerve damage (gluten...

Is Gluten-Free Bread Really Bread?
Ennis-TX commented on Jefferson Adams's article in Additional Concerns
What is Xantham Gum Exactly "The most likely ingredient to gloss over on the list from the back of your gluten-free product is Xanthan Gum. Label readers are often looking for those other little nasty additives lurking under the guise of “Natural Flavors” or other convoluted names but take Xanthan Gum at face value without questioning what it really mig...- 11 comments

Is Gluten-Free Bread Really Bread?
Ennis-TX commented on Jefferson Adams's article in Additional Concerns
....I think that last part about the "Long-Fermented Sourdough" should be edited out of the article. This fuels the misconception that sourdough process makes it safe for celiacs. GFWD has been over this many times, there are a few companies that keep pushing this stuff as "Gluten-Free" when it keeps causing reports of celiacs still getting sick from it....- 11 comments

Ditto on squirmingitch about the cook to death. Steam the veggies to mush. then mash. Stew that meat til it melts. I would suggest avoiding the following. Dairy due to damaged vili. White potatoes, rice, grains, the starch will cause gas right now as you shift over, some sweet potatoes or canned pumpkin puree if you need some easier to digest carbs. ...

Simple Gut Easy Stewed Beef Base
Ennis-TX posted a blog entry in Gluten Free and Specialty Diet Recipes
This is a good and simple meat dish, I came up with this variation as something with flavor but no harsh spices and easy on the gut. The benefits of Tumeric as an anti-inflammatory and lack of harsh peppers make along with the method of cooking the meat keeps it from becoming hard and chewy from fat seizing. 1lb 90%+ Lean Beef 1 Medium Onion chopped...-
