4 Day Convention away from home
Ennis-TX commented on Ennis-TX's blog entry in Daily Life and Compromising
Well that emotional see saw of happy, depression that comes after a glutening is make this really hard. I was just informed I can get my food truck business financed pending I do a $30k injection....oh and it can not be from another financing or loan or they void it. How is that for stress lol. I started a "Paleo Food Truck" fundraiser on gofundme.com but... -
Paleo is the way our ancestors ate.......it is completely healthy for everyone if you do it RIGHT. Replace grains in peoples meals with sweet potatoes, squash and fruit and they get the carbs. It does not have to be done low carb, and for kids who I cater for with this diet I always offer more fruit, and try to work in other carbs.

Celiac disease and anal bleeding
Ennis-TX replied to Sarahcat58's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Um you might be like me and have gotten Ulcerative Colitis or something similar. My UC flares to gluten like celiac and when it does I get bloody streaks, on stool sometimes blood globs, or mucus (I get the double whammy with gluten as a Celiac with UC). Everyone is a bit different with their flares mine also flared to the common issues of dairy and soy,... -
gluten-free Environment
Ennis-TX replied to JulieBoyes's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Do read the newbie 101 section. https://www.celiac.com/forums/topic/91878-newbie-info-101/ I would toss out all plastic...they scratch easy and retain proteins. Gluten is a protein like blood...not a germ, so bleach does not kill it, think along the lines of removing blood so the CSI techs can not find it. 500F+ works to destroy the proteins so a oven... -
Go for lower carb version of foods, avoid processed gluten free food that is loaded with starches/sugars that will spike your blood sugar. Eggs fixed as fried, scrambled, omelettes, quiche with coconut flour, etc. Meats grilled, baked, stewed, etc. Veggies fixed baked, grilled, roasted, boiled, raw, etc. Go with lower carb ones. Look up simple sheet pan...

And I bought the "Gluten Free" cricket flour from aspire food group that provides the flour for all these new bars etc....and as I assumed and was proven right.

Oats are iffy, some so called gluten free oats are mechanically sorted....literally a machine removes wheat grains from the oats....so not really gluten free (Why gluten-free Cheerios keep making people sick). And even 100% dedicated oats harvested in oat only fields with dedicated machinery like GFHarvest bothered me...I found out I was one of the 10% of...

Ennis-TX commented on Ennis-TX's blog entry in Daily Life and Compromising
EXACTLY those little red dots some with lines connecting them in a odd pattern all over my face. I was completely fine last night...fixed myself a 24oz omelet loaded with vegan cheese, hemp meal, eggs, better then bacon phara seasoning, chard, and ate the sucker with protes nacho cheese chips.....dear god that was great. Fixed the roommates, kielbasa... -
It is probably not the rising agents but the carbs or perhaps contamination issues, when cooked completely rising agents are used up BUT Carbs ferment....and make gas. Are Eggs alright? Try whisking a tsp of Heinz Feather Light baking powder and 1/4 tsp baking soda into 2-4 eggs and scrambling them cooking completely to use all the activations in them....

So I am currently away from my home for 4 days on a convention and sharing a room with normal people for room mates. I set up the rules of no foods other then what I bring in the room, and no eating outside of the room then coming back in, let me prepare all meals and provide all snacks....not quite well observed so far. SO I brought a mini fridge, coffee...

Yes symptoms are MUCH worse after going gluten free if you get exposed after. This disease is like a chameleon always changing, and it is quite standard for the symptoms to change and wax and wane. Times for recovery will also change, form of exposure and amount will also have an effect. Her bodies immune system was fighting gluten for a long time, it...

Can celiac disease go away? Struggling
Ennis-TX replied to Br0g1n's topic in Introduce Yourself / Share Stuff
OH you love food...well as the gut damage ramps up and gets worse and you immune system gets more testy it can start to associate other foods with gluten. It will start getting confused, your gut lining being damaged can lead to undigested proteins leaking into your blood stream triggering food sensitivities, and allergies. Mine went undianosed for years... -
With BO it normally comes down to digestive issues and breaking down certain foods that either, ferment, rot, or have chemical compounds that do not get broken down right and lead to the odor. Common culprits can be, gluten, dairy, meat, turmeric. While I do not eat meat often due to pancreas enzyme issues, I do notice a ammonia, sulfur, almost cat urine...

Do I need a new bread machine?
Ennis-TX replied to IdeWolff's topic in Gluten-Free Recipes & Cooking Tips
Perhaps get a new bread basket for it...I would be concerned of gluten down int the bottom paddle or if any scratches. Check for parts? I personally do quick bread that do not require the rise cycling with a machine and just mix and oven in a bread pan....my bakery has always done these. -
4 brands of hair, body and hand soaps I use. EO Products Shampoo and Conditioner I love the coconut and hibisucs keratin one for making my hair feel softer and stronger despite how fine it is. First go back on gluten for the celiac test to rule that out. Open Original Shared Link Um stay away from gluten free processed foods. Most are carb/starch bombs, good chance of too much bacteria in your intestines going crazy with it, celiacs with our damaged guts and immune system are prone to SIBO and Candida. We suggest a whole foods only...

I would not accept anything from anyone else who is not a celiac unless prepackaged and certified or cooked under my supervision in my house....sorry but days in bed sick and 6 weeks of other symptoms including diarrhea are not worth it. Find out what her favorite gluten free prepackaged snack or meal bar is. Get her some cases of them to eat on the...

Gluten Free Diet severe depression and hunger. Help.
Ennis-TX replied to Pedro López's topic in Coping with Celiac Disease
Start off Paleo, and eat sweet poatoes and fruit in moderation, in place of your grain for carbs, proportionally at that so you body changes out the carbs for a bit. Fort the keto, it is called "Keto Flu" it takes days to get over, your body is changing gears...without a clutch. IT has to get used to not using carbs but fat instead for energy... -
Burning Muscles, Spasms, Cramps.. again
Ennis-TX replied to lmj623's topic in Related Issues & Disorders
Magnesium Deficiency fit? Cramps, slow recovery, nerve issues, burning tingling in arms muscles back etc....worse parts feel like fire hot needles rolling around? Common with Celiac, of course if your having magnesium issues B-vitamins, Iron, Zinc, etc are also gong to be there. So you might find you need to supplement them also. Magnesium...your body depletes... -
Quick to diagnose as ADHD!
Ennis-TX replied to danblexstl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I got the ADHD dia at 5.....after the celiac dia in my 20s and the diet....I pretty much blame gluten...I still notice some issues but no longer have to be on meds to function. At least gluten made it worse. Constipation used to be a huge issue for me to, it is made worse in celiacs by magnesium deficiency, this can also effect motor skills. Do read up... -
Gluten Free Diet severe depression and hunger. Help.
Ennis-TX replied to Pedro López's topic in Coping with Celiac Disease
First off I would suggest going back on gluten for 8-12 weeks and getting tested for celiac, yes your symptoms sound like celiac, and most of us have a drug like withdrawal when getting off. There has been research that for some gluten is like a drug and the way it induces chemical signals in the brain. Open Original Shared Link Second what do you... -
Amusingly insects fed a gluten diet and ground into a protein are not gluten free....unlike livestock we do not carefully separate the guts from the meat but instead with bugs grind them whole into a powder. All cricket food for feeder insects contains gluten that I have found. I would be interested to know if they test this cricket flour for gluten or...

I had to wean off adderal and zoloft years ago, I started halving the doses, then quarter, then a quarter of a pill every other day then just a few times a week then quit. The zoloft I replaced with B-vitamins, cbd, cocoa nibs....to try to naturally help with depression (hind sight with recent life and suicidal thoughts maybe I should try a quarter pill again...
